A preparation process of high linoleic acid antioxidant powdered oil is characterized by comprising the following steps: (1) preparing glycated protein: weighing soybean protein isolate (the purity is more than or equal to 92 percent) and glucan (70KDa), respectively dissolving the soybean protein isolate and the glucan in a phosphate buffer solution (0.1M, pH 7.0.0) to prepare a soybean protein isolate solution with the mass fraction of 2.0-5.0 percent (w/v) and a glucan solution with the mass fraction of 0.5-2.0 percent (w/v), mixing the soybean protein isolate solution and the glucan solution according to the volume ratio of 3:1-1:2, stirring and homogenizing, fully hydrating in a refrigerator at 4 ℃ overnight (12-16h), then freezing and drying, and reacting for 12h under the conditions of the humidity of 79 percent and the temperature of 60 ℃ to obtain the glycated protein; (2) preparing an emulsion: preparing a glycated protein solution (phosphate buffer solution 0.1M, pH 7.0.0) with the mass fraction of 3.0-5.0% (w/v), stirring at room temperature for 12h to fully dissolve the glycated protein solution, then respectively adding gallocatechin with the mass concentration of 1.5-3.0% (w/v) and conjugated linoleic acid with the mass concentration of 1.0-2.5% (w/v), and emulsifying for 5min at the rotating speed of 12000r/min by using a high-speed shearing machine to prepare a crude emulsion; (3) dispersing and homogenizing: carrying out jet cavitation treatment (setting the lower limit of jet cavitation temperature to be 25 ℃ and the upper limit of the jet cavitation temperature to be 80 ℃) on the crude emulsion (1L) to prepare the nano emulsion, wherein the jet cavitation pressure is 0.01-0.03MPa, and the jet cavitation time is 10-25 min; (4) microwave constant-temperature convection drying: and (2) flatly paving the nano emulsion sample on a polyethylene plastic carrier disc (with the thickness of 1 cm) for drying treatment, and ensuring that the water content of the sample is below 5 percent to obtain the high linoleic acid antioxidant powdery grease, wherein the microwave constant-temperature convection drying power density is 1.00-1.75W/g, and the material surface temperature and the hot air temperature are both 40-70 ℃.

Background

The powdered oil is prepared by spray drying, pulverizing or coating emulsion oil to obtain dried powder, and has effects of delaying oxidation of oil in food, enhancing storage stability, and reducing food quality deterioration. The powdered oil and fat can be used as food ingredient, and has improved convenience in storage and circulation, and expanded application range in food, such as infant formula milk powder, instant food, and solid beverage. The microwave drying method for preparing the powdered oil is simple to operate, good powder or particles can be obtained by only one process, but the drying speed is high, the temperature is increased too fast, and the microwave drying method is not suitable for microencapsulation of heat-sensitive materials. Therefore, the selection of proper wall material and drying temperature is necessary for spray drying the microencapsulated powdered oil, and the characteristics of the microencapsulated powdered oil have important influence on the stability of the emulsion and the quality of the product.

The glycated protein is a protein and polysaccharide which are introduced with hydroxyl groups of polysaccharide chains through covalent interaction, so that the glycated protein shows hydrophilic characteristics similar to those of saccharides and macromolecular characteristics of the protein, and functional characteristics such as solubility and emulsibility of the protein can be effectively improved. Many researchers have found that glycated soy protein isolate can serve as a good wall material for powdered oil as compared to embedding with soy protein isolate alone. The saccharified soybean protein isolate as a wall material of the powdered oil has good physical stability, permeability, emulsibility, solubility and stability, and has good embedding effect on a core material.

The microwave constant-temperature convection drying is a novel food drying technology based on a temperature feedback regulation microwave power mode, and can overcome some defects of a conventional food drying method by combining the advantages of rapid microwave heating and large dehumidification capacity of hot air convection drying.

The process combines jet cavitation and microwave constant-temperature convection drying technology to prepare the high-linoleic acid antioxidant powdered oil, and the powdered oil produced by the process has good sensory quality, high linoleic acid content, strong oxidation resistance and wide application prospect.

Disclosure of Invention

The invention aims to overcome the defects of the prior art and provide a preparation process of high linoleic acid antioxidant powdered oil, thereby achieving the purposes of simplifying the process, improving the product quality and reducing the cost.

a preparation process of high linoleic acid antioxidant powdered oil is characterized by comprising the following steps: (1) preparing glycated protein: weighing soybean protein isolate (the purity is more than or equal to 92 percent) and glucan (70KDa), respectively dissolving the soybean protein isolate and the glucan in a phosphate buffer solution (0.1M, pH 7.0.0) to prepare a soybean protein isolate solution with the mass fraction of 2.0-5.0 percent (w/v) and a glucan solution with the mass fraction of 0.5-2.0 percent (w/v), mixing the soybean protein isolate solution and the glucan solution according to the volume ratio of 3:1-1:2, stirring and homogenizing, fully hydrating in a refrigerator at 4 ℃ overnight (12-16h), then freezing and drying, and reacting for 12h under the conditions of the humidity of 79 percent and the temperature of 60 ℃ to obtain the glycated protein; (2) preparing an emulsion: preparing a glycated protein solution (phosphate buffer solution 0.1M, pH 7.0.0) with the mass fraction of 3.0-5.0% (w/v), stirring at room temperature for 12h to fully dissolve the glycated protein solution, then respectively adding gallocatechin with the mass concentration of 1.5-3.0% (w/v) and conjugated linoleic acid with the mass concentration of 1.0-2.5% (w/v), and emulsifying for 5min at the rotating speed of 12000r/min by using a high-speed shearing machine to prepare a crude emulsion; (3) dispersing and homogenizing: carrying out jet cavitation treatment (setting the lower limit of jet cavitation temperature to be 25 ℃ and the upper limit of the jet cavitation temperature to be 80 ℃) on the crude emulsion (1L) to prepare the nano emulsion, wherein the jet cavitation pressure is 0.01-0.03MPa, and the jet cavitation time is 10-25 min; (4) microwave constant-temperature convection drying: and (2) flatly paving the nano emulsion sample on a polyethylene plastic carrier disc (with the thickness of 1 cm) for drying treatment, and ensuring that the water content of the sample is below 5 percent to obtain the high linoleic acid antioxidant powdery grease, wherein the microwave constant-temperature convection drying power density is 1.00-1.75W/g, and the material surface temperature and the hot air temperature are both 40-70 ℃.

The mass fraction of the soy protein isolate solution is 4.0% (w/v), the mass fraction of the glucan solution is 1.0% (w/v), and the volume ratio of the soy protein isolate solution to the glucan solution is 2: 1. The mass fraction of the glycated protein solution is 4.5%, the mass fraction of the gallocatechin is 1.5% (w/v), and the mass fraction of the conjugated linoleic acid is 2.0% (w/v).

The jet cavitation pressure is 0.02MPa, and the jet cavitation time is 20 min.

The present invention is further illustrated by the following examples, which are not intended to limit the scope of the invention. The following examples used the following main raw materials, reagents and experimental equipment:
