Technical Field

The invention belongs to the technical field of tobacco preparation, and particularly relates to a cigar fresh air circulating alcoholization chamber and an alcoholization method.

Background

Cigars (English: Cigar) are tobacco products made from dried and fermented tobacco rolls that are smoked at one end and then smoked hoots at the other end to produce smoke. The major production countries for cigar tobacco are cuba, dominican republic, the united states, mexico, and the like. In recent years, domestic cigars have come up with new development opportunities and face the series of technical problems.

The alcoholization of the cigar is taken as a key process technology for cigar production, so that new smoke smell and miscellaneous gas of cigar cigarettes can be removed to a great extent, the aromas of the parts of the cigar coat, the cigar sleeve and the cigar core are more harmonious and fused, the smoking taste of the cigar is further improved, and the cigar aroma is more uniform and mellow. However, the temperature and humidity at each position in the alcoholization chamber are difficult to keep consistent in the alcoholization process, and the air circulation is poor, so that the generated miscellaneous gas is difficult to discharge, which not only results in long alcoholization time, but also is difficult to achieve the ideal alcoholization effect.

Therefore, how to provide an environment with consistent temperature and humidity for the alcoholization process of the cigars, ensure the circulation of air and the timely discharge of foul smell, and improve the alcoholization effect of the cigars and the quality of products is a technical problem which needs to be solved urgently by research and development staff.

Disclosure of Invention

Aiming at the defects of the prior art, the invention provides the cigar fresh air circulation alcoholization chamber and the cigar fresh air circulation alcoholization method, provides more consistent temperature and humidity conditions for the alcoholization process of the cigar, ensures the circulation of fresh air and the timely discharge of foul smell, improves the alcoholization effect of the cigar and ensures the product quality.

In order to solve the technical problems, the invention adopts the following technical scheme:

in a first aspect, the present invention provides a cigar fresh air circulation alcoholization chamber, comprising:

an alcoholization frame, a constant temperature and humidity machine and an exhaust fan; the longitudinal section of the inner wall surface of the alcoholization chamber is in a wave shape; the alcoholization frame is stacked with a plurality of alcoholization boxes for containing cigars from bottom to top; an exhaust duct of the constant temperature and humidity machine is arranged at the top of the alcoholization chamber, an air outlet is formed in the side wall of the exhaust duct, a baffle plate is arranged on the air outlet, and the baffle plate is inclined downwards along the horizontal direction; the exhaust fan is arranged at the top of the alcoholization chamber and used for regularly pumping out air in the alcoholization chamber.

On the basis of the technical scheme, the exhaust pipelines are multiple and parallel to each other, and the distance between every two adjacent exhaust pipelines is 2 meters; a plurality of air outlets are arranged on the air exhaust pipeline at intervals, and the distance between every two adjacent air outlets is 1 m.

On the basis of the technical scheme, the water content of the dried cigar is 13-15%.

On the basis of the technical scheme, the temperature of the alcoholization chamber is set to be 19-23 ℃, and the relative humidity is set to be 60-70%.

On the basis of the technical scheme, the alcoholization period of the cigar is not less than two months.

Compared with the prior art, the invention has the beneficial effects that:

(1) according to the cigar fresh air circulation alcoholization chamber provided by the invention, the air outlet baffle plate arranged downwards is matched with the wave-shaped inner wall surface, so that the incoming air direction is changed, the circulation flow of fresh air in the alcoholization chamber is promoted, and the uniformity of the temperature and the humidity of each part in the alcoholization chamber is better ensured. The exhaust fan arranged in the alcoholization chamber can periodically extract miscellaneous gas generated in the alcoholization process, ensure the consistency of the alcoholization indoor environment, promote the alcoholization process of the cigars and improve the final quality of the cigars.

(2) In the alcoholization chamber, the number of the exhaust ducts and the air outlets of the constant temperature and humidity machine is increased, so that the exhaust ducts and the air outlets are uniformly distributed, and the uniformity of all the environments in the alcoholization chamber is kept. The cross section of the exhaust pipeline is of a structure with a wide upper part and a narrow lower part, the area of the air outlet can be increased, and the exhaust pipeline is matched with the baffle plate which is inclined downwards, so that fresh air can be sent out downwards.

