1. A barbecue machine for cooking and grilling a baked product, comprising:

Technical Field
The invention relates to a machine for grilling products, comprising an outer housing, an inner housing defining a grilling cavity and comprising a first side panel, a second side panel opposite the first side panel, a top panel, a back panel and a bottom panel, wherein the grilling cavity is accessible from the front, a radiant heater embedded in the top panel of the grilling cavity, wherein the radiant heater is preferably a gas burner, and a first pair of guides mounted substantially parallel to the level of the first and second side panels. In addition, the invention also relates to a method for roasting the to-be-roasted product by using the roasting machine.
Background
Barbecuing machines of the type mentioned at the outset can provide a particular flavour and make the baked product tender and juicy inside, but crisp outside. This is due to the fact that the surface layer meat fibers are subjected to high temperature heat shrinkage, since the juice and flavor inside the meat is then locked and retained.
A barbecue of this type is disclosed in document DE 102017102892
Document DE 202015101826U 1 discloses a similar grill of the upper heating type which, despite its high temperature, can be operated as simply and safely as possible, but which, like the above-mentioned grill, has a gas burner, which requires gas to be supplied from an externally connected gas tank.

In some of the above known upper heating type broilers, the broilers are usually pre-treated to obtain the best roasting effect. Higher top temperatures may allow for final refinement of the baked product, especially if the steak must be cooked first. Wherein, the vacuum low-temperature slow cooking (Sous Vide) is a pre-cooking mode, and steak is put into a vacuum bag for sealing and is put into water or a steamer at about 60 ℃ for cooking. Therefore, additional equipment and process steps are required to perfectly cook the baked goods with the upper thermal grill.
Several known upper heating type barbecue machines working at a high temperature are supplied with air from a gas canister, and thus, are not easily carried and cannot be used indoors. In addition, the storage of large gas tanks also requires certain safety measures. Finally, the gas canister must be refilled by a professional manufacturer after it is used up, and the barbecue machine cannot be used during this period.
Disclosure of Invention
The invention aims to provide a flexible and everywhere applicable upper heating type barbecue machine which can perfectly cook the needed baked products without additional equipment.
This object is achieved by a barbecue machine for cooking and grilling a baked product, comprising:
the outer shell is provided with a plurality of grooves,
an inner shell defining a cooking cavity and including a first side panel, a second side panel opposite the first side panel, a top panel, a back panel, and a bottom panel, wherein the cooking cavity is accessible from the front,
a radiant heater embedded in the top plate of the cooking chamber, preferably a gas burner,
a first pair of guides mounted substantially parallel at the same height of the first and second side plates,
wherein, at least two joints for connecting the gas cylinder are arranged, the two joints are positioned at the outer side of the back plate of the inner shell, and a gas pipe connects the two joints with the radiation heater.
The provision of such a joint makes the construction very compact. Due to the two joints, the barbecue machine can automatically prevent failure when working, because the two air cylinders can be switched.
According to the invention, the barbecue machine and the radiant heater are supplied by at least two gas cylinders, and the gas cylinder connection with the integrated connection valve is located directly behind the top plate of the inner housing.
In one embodiment, a pivotable front cover is provided which in the closed state closes the lower region of the front side and leaves the upper region of the front side open, while the first pair of guides is located in the upper region of the front side. The front cover opens the lower area of the front face when opened. Whereby a grill (upper rack) for holding the baked product can be provided on the first pair of guides mounted substantially parallel at the same height of the first side plate and the second side plate. Since the front cover leaves the upper region of the front open and closes the lower region of the front, it produces a thermal effect in the cooking chamber, which can cook the baked product in the upper rack at a high temperature for a short time.
In one embodiment variant, the front cover is designed to be closed by a magnetic lock on the housing.
The housing of the barbecue machine of the invention comprises at least two opposite outer side plates and an outer top plate, and possibly an outer back plate.
In one embodiment, each connection to the gas line has a connection valve for receiving a gas cylinder.
In one embodiment variant, each joint is located directly behind the top plate.
