Technical Field

The invention relates to a machine for grilling products, comprising an outer housing, an inner housing defining a grilling cavity and comprising a first side panel, a second side panel opposite the first side panel, a top panel, a back panel and a bottom panel, wherein the grilling cavity is accessible from the front, a radiant heater embedded in the top panel of the grilling cavity, wherein the radiant heater is preferably a gas burner, and a first pair of guides mounted substantially parallel to the level of the first and second side panels. In addition, the invention also relates to a method for roasting the to-be-roasted product by using the roasting machine.

Background

Barbecuing machines of the type mentioned at the outset can provide a particular flavour and make the baked product tender and juicy inside, but crisp outside. This is due to the fact that the surface layer meat fibers are subjected to high temperature heat shrinkage, since the juice and flavor inside the meat is then locked and retained.

A barbecue of this type is disclosed in document DE 102017102892 a 1. The roaster has a housing enclosing a roasting chamber, the chamber being accessible from the front, and a gas burner mounted on the top plate. The inner bore of the oven is designed to be as simple as possible to facilitate cleaning of the inner bore, and the outer shell can be removed. A storage compartment for holding a barbecue utensil is arranged below the roasting inner chamber, and meanwhile, heat protection is formed between the table plate and the inner shell. A fixing device is arranged outside the roasting inner chamber and is connected with the roasting machine through a roasting bracket.

Document DE 202015101826U 1 discloses a similar grill of the upper heating type which, despite its high temperature, can be operated as simply and safely as possible, but which, like the above-mentioned grill, has a gas burner, which requires gas to be supplied from an externally connected gas tank.

Document US7,117,866B 2 discloses a barbecue machine comprising a radiant heater mounted on a ceiling, and the open front of the cooking cavity is closed by a door, preferably a window, and the machine is provided with several ventilation openings for the removal of smoke.

In contrast to the above-mentioned barbecue machines, the barbecue machine described in document US7,117,866B 2 is mainly used for cooking a baked product because its cooking bore is closed. The grilling product can be cooked evenly by the heat source mounted on the top plate without drying or burning the cooking liquor as in a conventional grilling machine using a bottom heat source.

In some of the above known upper heating type broilers, the broilers are usually pre-treated to obtain the best roasting effect. Higher top temperatures may allow for final refinement of the baked product, especially if the steak must be cooked first. Wherein, the vacuum low-temperature slow cooking (Sous Vide) is a pre-cooking mode, and steak is put into a vacuum bag for sealing and is put into water or a steamer at about 60 ℃ for cooking. Therefore, additional equipment and process steps are required to perfectly cook the baked goods with the upper thermal grill.

Several known upper heating type barbecue machines working at a high temperature are supplied with air from a gas canister, and thus, are not easily carried and cannot be used indoors. In addition, the storage of large gas tanks also requires certain safety measures. Finally, the gas canister must be refilled by a professional manufacturer after it is used up, and the barbecue machine cannot be used during this period.

Disclosure of Invention

The invention aims to provide a flexible and everywhere applicable upper heating type barbecue machine which can perfectly cook the needed baked products without additional equipment.

This object is achieved by a barbecue machine for cooking and grilling a baked product, comprising:

the outer shell is provided with a plurality of grooves,

an inner shell defining a cooking cavity and including a first side panel, a second side panel opposite the first side panel, a top panel, a back panel, and a bottom panel, wherein the cooking cavity is accessible from the front,

a radiant heater embedded in the top plate of the cooking chamber, preferably a gas burner,

a first pair of guides mounted substantially parallel at the same height of the first and second side plates,

wherein, at least two joints for connecting the gas cylinder are arranged, the two joints are positioned at the outer side of the back plate of the inner shell, and a gas pipe connects the two joints with the radiation heater.

The provision of such a joint makes the construction very compact. Due to the two joints, the barbecue machine can automatically prevent failure when working, because the two air cylinders can be switched.

According to the invention, the barbecue machine and the radiant heater are supplied by at least two gas cylinders, and the gas cylinder connection with the integrated connection valve is located directly behind the top plate of the inner housing.

In one embodiment, a pivotable front cover is provided which in the closed state closes the lower region of the front side and leaves the upper region of the front side open, while the first pair of guides is located in the upper region of the front side. The front cover opens the lower area of the front face when opened. Whereby a grill (upper rack) for holding the baked product can be provided on the first pair of guides mounted substantially parallel at the same height of the first side plate and the second side plate. Since the front cover leaves the upper region of the front open and closes the lower region of the front, it produces a thermal effect in the cooking chamber, which can cook the baked product in the upper rack at a high temperature for a short time.

In one embodiment variant, the front cover is designed to be closed by a magnetic lock on the housing.

The housing of the barbecue machine of the invention comprises at least two opposite outer side plates and an outer top plate, and possibly an outer back plate.

In one embodiment, each connection to the gas line has a connection valve for receiving a gas cylinder.

In one embodiment variant, each joint is located directly behind the top plate.

In a preferred embodiment variant, the outer head plate extends as far as the connection to the gas receiver. I.e. the outer top plate is longer than the top plate of the inner housing and the back of the outer top plate extends above the back plate and the connection to the gas cylinder. When the gas cylinder is connected, the outer top plate directly covers the gas cylinder.

The upper side of the outer back plate can be provided with a connecting plate for fixing a connector of the gas cylinder. In addition, the at least two gas cylinders can be pushed in through the holes in the bottom plate at a position behind the back surface of the back plate and fixed to the joint, wherein the holes in the bottom plate can be closed by the base after the gas cylinders are positioned. The gas cylinders are thus firmly fixed behind the back plate and are each covered by a cover plate which is attached to the base plate.

The barbecue machine may be provided with a connection plate for fixing the connector valve of the gas receiving cylinder. The connection plate may for example be arranged in the area above the back plate or on the underside of the outer back plate.

If the outer housing of the barbecue machine of the present invention includes an outer back plate, it is mounted behind the back plate of the inner housing. Thus, the two connectors can be arranged between the outer back plate and the inner shell back plate or behind the outer back plate and the inner shell back plate.

In one embodiment variant, two connections can be provided between at least one cover plate and the outside of the inner housing back plate.

Preferably, the gas flow to the radiant heater is regulated by a regulator which regulates the amount of gas flowing from the gas cylinder to the gas burner. The fuel gas amount can also be adjusted through a joint valve, and the fuel gas amount is adjusted through a connected rotary switch. Alternatively, the gas flow can be opened and closed by means of a coupling valve, between which a rotary switch is connected which regulates the gas flow to the radiant heater and thus also the cooking temperature.

Flexible handling of the barbecue machine is thus possible by means of the construction and the use of gas cylinders, without the gas canister always having to be attached and detached. Besides, the barbecue machine with the gas cylinder can also be used indoors.

In one embodiment variant, the gas cylinder may be a plurality of gas cylinders.

One embodiment variant is designed such that at least two gas cylinders can be mounted through openings in the base plate behind the outer back plate and can be connected to the respective connections, wherein the openings in the base plate can be closed off by the base after the gas cylinders have been positioned.

Furthermore, it is possible to provide a cover behind each of the at least two gas cylinders.

In addition, the barbecue machine is specified by a change-over switch, with which the connection between the connector valve and the gas pipe can be switched. In this way, it is possible to supply air in a second cylinder after one cylinder is empty and to continue grilling immediately without interruption.

Furthermore, an electronic ignition device is provided, which is preferably a piezoelectric igniter.

In one embodiment, a gas port cover is provided, which leaves a position for the changeover switch. The gas joint shield can be mounted, for example, on the back of the outer roof. The gas joint guard plate can reserve a position for the electronic ignition device.

In another embodiment, the grilling machine includes a front plate mounted on the housing, and a baffle is provided on the upper side of the front plate to block the radiant heater. The underside of the front plate may be fitted with a flip-open front cover. It is therefore preferred to design a shield on the front side which shields the radiant heater. The remaining portion of the upper region of the front face remains substantially open except for the edges.

The lifted front cover may constitute an extension of the base plate and protect the tabletop of the grill from the radiant heat of the radiant heater.

In addition, at least one guide rail is mounted on each of the first and second side plates behind the liftable front cover in the lower area of the roasting chamber, so as to utilize the heat effect of the front cover. A grill is advanced over the guide track so that the baked good thaws or precows in a hot area behind the front cover. The baked product may also be temporarily placed in this area.

In a preferred embodiment variant, the grilling machine comprises an electronic ignition device, which is preferably a piezoelectric igniter. The ignition device is activated by pressing a switch, which may be located, for example, on a gas joint shield mounted on the back of the outer top plate. In addition, the mounting position of a rotary switch for adjusting the barbecue temperature and the gas quantity is reserved on the gas joint guard plate.

In order to exhaust the combustion gas and the oil smoke in the roasting chamber, ventilation openings can be arranged on some or all of the plate walls of the shell, the gas joint protection plate and the cover plate. The ventilation opening can be designed in the form of a ventilation slot.

In addition, the grilling machine can include an integrated timer switch to allow for time-accurate cooking of the grilling item. The timing switch can also turn on or off the radiant heater to avoid baking the baked goods for an extended period of time.

In order to facilitate the carrying of the barbecue machine as much as possible, a handle may be provided on the outer top plate.

In a preferred embodiment variant, a second pair of guides can be mounted approximately parallel at the same height of the first and second side plates and below the first pair of guides, wherein the second pair of guides is located in the lower region of the front face, behind the front cover.

According to embodiments of the present invention, a first upper rack for holding baked products may be advanced along a first pair of guides mounted substantially parallel at the same height of the first and second side panels, and a second lower rack for holding baked products may be advanced along a second pair of guides mounted substantially parallel at the same height of the first and second side panels. While the baked products on the upper rack are being cooked by the extremely high upper heat, the baked products on the lower rack are simultaneously being moderately precooked by the lower temperature. This precooking procedure makes it completely unnecessary to use the Sous Vide machine for the normally necessary precooking. It has therefore also been shown that the complex operation of low-temperature vacuum blanching, which is the process of first sealing the baked product in a bag and then blanching it in a water bath for a long time, is not required by combining the precooking of the lower shelf with the formal cooking procedure of the upper shelf. The heat conditions in the cooking cavity will develop a temperature gradient which will allow the undercooking process to be carried out gently but several times faster than the vacuum low temperature slow cooking process. Surprisingly, the time for performing the formal cooking procedure on the upper rack is completely sufficient for performing the precooking procedure on the lower rack. Therefore, the precooking can be performed on the lower shelf and the main cooking can be performed on the upper shelf at the same time. Once the baking product on the upper rack is finished, the baking product can be taken out, and then the baking product pre-cooked on the lower rack is put on the upper rack for formal baking. The empty lower shelf can be continuously put into the baked product for precooking. This process may be repeated until the grilling is complete.

The temperature conditions for both precooking and final cooking occur in the cooking cavity only when the lower region of the front face is covered by the front cover and the upper region of the front face is open, wherein precooking is performed in the lower region and final cooking is performed in the upper region.

The guide may be a guide rail, for example. The grill may be a grill plate or a grill plate, i.e., either the upper or lower rack may be a grill plate or a grill plate.

It is preferable to design the front cover to be openable toward the front to open the front cover. Here, the front cover is fixedly installed on the base plate by a hinge and is pivotable. The axis of rotation of the hinge is generally transverse.

The front cover constitutes an extension of the bottom plate in the open state. When the front cover is opened, the damage caused by the radiation heat of the roasting inner chamber can be prevented, because the radiation heat can not be directly splashed on the table top but on the front cover. It is convenient if the front cover has a handle, the depth of which corresponds approximately to the distance of the hinge axis from the ground.

It is preferred that the front cover is dimensioned to cover at least the lower third of the front face in the closed position. Preferably, the front cover covers at most the lower two thirds of the front face when closed. It is particularly preferred that the height of the cover covers at most the lower half of the front face. This design of the front cover improves the temperature conditions of the cooking cavity such that the lower zone reaches the desired temperature for precooking and the upper zone reaches the desired temperature for final cooking.

