10. The production method of the fried-type instant noodle production apparatus according to any one of claims 1 to 9, characterized by comprising the steps of:

(1) stirring and mixing salt, alkali and other additives in the brine system, and keeping a certain temperature; quantitatively adding atomized water drops into a double-shaft flour-mixing machine through an air pressure atomization water adding system;

(2) after flour and other ingredients are added into a flour mixing barrel of the double-shaft flour mixing machine, a system is started, and two stirring shafts rotate reversely; the flour is raised by the stirring blades on the stirring shaft to be mixed with the saline water, and the flour and the saline water are fully mixed through continuous stirring to form dough; the dough kneading time is about 15-20 minutes, after dough kneading is finished, the discharging roller is rotated by 90 degrees by using the air cylinder, so that the dough falls down and flows into a curing feeder through a blanking hopper; then the inclined material roller is reversed by 90 degrees by the cylinder, the bottom opening of the dough kneading barrel is closed, and dough kneading is started for the next time;

(3) the dough falls into a curing feeder through a blanking hopper, the curing time is 4-14 minutes, dough can be sufficiently smashed by a dough scraping claw at the tail of the device, and then the dough is blanked into a composite tablet press through the blanking hopper;

(4) the feeding unit inserts dough sent by the curing feeder into a roller through a dough inserting mechanism and presses the dough into two groups of dough sheets with the thickness of 6-8 mm; two groups of dough sheets are overlapped on a dough cover conveying belt and sent into a compound unit, then the dough sheets are pressed into dough sheets with the thickness of 6-8 mm, and then the dough sheets are conveyed into a continuous tabletting machine;

(5) the dough belt coming out of the composite tablet press enters a continuous tablet press, and is continuously rolled by a tablet press unit to finally reach the thickness of the dough sheet required by the process requirement; after entering a shredding and forming cutter, the qualified flour belt rolled by a tabletting machine set at the tail end is cut into flour shreds, and the flour shreds are conveyed to a multilayer flour steaming machine after being formed;

(7) the climbing seasoning machine sends the steamed noodles from the multilayer noodle steaming machine to a box falling forming machine, and simultaneously, material water is used for spraying and flavoring and cooling or clear water is used for directly spraying and cooling; drying the sprayed dough filaments by an axial flow fan to remove excessive moisture, and sending the dried dough filaments to a box falling forming machine;

(8) the noodle shreds conveyed by the box falling forming machine from the climbing seasoning machine are straightened, then cut according to the process requirements, and conveyed into a frying machine after being arranged in rows;

(9) the oil temperature in the frying machine is heated to about 145-155 ℃, the dough blocks conveyed in rows are immersed into the oil surface, and the frying time is 70-100 seconds from immersion to floating of the oil surface; after frying, falling into a finishing device;

(10) the arrangement device arranges the dough pieces falling from the frying machine into a regular row according to a set distance and sends the row into the air cooling machine, so as to be beneficial to the shunting and conveying of a subsequent shunting conveyor;

(11) after the dough blocks are forcibly cooled by the air cooling machine, the dough blocks are adjusted to be longitudinally arranged by the shunting conveyor by utilizing the speed difference with the air cooling machine and then conveyed to the packaging machine for packaging.

Technical Field

The invention relates to the technical field of instant noodle production line equipment, in particular to a fried instant noodle production device and a production method thereof.

Background

The instant noodles are broadly flour food which can be cooked and eaten by hot water in a short time, and related dishes such as reconstituted noodles, instant noodles salad and the like are available; in the narrow sense, instant noodles generally refer to a sold finished product consisting of a flour cake, a seasoning bag and an oil bag, and are mostly packaged in bags and cups or bowls in the market.

The instant noodles are produced with flour as main material and through kneading, curing, pressing, cutting and folding, and through multilayer tunnel noodles steaming at 90 deg.c, frying to dewater, cooling and packing.

The existing production equipment for fried instant noodles comprises a water supply system, a flour mixing machine, a feeding machine, a composite tablet press, a continuous tablet forming machine, a multilayer noodle steaming machine, a connecting frame, a cutting and splitting machine, a frying machine, an arraying machine, a cooling machine, a splitting conveyor, a packaging machine and the like which are sequentially connected.

However, as the degree of automation of production is continuously improved and the standards of sanitary requirements of production environment are more strict, how to provide a production system which has a more complete and reasonable structural design, a short processing period and a high degree of automation and meets the sanitary standards is a scheme which is continuously sought by the industry.

Disclosure of Invention

The invention aims to overcome the defects of the prior art and provides a fried instant noodle production device.

The invention also aims to provide a production method of the fried instant noodle production device.

The purpose of the invention is realized by the following technical scheme:

a fried instant noodle production device is sequentially and continuously provided with a saline water system, a double-shaft flour-mixing machine, a curing feeding machine, a composite tablet machine, a continuous tablet machine, a multilayer flour-steaming machine, a climbing seasoning machine, a box falling forming machine, a frying machine, a finishing device, an air cooling machine, a shunting conveyor and a packaging machine according to a production process flow;

the brine system comprises a brine stirring cylinder arranged on the frame, a refrigeration system used for controlling the temperature of brine, a metering system arranged on the brine stirring cylinder, an air pressure atomization water adding system connected with the brine stirring cylinder, a pipeline cleaning system and an electric control system used for controlling the brine system and the double-shaft flour-mixing machine;

the double-shaft dough mixer comprises a dough mixing barrel, two stirring shafts with stirring blades and an unloading roller, wherein the two stirring shafts and the unloading roller are arranged in the dough mixing barrel; the stirring shafts are driven by a motor to rotate reversely; the discharging roller is driven by the cylinder to rotate back and forth for 90 degrees;

the climbing seasoning machine comprises a rack, an upper guide rail, a lower guide rail and a spraying net chain, wherein the upper guide rail, the lower guide rail and the spraying net chain are arranged on the rack and have gradients; the middle part of the upper guide rail is provided with a spray box, and an upper spray head and a lower spray head which are respectively used for spraying the upper surface and the lower surface of the net chain are arranged in the spray box; a water tank is arranged below the spray tank and is connected with the upper spray header and the lower spray header through a spray motor and a pipeline, and an upper spray pressure balance valve and a lower spray pressure balance valve are arranged on the pipeline; a rear water pan of the upper guide rail and a front water pan of the upper guide rail are arranged below the upper guide rail; a lower guide rail front water receiving tray and a lower guide rail rear water receiving tray which are used for guiding water into the water tank are arranged below the lower guide rail; an axial flow fan is arranged above the upper guide rail; the conveying net chain is driven by a motor arranged on the box falling forming machine; and the rack is provided with a spraying net connecting steering shaft and a spraying net chain tensioning shaft.

A production method of the fried instant noodle production device comprises the following steps:

(1) stirring and mixing salt, alkali and other additives in the brine system, and keeping a certain temperature; quantitatively adding atomized water drops into a double-shaft flour-mixing machine through an air pressure atomization water adding system;

(2) after flour and other ingredients are added into a flour mixing barrel of the double-shaft flour mixing machine, a system is started, and two stirring shafts rotate reversely; the flour is raised by the stirring blades on the stirring shaft to be mixed with the saline water, and the flour and the saline water are fully mixed through continuous stirring to form dough; the dough kneading time is about 15-20 minutes, after dough kneading is finished, the discharging roller is rotated by 90 degrees by using the air cylinder, so that the dough falls down and flows into a curing feeder through a blanking hopper; then the inclined material roller is reversed by 90 degrees by the cylinder, the bottom opening of the dough kneading barrel is closed, and dough kneading is started for the next time;

(3) the dough falls into a curing feeder through a blanking hopper, the curing time is 4-14 minutes, dough can be sufficiently smashed by a dough scraping claw at the tail of the device, and then the dough is blanked into a composite tablet press through the blanking hopper;

(4) the feeding unit inserts dough sent by the curing feeder into a roller through a dough inserting mechanism and presses the dough into two groups of dough sheets with the thickness of 6-8 mm; two groups of dough sheets are overlapped on a dough cover conveying belt and sent into a compound unit, then the dough sheets are pressed into dough sheets with the thickness of 6-8 mm, and then the dough sheets are conveyed into a continuous tabletting machine;

(5) the dough belt coming out of the composite tablet press enters a continuous tablet press, and is continuously rolled by a tablet press unit to finally reach the thickness of the dough sheet required by the process requirement; after entering a shredding and forming cutter, the qualified flour belt rolled by a tabletting machine set at the tail end is cut into flour shreds, and the flour shreds are conveyed to a multilayer flour steaming machine after being formed;

(6) the multilayer noodle steaming machine steams the shredded noodles by using steam;

(7) the climbing seasoning machine sends the steamed noodles from the multilayer noodle steaming machine to a box falling forming machine, and simultaneously, material water is used for spraying and flavoring and cooling or clear water is used for directly spraying and cooling; drying the sprayed dough filaments by an axial flow fan to remove excessive moisture, and sending the dried dough filaments to a box falling forming machine;

(8) the noodle shreds conveyed by the box falling forming machine from the climbing seasoning machine are straightened, then cut according to the process requirements, and conveyed into a frying machine after being arranged in rows;

(9) the oil temperature in the frying machine is heated to about 145-155 ℃, the dough blocks conveyed in rows are immersed into the oil surface, and the frying time is 70-100 seconds from immersion to floating of the oil surface; after frying, falling into a finishing device;

(10) the arrangement device arranges the dough pieces falling from the frying machine into a regular row according to a set distance and sends the row into the air cooling machine, so as to be beneficial to the shunting and conveying of a subsequent shunting conveyor;

(11) after the dough blocks are forcibly cooled by the air cooling machine, the dough blocks are adjusted to be longitudinally arranged by the shunting conveyor by utilizing the speed difference with the air cooling machine and then conveyed to a packaging machine for packaging

Compared with the prior art, the invention has the following beneficial effects:

the fried instant noodle production device has the advantages of more perfect and reasonable structural design, short processing period and high automation degree, and meets the production system of sanitary standards.

The climbing seasoning machine has a certain gradient, can be favorable for the outflow of redundant spray water, is convenient for collect and avoids polluting the production environment by arranging the water receiving disc. The spraying amount of the upper surface and the lower surface can be controlled through the upper and lower spraying pressure balance valves, and the uniform spraying is realized. Excessive moisture is quickly dried by the axial flow fan, and the quality requirement of the subsequent production section is ensured. Simultaneously, spray the regulation that the net chain tensioning axle realized the net chain through ingenious design.