(3) The cigar fresh air circulation alcoholization method provided by the invention can provide more consistent temperature and humidity conditions for the alcoholization process of cigars, ensure the circulation of fresh air and the timely discharge of turbidity, improve the alcoholization effect of cigars and ensure the product quality. Experimental data show that the cigars are alcoholized by the alcoholization method of the invention, and the same quality of the cigars alcoholized for 5-6 months by the conventional alcoholization method can be achieved after the alcoholization time is 3 months.

The technical solutions of the present invention will be described clearly and completely with reference to the following embodiments, and it should be understood that the described embodiments are only a part of the embodiments of the present invention, and not all of the embodiments. All other embodiments, which can be derived by a person skilled in the art from the embodiments given herein without making any creative effort, shall fall within the protection scope of the present invention.

Fig. 1 shows an alcoholization chamber of the prior art, which is provided with a plurality of alcoholization shelves stacked from bottom to top with a plurality of alcoholization boxes for holding cigars. The top of the alcoholization chamber is provided with an exhaust duct of a constant temperature and humidity machine, and the constant temperature and humidity machine is used for controlling the temperature and the humidity in the alcoholization chamber. Compared with the alcoholization chamber in the prior art shown in fig. 1, the alcoholization chamber provided by the present invention adjusts the direction of the outlet air by arranging the baffle plate at the outlet of the outlet air in a downward inclination manner, and then changes the outlet air into a reverse outlet air by utilizing the wave-shaped inner wall surface, so as to promote the circulation flow of the fresh air in the alcoholization chamber, and better ensure the uniform temperature and humidity of each part in the alcoholization chamber. In addition, the top of the alcoholization chamber is also provided with an exhaust fan for periodically pumping out miscellaneous gases generated in the alcoholization process, so that the consistency of the indoor environment of the alcoholization chamber is ensured, the alcoholization process of the cigars is promoted, and the final quality of the cigars is improved.

Preferably, the exhaust fan is a negative pressure type exhaust fan, which is more suitable for the application scene of the invention that the temperature needs to be reduced and a certain humidity needs to be kept. Compared with a common exhaust fan, the negative pressure type exhaust fan has better cooling and ventilating effects and is more beneficial to the circulation of indoor air alcoholization. The exhaust fan is set to be in a timing starting mode, and can be started at fixed time every day or once every few days according to air conditions in the alcoholization room and different alcoholization stages.

Further, the exhaust duct 21 of the constant temperature and humidity machine 2 is multi-channel and parallel to each other, the distance between the adjacent exhaust ducts 21 is 2 meters, each exhaust duct is provided with a plurality of air outlets 22, and the distance between the adjacent air outlets is 1 meter. The air outlet 22 may be provided on a single side of the exhaust duct 21, or the air outlets 22 may be provided on both side walls of the exhaust duct. The advantage of setting up like this is, through increasing the quantity of exhaust duct and air outlet, makes exhaust duct and air outlet evenly distributed, more is favorable to keeping the indoor uniformity of environment everywhere of alcoholization.

The cross section of the exhaust duct 21 is of a structure with a wide top and a narrow bottom, and the duct structure with the wide top and the narrow bottom is adopted, so that the area of an air outlet can be increased, and the exhaust duct is matched with a baffle plate which is inclined downwards, and is favorable for sending out the fresh air obliquely downwards. Preferably, the cross section of the exhaust duct may be an inverted isosceles triangle or an inverted isosceles trapezoid, and more preferably, the base angle of the isosceles triangle or the isosceles trapezoid is set to 45 °.

Further, the included angle between the baffle 23 of the air outlet 22 of the exhaust duct 21 and the horizontal direction is set to be 30-60 degrees, and more preferably, the included angle is set to be 45 degrees.

In the invention, the periphery of the alcoholization box 4 is provided with vent holes, which is convenient for the circulation of fresh air and the discharge of miscellaneous gases, and the alcoholization box 4 can be made of oak or cedar. Preferably, the material of the alcoholization box is cedar, and better heat preservation and moisture preservation effects can be provided for cigars.