According to the present invention, the housing of the barbecue machine preferably includes two opposing outer side plates, an outer top plate, and an outer back plate. The housing is open at the front.

In a preferred embodiment variant, at least one guide rail is preferably provided in the lower third of the cooking chamber, in each case on the first and second side panel behind the pivotable front cover. With these rails, the grill can be pushed in for grilling where the heating effect is generated behind the front cover. On the one hand, unfrozen or ice-cold roast products can be thawed in the hot region in the pre-heating stage of the roaster, and on the other hand, the roast products can be pre-cooked for a desired time, as in the vacuum low-temperature slow-cooking (Sous Vide) method. In order to achieve a unique skin crisping effect, it is also necessary to place the baked product after the pre-cooking process on an upper grill on an upper guide rail near the radiant heater for a short time of baking.

In addition, at least one gas pipe may be installed behind the outer back plate, wherein the at least one gas pipe may be opened and closed by a valve, and a rotary switch connected thereto may adjust the amount of gas flowing to the radiation heater and thus the grill temperature.

In addition, the housing has an openable closure in the area of the connector valve.

Since fig. 1 to 5 show the same embodiment and fig. 5 shows all the parts with reference numbers in an exploded view, reference is made to the reference numbers of fig. 5, since the preceding schematic drawings do not show all the reference numbers of the visible parts for the sake of clarity. The embodiment of fig. 6 differs from the embodiment of fig. 1-5 in detail, but the construction is substantially the same. The description of fig. 6 can also refer to fig. 1-5.

Fig. 1-5 illustrate a grilling machine for cooking and grilling a baked product, including an outer shell 8 and an inner shell defining a grilling cavity. The inner shell comprises a first side plate 6, a second side plate 7 opposite the first side plate 6, a top plate 2, a back plate 9 and a bottom plate 3 (fig. 3). And the cooking bore is accessible from the front.

In addition, a radiant heater 2' is embedded in the top plate 2 of the cooking chamber. The radiant heater 2' is a gas burner.

The cooking bore has a first pair of generally parallel guides 41 in the form of rails mounted at the same height on the first and second side plates 6, 7 respectively. Which receives an upper rack (not shown) containing baked goods. In order to achieve an optimal positioning of the baked products, there are also other sets of rails 41', 41 "in this embodiment, all located in the area that is always open above the front face.

Furthermore, a pivotable front cover 4 is provided, which in the closed state closes the lower region of the front side and leaves the upper region of the front side open at all times. The front cover 4 covers about half of the front face in the closed state. The front cover 4 opens the lower area in the open state. The front cover is closed by means of a magnetic lock on the housing 8 or a magnetic connection to the housing 8. The first pair of guides 41, 41', 41 "is located in an area where the front face is always open.

In addition, there is a second pair of generally parallel guides 42. The pair of additional guides 42 is also provided in the form of rails and is mounted at the same height on the first and second side plates 6, 7 and below the first pair of guides 41, 41', 41 ". The second pair of guides 42 is mounted in the lower region of the front face. A second pair of guides 42 are located on the first and second side panels 6, 7 in the lower third of the area below the cooking bore behind the pivotable front cover 4. A lower rack (not shown) for holding the baked goods may be advanced over the second pair of guides 42.

The front cover 4 can be tilted forward and is attached to the base plate 3 by a transverse hinge 43. The front cover 4 in the open state is an extension of the base plate 3, since it has a protruding grip 44, said grip 44 having a depth t which corresponds to the height h of the axis of rotation of the hinge 43.

The front side is furthermore provided with a shield 5 'which shields the radiant heater 2'. The baffle 5 ' is integrated in an additional front plate 5, wherein the baffle 5 ' shields the radiant heater 2 ' on the upper side of the front plate 5.

There are two connections 45 to the gas bottle 19, said two connections 45 being located between the cover plate 14 and the outside of the back plate 9 of the inner shell, between which gas pipes 46 connect the connections 45 to the radiant heater 2'. Each connector 45 is provided with a connector valve 15 for connecting the gas cylinder 19 to the gas pipe 46. Each joint 45 is furthermore arranged directly near the rear end of the top plate 2.

The gas burner is connected to a gas line 46, while said gas line 46 has a connector valve 15 connecting two gas bottles 19, said connector valve 15 being located between the cover plate 14 and the outside of the back plate 9 of the inner housing, between which back plate 9 and the gas bottles 19 there is also the outer back plate 10 of the outer housing. The outer back plate 10 of the housing can also be placed behind the gas cylinder 19 and can also be designed as one piece with the cover plate 14.

At least one gas pipe 46 is arranged behind the back plate 9, wherein the at least one gas pipe 46 can be opened and closed by a valve. In addition, the rotary switch 1 can adjust the amount of gas flowing to the radiant heater 2' and thus the grill temperature. The delivery of gas to the radiant heater 2 'is regulated by a rotary switch 1, said rotary switch 1 regulating the amount of gas flowing from the gas cylinder 19 to the radiant heater 2'.

In addition, the housing 8 has an openable cover 12 in the region of the joint 45, so that the joint 45 can be accessed. The electronic ignition device 16 can ignite the gas in the radiant heater 2', wherein the electronic ignition device 16 is a piezoelectric igniter. The back of the outer top plate 2 is provided with a gas interface guard plate 12, and the guard plate 12 is provided with a position for installing a rotary switch 1 and a timing switch 17 of an electronic ignition device 16.

The housing 8 is provided with a vent 48 (slot).

In addition, a handle 18 is provided on the outer top panel.

The grilling machine has a connection plate 11 for fixing the connector 45 and the connector valve 15 connected to the gas bottle 19. The connection plate 11 is mounted on the upper side of the exterior back plate 10.

Two gas cylinders 19 can be pushed through holes in the base plate 3 behind the outer backplate 10 and secured to respective connector valves 15. The hole 49 in the base plate 3 can be closed with the base 21 after the gas cylinder 19 has been positioned.

Behind the two gas cylinders 19, a cover 14 is arranged which covers the gas cylinders 19. Instead of one closure 14 each, two gas cylinders 19 can also be provided which share a closure 14.

In addition, a changeover switch is preferably provided, which can change over the connection between the joint valve 15 and the gas line.

And a gas joint guard plate 12 is arranged on the back surface of the outer top plate, and a position for installing the change-over switch 50 is reserved on the gas joint guard plate.

As shown in fig. 1 to 5, the present invention relates to a compact, upwardly heated barbecue machine, which is preferably supplied with air by at least two air bottles 19. The barbecue machine can be flexibly carried by means of the handle 18 and can also be used indoors, since gas bottles 19 are used instead of gas bottles. The barbecue machine is almost sized to fit on any table or end table. The housing 8, front cover 4 and bottom plate 3 protect the table top from the radiant heat of the radiant heaters 2' integrated on the top plate 2 of the cooking cavity. The walls of the housing 8 are formed by two outer side panels, an outer top panel and an outer back panel 10, which have ventilation slots to allow combustion gases and the like to exit the cooking cavity.

As can be seen in figure 4, on the upper side of the barbecue machine, behind the outer top plate of the housing 8, there is a rotary switch 1 for regulating the gas intake and another switch 17 on the gas connector shield 12 (with ventilation opening). The rotary switch 1 also actuates an electronic ignition device 16, which electronic ignition device 16 may be, for example, a piezoelectric igniter. That is to say the radiant heater 2' can be ignited by pressing down on the switch 1 without any further ignition means.

The amount of gas flowing to the radiant heater 2' can be manipulated with the rotary switch 1. When the intake air amount is turned on to the maximum, the radiant heater 2' may reach 800 ℃. Therefore, the temperature control of the upper heating type barbecue machine of the present invention is performed by rotating the switch 1 and the gas flow rate manipulated thereby, which can control the temperature of the radiation heater 2', on the one hand.

On the other hand, the temperature control is also performed by the guide rails 41, 41', 41 ″ on the first side plate 6 and the second side plate 7 of the cooking bore shown in fig. 5. The grill can be pushed into the guide rails 41, 41', 41 ". Due to the different heights of the guide rails 41, 41 ', 41 ", the distance of the item from the radiant heater 2' can be adjusted. Thus, the desired degree of browning and doneness of the baked product can be easily achieved.