In a preferred embodiment variant, the outer head plate extends as far as the connection to the gas receiver. I.e. the outer top plate is longer than the top plate of the inner housing and the back of the outer top plate extends above the back plate and the connection to the gas cylinder. When the gas cylinder is connected, the outer top plate directly covers the gas cylinder.
The upper side of the outer back plate can be provided with a connecting plate for fixing a connector of the gas cylinder. In addition, the at least two gas cylinders can be pushed in through the holes in the bottom plate at a position behind the back surface of the back plate and fixed to the joint, wherein the holes in the bottom plate can be closed by the base after the gas cylinders are positioned. The gas cylinders are thus firmly fixed behind the back plate and are each covered by a cover plate which is attached to the base plate.
The barbecue machine may be provided with a connection plate for fixing the connector valve of the gas receiving cylinder. The connection plate may for example be arranged in the area above the back plate or on the underside of the outer back plate.
If the outer housing of the barbecue machine of the present invention includes an outer back plate, it is mounted behind the back plate of the inner housing. Thus, the two connectors can be arranged between the outer back plate and the inner shell back plate or behind the outer back plate and the inner shell back plate.
In one embodiment variant, two connections can be provided between at least one cover plate and the outside of the inner housing back plate.
Preferably, the gas flow to the radiant heater is regulated by a regulator which regulates the amount of gas flowing from the gas cylinder to the gas burner. The fuel gas amount can also be adjusted through a joint valve, and the fuel gas amount is adjusted through a connected rotary switch. Alternatively, the gas flow can be opened and closed by means of a coupling valve, between which a rotary switch is connected which regulates the gas flow to the radiant heater and thus also the cooking temperature.
Flexible handling of the barbecue machine is thus possible by means of the construction and the use of gas cylinders, without the gas canister always having to be attached and detached. Besides, the barbecue machine with the gas cylinder can also be used indoors.
In one embodiment variant, the gas cylinder may be a plurality of gas cylinders.
One embodiment variant is designed such that at least two gas cylinders can be mounted through openings in the base plate behind the outer back plate and can be connected to the respective connections, wherein the openings in the base plate can be closed off by the base after the gas cylinders have been positioned.
Furthermore, it is possible to provide a cover behind each of the at least two gas cylinders.
In addition, the barbecue machine is specified by a change-over switch, with which the connection between the connector valve and the gas pipe can be switched. In this way, it is possible to supply air in a second cylinder after one cylinder is empty and to continue grilling immediately without interruption.
Furthermore, an electronic ignition device is provided, which is preferably a piezoelectric igniter.
In one embodiment, a gas port cover is provided, which leaves a position for the changeover switch. The gas joint shield can be mounted, for example, on the back of the outer roof. The gas joint guard plate can reserve a position for the electronic ignition device.
In another embodiment, the grilling machine includes a front plate mounted on the housing, and a baffle is provided on the upper side of the front plate to block the radiant heater. The underside of the front plate may be fitted with a flip-open front cover. It is therefore preferred to design a shield on the front side which shields the radiant heater. The remaining portion of the upper region of the front face remains substantially open except for the edges.
The lifted front cover may constitute an extension of the base plate and protect the tabletop of the grill from the radiant heat of the radiant heater.
In addition, at least one guide rail is mounted on each of the first and second side plates behind the liftable front cover in the lower area of the roasting chamber, so as to utilize the heat effect of the front cover. A grill is advanced over the guide track so that the baked good thaws or precows in a hot area behind the front cover. The baked product may also be temporarily placed in this area.
In a preferred embodiment variant, the grilling machine comprises an electronic ignition device, which is preferably a piezoelectric igniter. The ignition device is activated by pressing a switch, which may be located, for example, on a gas joint shield mounted on the back of the outer top plate. In addition, the mounting position of a rotary switch for adjusting the barbecue temperature and the gas quantity is reserved on the gas joint guard plate.
In order to exhaust the combustion gas and the oil smoke in the roasting chamber, ventilation openings can be arranged on some or all of the plate walls of the shell, the gas joint protection plate and the cover plate. The ventilation opening can be designed in the form of a ventilation slot.
In addition, the grilling machine can include an integrated timer switch to allow for time-accurate cooking of the grilling item. The timing switch can also turn on or off the radiant heater to avoid baking the baked goods for an extended period of time.
In order to facilitate the carrying of the barbecue machine as much as possible, a handle may be provided on the outer top plate.
In a preferred embodiment variant, a second pair of guides can be mounted approximately parallel at the same height of the first and second side plates and below the first pair of guides, wherein the second pair of guides is located in the lower region of the front face, behind the front cover.
According to embodiments of the present invention, a first upper rack for holding baked products may be advanced along a first pair of guides mounted substantially parallel at the same height of the first and second side panels, and a second lower rack for holding baked products may be advanced along a second pair of guides mounted substantially parallel at the same height of the first and second side panels. While the baked products on the upper rack are being cooked by the extremely high upper heat, the baked products on the lower rack are simultaneously being moderately precooked by the lower temperature. This precooking procedure makes it completely unnecessary to use the Sous Vide machine for the normally necessary precooking. It has therefore also been shown that the complex operation of low-temperature vacuum blanching, which is the process of first sealing the baked product in a bag and then blanching it in a water bath for a long time, is not required by combining the precooking of the lower shelf with the formal cooking procedure of the upper shelf. The heat conditions in the cooking cavity will develop a temperature gradient which will allow the undercooking process to be carried out gently but several times faster than the vacuum low temperature slow cooking process. Surprisingly, the time for performing the formal cooking procedure on the upper rack is completely sufficient for performing the precooking procedure on the lower rack. Therefore, the precooking can be performed on the lower shelf and the main cooking can be performed on the upper shelf at the same time. Once the baking product on the upper rack is finished, the baking product can be taken out, and then the baking product pre-cooked on the lower rack is put on the upper rack for formal baking. The empty lower shelf can be continuously put into the baked product for precooking. This process may be repeated until the grilling is complete.
The temperature conditions for both precooking and final cooking occur in the cooking cavity only when the lower region of the front face is covered by the front cover and the upper region of the front face is open, wherein precooking is performed in the lower region and final cooking is performed in the upper region.
The guide may be a guide rail, for example. The grill may be a grill plate or a grill plate, i.e., either the upper or lower rack may be a grill plate or a grill plate.
It is preferable to design the front cover to be openable toward the front to open the front cover. Here, the front cover is fixedly installed on the base plate by a hinge and is pivotable. The axis of rotation of the hinge is generally transverse.
The front cover constitutes an extension of the bottom plate in the open state. It is convenient if the front cover has a handle, the depth of which corresponds approximately to the distance of the hinge axis from the ground.
It is preferred that the front cover is dimensioned to cover at least the lower third of the front face in the closed position. Preferably, the front cover covers at most the lower two thirds of the front face when closed. It is particularly preferred that the height of the cover covers at most the lower half of the front face. This design of the front cover improves the temperature conditions of the cooking cavity such that the lower zone reaches the desired temperature for precooking and the upper zone reaches the desired temperature for final cooking.
According to the present invention, the housing of the barbecue machine preferably includes two opposing outer side plates, an outer top plate, and an outer back plate. The housing is open at the front.
In a preferred embodiment variant, at least one guide rail is preferably provided in the lower third of the cooking chamber, in each case on the first and second side panel behind the pivotable front cover. With these rails, the grill can be pushed in for grilling where the heating effect is generated behind the front cover. On the one hand, unfrozen or ice-cold roast products can be thawed in the hot region in the pre-heating stage of the roaster, and on the other hand, the roast products can be pre-cooked for a desired time, as in the vacuum low-temperature slow-cooking (Sous Vide) method. In order to achieve a unique skin crisping effect, it is also necessary to place the baked product after the pre-cooking process on an upper grill on an upper guide rail near the radiant heater for a short time of baking.
In addition, at least one gas pipe may be installed behind the outer back plate, wherein the at least one gas pipe may be opened and closed by a valve, and a rotary switch connected thereto may adjust the amount of gas flowing to the radiation heater and thus the grill temperature.
