immersing the fourth prefabricated product into the feed liquid for 3s-10s while the fourth prefabricated product is hot, fishing out and standing for 20min-60min to obtain a fifth prefabricated product;

and re-baking the fifth pre-product at the temperature of 135-160 ℃ for 50-75 min, and naturally cooling to obtain a finished product of the hickory nut.

The pecan processing method according to claim 6, wherein the fifth pre-product is re-baked by placing the fifth pre-product into a multi-layer louver oven having a plurality of layers of baking trays arranged in sequence from top to bottom, the fifth pre-product is first placed into the uppermost layer of baking tray and then sequentially placed into the lower layer of baking tray until being placed into the lowermost layer of baking tray, and the baking time of each layer of baking tray is 10-15 min.

At present, with the upgrading of consumption and the demand of the national market, the future development direction of the hickory industry mainly focuses on the further improvement of the edible convenience of the hickory. However, the pecans with shells sold on the market at present are difficult to peel, or the shells are incomplete, the nuts are broken, and the eating convenience of the pecans needs to be further improved.

In one embodiment, when the fifth prefabricated product is redried, the fifth prefabricated product is placed into a multi-layer louver oven, the multi-layer louver oven is provided with a plurality of layers of baking trays which are arranged from top to bottom in sequence, the fifth prefabricated product is firstly placed into the uppermost layer of baking tray and then is sequentially placed into the lower layer of baking tray until being placed into the lowermost layer of baking tray, and the baking time in each layer of baking tray is 10-15 min.

The processing method of the hickory nut provided by the invention will be further explained below.

Referring to fig. 1, the present invention provides a processing method of hickory nut, including the following steps:

s1, providing dried pecan seeds, pretreating the dried pecan seeds in an aqueous solution at a preset temperature, taking out the seeds, and standing the seeds to obtain a first prefabricated product. Wherein, the antioxidant is dissolved in the aqueous solution, and the mass percentage of the antioxidant in the aqueous solution is 0.01-0.05%.

In the processing method of the hickory provided by the invention, the antioxidant is dissolved in the aqueous solution, and the aqueous solution is adopted to carry out the pretreatment of the step S1 on the dry hickory seeds at the preset temperature, so that shells and kernels of the dry hickory seeds can be softened, the hickory kernels are protected, the oxidation of grease of the hickory seeds is delayed, and the shells and kernels of the dry hickory seeds have elasticity. Therefore, the shell is not easy to break and fall off during the shell cracking process, the kernel is not easy to break, and the integrity of the shell and the kernel can be maintained. Therefore, the pecan obtained finally is easy to peel, the kernel is relatively complete, and the edible convenience and the experience are better.

Specifically, the antioxidant comprises the following components in percentage by mass: 37-45% of D-sodium erythorbate, 18-25% of tert-butyl hydroquinone, 6-13% of emulsifying dispersant, 2-6% of penetrating agent and the balance of pregelatinized starch.

The D-sodium erythorbate and the tert-butylhydroquinone are main antioxidant components, have a good antioxidant effect, and can effectively prolong the shelf life of the hickory nut. The emulsifying dispersant comprises soybean phospholipid, and the penetrating agent comprises potassium chloride. The soybean phospholipid is used as an emulsifying dispersant, and the potassium chloride is used as a penetrating agent, so that the D-sodium isoascorbate and the tert-butyl hydroquinone can be favorably permeated into the pecan nuts, the oxidation of the pecan grease is delayed, and the shelf life of the pecan is prolonged.

The preset temperature is 85-95 ℃, and the pretreatment time is 15-30 min. In the traditional hickory processing process, an antioxidant is usually added in the step of flavor treatment, but the time for immersing the hickory into the feed liquid in the step of flavor treatment is short (generally, a few seconds), the amount of the antioxidant penetrating into shells and kernels is small, and the quality guarantee period is not long enough. In the invention, the antioxidant is added in the pretreatment step before the cracking process, the preset temperature is 85-95 ℃, the pretreatment time is 15-30 min, and the time is longer, so that the antioxidant can be more fully permeated into the shells and the nuts, and the quality guarantee period of the hickory nuts can be prolonged.

When the antioxidant is dissolved in water, the antioxidant may be dissolved in 75% by volume of edible alcohol before being dissolved in water. The antioxidant is easily dissolved in the edible alcohol, so that the antioxidant is dissolved in the edible alcohol with the volume fraction of 75% and then dissolved in the water, the rapid dissolution of the antioxidant is facilitated, and the processing time can be shortened.

When the antioxidant is dissolved in the edible alcohol with the volume fraction of 75%, the edible alcohol is used in an amount which can immerse the antioxidant so that the antioxidant is dissolved in the edible alcohol, and the specific amount of the edible alcohol is not required.

Referring to fig. 2, the shelling device in step S2 includes: the feeding device comprises a feeding hopper 1, a first material guide roller 2, a second material guide roller 3, a discharging plate 4, a shell cracking roller 5 and a shell cracking hammer 6.

The first guide roller wheel 2 and the second guide roller wheel 3 are arranged below the feeding hopper 1 in parallel, the first guide roller wheel 2 is provided with a first guide chute 21, the second guide roller wheel 3 is provided with a second guide chute 31, the first guide roller wheel 2 and the second guide roller wheel 3 can rotate towards opposite directions, so that notches of the first guide chute 21 and the second guide chute 31 are opposite to each other to accommodate the pecans 100 in the first guide chute 21 and the second guide chute 31, and when the first guide roller wheel 2 and the second guide roller wheel 3 rotate to the first guide chute 21 and the second guide chute 31 to be far away from each other, the pecans 100 fall out of the first guide chute 21 and the second guide chute 31.

The shell cracking equipment is simple in structure and easy to operate, only the pecans 100 are required to be put into the feeding hopper 1, the shell cracking can be achieved through automatic control of the equipment, and the shell cracking process is very simple.

The splitting apparatus further comprises a first motor 22, a second motor 32 and a third motor 52. The first motor 22 is connected with the first material guiding roller 2 to drive the first material guiding roller 2 to rotate, the second motor 32 is connected with the second material guiding roller 3 to drive the second material guiding roller 3 to rotate, and the third motor 52 is connected with the shell cracking roller 5 to drive the shell cracking roller 5 to rotate. In this embodiment, the first material guiding roller 2 and the second material guiding roller 3 are both plastic rollers, and the shell cracking roller 5 is a high-carbon steel roller.

The shell cracking hammer 6 is a pneumatic shell cracking hammer, the shell cracking hammer 6 is connected with an air cylinder, and the shell cracking hammer 6 is controlled to reciprocate through the air cylinder. Therefore, the control mode of the shell cracking hammer 6 is simple, the operation is convenient, and the beating force of the shell cracking hammer 6 is easy to control. The shell cracking hammer 6 can be made of high-carbon steel, has good rigidity and is easy to crack the hickory 100 shells.

Further, the interval between the first guide roller wheel 2 and the second guide roller wheel 3 is adjustable, different intervals can be adjusted according to the size of the hickory nut 100, and when the first guide roller wheel 2 and the second guide roller wheel 3 are clamped by the hickory nut 100 or other foreign matters and cannot rotate, the hickory nut 100 or other foreign matters can be taken out by adjusting the interval between the first guide roller wheel 2 and the second guide roller wheel 3, and the maintenance is convenient.

In order to further improve the processing efficiency, in an embodiment, the number of the first material guide grooves 21 is plural, and the plural first material guide grooves 21 are arranged in plural rows along the circumferential direction of the first material guide roller 2. Accordingly, the number of the second guide chute 31 is plural, and the plural second guide chutes 31 are arranged in plural rows along the circumferential direction of the second guide roller 3. Referring to fig. 3, in an embodiment, six first material guiding grooves 21 of the first material guiding roller 2 are arranged in a row, and correspondingly, six second material guiding grooves 31 of the second material guiding roller 3 are arranged in a row, so that when the first material guiding roller 2 and the second material guiding roller 3 rotate, six pecans 100 can simultaneously pass through the first material guiding roller 2 and the second material guiding roller 3 and fall onto the blanking plate 4, thereby greatly improving the processing efficiency. However, the number of rows of the first material guide chutes 21 and the second material guide chutes 31 and the number of the first material guide chutes 21 and the second material guide chutes 31 in each row are not limited in the present invention.

And the fifth prefabricated product is firstly put into the baking tray on the uppermost layer and then successively put into the baking trays on the lower layers until the fifth prefabricated product is put into the baking tray on the lowermost layer, wherein the baking time in each layer of baking trays is 10-15 min. The temperature of the uppermost layer in the multi-layer louver drying oven is lower, the temperature is higher when going downwards, and the pecans are sequentially placed into the baking trays on different layers to be baked when being baked, so that the pecans are gradually heated, the pecans are fully dried, and the surface layers of the pecans are prevented from being baked.

When naturally cooling, the pecans can be naturally cooled in the environment with the temperature of 20-25 ℃ and the relative humidity of 40-60 percent.