As shown in fig. 5, the cooking cavity is further defined by the soleplate 3 and the back plate 9. The front opening has a front plate 5 which can be mounted on a housing 8. The top plate 2, which houses the radiant heater 2', is shielded by a shield in the upper region of the front plate 5.

A particular feature of the barbecue machine of the present invention is a front cover 4 hinged to the base plate 3 at the bottom of the front face, said front cover 4 covering at least the lower third of the front face when closed and covering at most the lower half of the front face. In the open state, i.e. with the front face fully open, the front cover 4 forms an extension of the base plate 3 and protects the table top from radiant heat and fat splashing. In the closed state, the front cover 4 causes a heating effect in the lower region of the cooking bore. In this hot zone, unfrozen grilling product can be thawed during the grill warm-up phase for a period of 5 to 8 minutes. It is particularly emphasized that the toast may be precooked after the end of the preheating stage in this hot zone at a temperature of about 200 ℃. Thus, similar to Sous Vide, the baked good will reach core temperature without becoming totally cooked. The baked product is then placed on a grill and pushed into one pair of upper guides, and the skin is baked crisp within a few minutes by Maillard reaction at high temperature. However, the conventional barbecue machine requires additional equipment to perform the procedure, because such upper heating type barbecue machine can only perform the upper heating type barbecue function in fact. The upper heating type barbecue machine of the present invention combines the features of a plurality of devices into one device, and additionally realizes the quick, convenient and effective thawing of the deep-frozen baked goods.

It is preferred to provide a collecting tray on the floor 3 for receiving juice and fat from the roast. The juice and fat can also be further processed into sauce. The collecting tray also facilitates cleaning of the baking inner chamber.

The outer back plate 10 has a connection plate 11 at an upper side thereof for fixing a connector valve 15 for a gas pipe. The gas source preferably uses at least two gas cylinders 19, said gas cylinders 19 being mountable at the rear side of the barbecue machine. For this purpose, the base 21 on the underside of the base plate 3 behind the outer back plate 10 can be removed and the gas cylinder 19 can be pushed through the opening in the base plate 3 and fixed to the connector valve 15. The base 21, on which the cylinders 19 are placed, is then filled and a cover 14 (with ventilation openings) can be mounted behind each of the at least two cylinders 19. Thus, the gas bottle 19 is firmly and safely mounted behind the outer back plate 10 of the barbecue machine, and the barbecue machine with the gas source can be brought to any place by means of the handle 18 mounted on the outer top plate.

The connector valve 15 connecting at least two cylinders 19 comprises an integrated valve by means of which the gas supply of each cylinder 19 can be opened and closed. In operation, only one valve is opened at a time, i.e. only one of the at least two gas cylinders 19 is in use at a time. Once the used cylinder is empty, another cylinder can be opened manually, and the empty cylinder can be replaced and refilled. There is no need to interrupt grilling by using at least two gas bottles 19. In addition, compared with a gas tank, the gas cylinder has small volume and small gas quantity, so that more gas cylinders can be stored.

Another significant advantage of using the gas cylinder 19 is that, in addition to flexibility and safety, there is less environmental damage. The carbon dioxide emission of the barbecue machine of the present invention is also minimized because the front cover 4 is provided, because the operation of the barbecue machine is more energy-saving. On the one hand, the grilling machine requires only a short preheating time, since the entire front side is not open, and on the other hand, the heat generated by the heating effect at the rear side of the front cover 4 can also be used for defrosting or precooking the grilling goods.

Fig. 6 shows a further embodiment of a grilling machine, which corresponds to the embodiment of fig. 1 to 5 in terms of basic construction, but differs in some details. In the embodiment of fig. 6, on the one hand, the cover 14 is not present, nor is the base plate provided with holes and associated seats 21.

In addition, the outer top plate extends to the joint of the gas receiving bottle. Further, a connection plate 11 is installed at the lower side of the outer top plate. Overall, this embodiment variant makes the housing more stable.
