The following description of the embodiments of the present invention is provided for illustrative purposes, and other advantages and effects of the present invention will become apparent to those skilled in the art from the present disclosure.

The invention provides a noodle cutter, as shown in figure 2, comprising a driving cutter set 1 and a driven cutter set 2, wherein the driving cutter set 1 and the driven cutter set 2 rotate oppositely, driving cutter teeth 11 and driving cutter grooves 12 are distributed on the driving cutter set 1, driven cutter grooves 21 with the width matched with that of the driving cutter teeth 11 are arranged on the driven cutter set 2 corresponding to the positions of the driving cutter teeth 11, driven cutter teeth 22 with the width matched with that of the driving cutter grooves 12 are arranged on the driven cutter set 2 corresponding to the positions of the driving cutter grooves 12, the driving cutter grooves 12 are formed between two adjacent driving cutter teeth 11, the driven cutter grooves 21 are formed between two adjacent driven cutter teeth 22, the noodle cutter comprises one or more parallel tangent plane sections, the noodle cutter comprises one or more tangent plane sections, and at least one tangent plane section has at least two cutter teeth with different widths. In a preferred embodiment, the dough cutting knife further comprises a first cutting knife rest 6 and a second cutting knife rest 7, and the first cutting knife rest 6 and the second cutting knife rest 7 are arranged at two ends of the driving knife set 1 and the driven knife set 2.

the instant noodles with hand-made mouth feel are obtained by mixing flour and water, kneading, rolling to obtain a cake, shredding, wave making, steaming, cutting and drying by the noodle slicing knife of the invention. In a preferred embodiment, at least one of the following technical features is also included:

1) the dough slicing knives are in mortise and tenon joint, and the dough slicing knife shown in the figure 6 is in mortise and tenon joint with the dough slicing knife shown in the figure 7 to obtain the dough slicing combined knife shown in the figure 8;

2) The driving cutter tooth 11 partially extends into the driven cutter groove 21 with the corresponding width, and the driven cutter tooth 22 partially extends into the driving cutter groove 12 with the corresponding width;

3) The widths of the driving cutter tooth 11 and the driven cutter tooth 22 are respectively 0.3 mm-30 mm;

7) when the combined cutting-surface cutter comprises a cutting-surface section (namely when the cutter teeth of each cutting-surface section are distributed the same), in each cutting-surface section, the cutter teeth with the width of 1-1.5 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, if the width of the cutter teeth is 1-1.3 mm or 1.3-1.5 mm, the width of the cutter teeth is 1-1.5 mm and accounts for 20-22%, 22-24% or 24-25%, the width of the cutter teeth of the driving cutter teeth 11 and the driven cutter teeth 22 is more than 1.5mm and less than 2.5mm and accounts for 50-60%, if the width is more than 1.5mm and less than or equal to 1.6mm, 1.6-2.0 mm, 2.0-2.3 mm, 2.3-2.4 mm or more than or equal to 2.4mm and less than 2.5mm, the cutter teeth with the width more than 1.5mm and less than 2.5mm account for 50-55%, 55-56% or 56-60%, and the cutter teeth with the width of 2.5-3 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, if the width is 2.5-2.8 mm or 2.8-3 mm, the knife teeth with the width of 2.5-3 mm account for 20-23% or 23-25%;

8) When the combined tangent plane cutter comprises more than two tangent plane sections (namely when the cutter teeth of the tangent plane sections are distributed more than two), in at least one tangent plane section, the cutter teeth with the width of 1-1.5 mm in the driving cutter tooth 11 and the driven cutter tooth 22 account for 20-25%, such as the cutter teeth with the width of 1-1.2 mm, 1.2-1.3 mm or 1.3-1.5 mm, the cutter teeth with the width of 1-1.5 mm account for 20-22%, 22-23%, 23-24% or 24-25%, the cutter teeth with the width of more than 1.5mm and less than 2.5mm in the driving cutter tooth 11 and the driven cutter tooth 22 account for 50-60%, such as the cutter teeth with the width of more than 1.5mm and less than or equal to 1.6mm, 1.6-2.0 mm, 2.0-2.2 mm, 2.2-2.3 mm, 2.3-2.4 mm or more than 2.4mm and less than 2.5mm, the cutter teeth with the width of more than 1.5mm and less than 2.56% or 55% of the driving cutter teeth and the cutter teeth account for 20-60%, for example, the width of the cutter teeth is 2.5-2.7 mm, 2.7-2.8 mm or 2.8-3 mm, and the width of the cutter teeth is 20-22%, 22-23% or 23-25%.

In a preferred embodiment, feature 1) the adjacent slicing knives are provided with a tenon 91 and a mortise 101 matching the tenon, respectively, at the contact surface. The tenon (shown in fig. 6) is matched with the mortise (shown in fig. 7), and the cross section of the tenon in fig. 6 is square, but the tenon is not limited to be only applicable to square, and can be square, rectangle, triangle, circle, and the like as long as the tenon is matched with the mortise.

