The oleoresin has less chance of oxidative deterioration because the active ingredient is surrounded by fat during storage and contains natural antioxidant.

Further, a method for preparing a pimenta essence by using the pimenta oleoresin as claimed in claim 1, which comprises the following components in parts by weight: 50-60 parts of allspice resin, 0.2-0.3 part of clove bud oil, 0.5-0.6 part of eugenol, 0.8-1.0 part of ethylidene caryophyllene, 0.7-0.9 part of linalyl acetate, 0.8-1.0 part of nutmeg oil, 0.6-0.7 part of vanillin, 0.3-0.4 part of ethyl maltol, 0.2-0.3 part of ethyl butyrate, 0.3-0.5 part of cassia oil, 0.2-0.3 part of guaiacol, 90-94.2 parts of propylene glycol, 0.6-0.8 part of cinnamyl alcohol, 0.2-0.3 part of raspberry ketone and 0.1-1.1 part of ethyl propionate.