As shown in fig. 3 and 4, the combined cutting-surface knife comprises two cutting-surface knives arranged axially in parallel: the hand-made noodle making device comprises a first noodle cutting knife 9 and a second noodle cutting knife 10, wherein the first noodle cutting knife 9 is used as a first noodle cutting section, the second noodle cutting knife 10 is used as a second noodle cutting section, the two noodle cutting sections can be distributed in the same way (figure 3) or in different ways (figure 4), and in order to obtain the hand-made noodle taste, at least one noodle cutting section is provided with at least two kinds of knife teeth with different widths.

As shown in fig. 9 to 11, the present invention provides a tangent plane lantern ring cutter assembly, which comprises a plurality of tangent plane cutters and a fixed shaft 13, wherein the tangent plane cutters are axially arranged in parallel, the tangent plane cutters are provided with through holes 14 matched with the fixed shaft 13, the fixed shaft 13 penetrates through the through holes 14 and is tightly matched with the through holes, the tangent plane cutters comprise a driving cutter set 1 and a driven cutter set 2, the driving cutter set 1 and the driven cutter set 2 rotate oppositely, driving cutter teeth 11 and driving cutter grooves 12 are distributed on the driving cutter set 1, the driven cutter set 2 corresponding to the driving cutter teeth 11 is provided with driven cutter grooves 21 having a width matched with the width of the driving cutter teeth 11, the driven cutter set 2 corresponding to the driving cutter grooves 12 is provided with driven cutter teeth 22 having a width matched with the width of the driving cutter grooves 12, the driving cutter grooves 12 are formed between two adjacent driving cutter teeth 11, the driven cutter grooves 21 are formed between two adjacent driven cutter teeth 22, the tangent plane lantern ring cutter assembly comprises a tangent plane section or a plurality of tangent, the tangent plane lantern ring cutter subassembly includes one or more tangent plane sections, and at least one tangent plane section has the sword tooth of at least two kinds of different widths.

5) The tangent plane lantern ring cutter assembly further comprises a first cutter frame 6 and a second cutter frame 7, and the first cutter frame 6 and the second cutter frame 7 are arranged at two ends of the driving cutter set 1 and the driven cutter set 2 in the tangent plane lantern ring cutter assembly;

6) When the tangential ring knife assembly comprises a tangential section (i.e. when the knife teeth of each tangential section are equally distributed), in each tangential section, the cutter teeth with the width of 1-1.5 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, if the width of the cutter teeth is 1-1.3 mm or 1.3-1.5 mm, the width of the cutter teeth is 1-1.5 mm and accounts for 20-22%, 22-24% or 24-25%, the width of the cutter teeth of the driving cutter teeth 11 and the driven cutter teeth 22 is more than 1.5mm and less than 2.5mm and accounts for 50-60%, if the width is more than 1.5mm and less than or equal to 1.6mm, 1.6-2.0 mm, 2.0-2.3 mm, 2.3-2.4 mm or more than or equal to 2.4mm and less than 2.5mm, the cutter teeth with the width more than 1.5mm and less than 2.5mm account for 50-55%, 55-56% or 56-60%, and the cutter teeth with the width of 2.5-3 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, if the width is 2.5-2.8 mm or 2.8-3 mm, the knife teeth with the width of 2.5-3 mm account for 20-23% or 23-25%;

7) When the tangent plane lantern ring cutter assembly comprises more than two tangent plane sections (namely when the cutter teeth of the tangent plane sections are distributed more than two), in at least one tangent plane section, the cutter teeth with the width of 1-1.5 mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 20-25%, such as the cutter teeth with the width of 1-1.2 mm, 1.2-1.3 mm or 1.3-1.5 mm, the cutter teeth with the width of 1-1.5 mm account for 20-22%, 22-23%, 23-24% or 24-25%, the cutter teeth with the width of more than 1.5mm and less than 2.5mm in the driving cutter teeth 11 and the driven cutter teeth 22 account for 50-60%, such as the cutter teeth with the width of more than 1.5mm and less than or equal to 1.6mm, 1.6-2.0 mm, 2.0.2.2 mm, 2.2-3 mm, 2.3-2.4 mm or more than 2.4mm and less than 2.5mm, the cutter teeth with the width of 1.5mm and less than 2.56-55%, and the cutter teeth account for 50-60% of the width of the driving cutter teeth and the driven cutter teeth of 1.5mm and 5mm, for example, the width of the cutter teeth is 2.5-2.7 mm, 2.7-2.8 mm or 2.8-3 mm, and the width of the cutter teeth is 20-22%, 22-23% or 23-25%.

Flour and water are mixed for kneading, dough is obtained by rolling, the dough is shredded by the dough cutting and sleeving cutter assembly, and then the dough is subjected to wave making, steaming, cutting and drying. The section lantern ring cutter assembly comprises a section or a plurality of parallel sections, and when the plurality of parallel sections are used for shredding, the sections are arranged according to the section after wave making. The dough kneading, rolling, shredding, wave making, splitting, steaming, cutting and drying can all adopt the prior art.