Furthermore, as shown in fig. 2, the corner of the alcoholization chamber is in an inward concave arc shape, and is matched with the wave-shaped inner wall surface to change the direction of the incoming wind, thereby avoiding the occurrence of air supply dead angles and further promoting the air circulation in the alcoholization chamber. Preferably, 8 wall corners in the alcoholization chamber are all arranged in an inward concave arc shape.

The invention also provides a cigar fresh air circulation alcoholization method, which comprises the following steps: and (3) placing the dried cigars into an alcoholization box 4 of the cigar fresh air circulation alcoholization chamber, continuously opening the constant temperature and humidity machine 2 to supply air, and regularly opening the exhaust fan 3 to perform air extraction.

Wherein the moisture content of the dried cigar is 13-15%, preferably, the moisture content of the dried cigar is 14%. The temperature of the alcoholization chamber is set to be 19-23 ℃, the relative humidity is set to be 60-70%, preferably, the temperature of the alcoholization chamber is set to be 20-21 ℃, and the relative humidity is set to be 62-68%. More preferably, the temperature in the alcoholization chamber is set at 21 ℃ and the relative humidity is set at 65%.

The alcoholization method of the invention ensures the uniformity of the environment by controlling the temperature and the humidity in the alcoholization chamber, realizes the circulation flow of fresh air and the timely discharge of foul smell, promotes the alcoholization effect of the cigars and effectively shortens the time required by the alcoholization process. Generally, the longer the alcoholization period of the cigar, the better the alcoholization effect. The invention sets the alcoholization period of the cigars to be not less than 2 months, preferably sets the alcoholization period of the cigars to be 3 months, which is more beneficial to the actual production operation and can ensure the final quality of the product.

Further, according to the environment in the alcoholization chamber and different stages of alcoholization, the exhaust fan is started in a certain time period, and the single air draft time is set to be 0.5-2 h. Preferably, the exhaust fan is started at a fixed time every day, and the single air exhaust time is 0.5 h. More preferably, the constant temperature and humidity machine is kept in an open state while the exhaust fan is opened. The exhaust fan and the constant temperature and humidity machine are simultaneously started, so that a better circulation effect can be obtained, and the consistency of the temperature and the humidity of each position of the alcoholization environment can be maintained.

Experimental group

The rolled cigars are dried and balanced, and then are uniform in moisture content, and the moisture content is controlled to be (14 +/-1)%; the cigars are contained in an alcoholization box made of cedar wood and provided with gaps at the periphery, and are placed in an alcoholization chamber for alcoholization.

The longitudinal sections of the wall surfaces around the alcoholization chamber are wave-shaped, and the eight wall corners in the alcoholization chamber are arc-shaped inwards concave. An exhaust fan and an exhaust pipeline of the constant temperature and humidity machine are arranged at the top of the alcoholization chamber, the constant temperature and humidity machine is continuously started to supply air, the temperature in the alcoholization chamber is set to be 21 ℃, and the relative humidity is set to be 65%; the exhaust fan is started at a fixed time every day, and the air exhaust time is 30 min. The multichannel exhaust pipe of constant temperature and humidity machine is parallel to each other, and adjacent pipeline interval is 2 meters, and every exhaust pipe's lateral wall interval is provided with a plurality of air outlets, and the distance of adjacent air outlet is 1 meter. The cross section of the exhaust pipeline is in an inverted isosceles trapezoid shape with a bottom angle of 45 degrees, a baffle is arranged at the air outlet and inclines downwards along the horizontal direction, and the included angle between the baffle and the horizontal direction is 45 degrees.

Control group

After being dried and balanced, the rolled cigars in the same batch as the experimental group have uniform water content, and the water content is controlled to be (14 +/-1)%; the cigars were filled in an alcoholization box made of oak and placed in an alcoholization chamber shown in fig. 1 for alcoholization. And starting a constant temperature and humidity machine in the alcoholization chamber, and setting the temperature in the alcoholization chamber to be 21 ℃ and the relative humidity to be 65%.

Analysis of results

According to the 4 th part of sensory technical requirements of the GB15269.4-2011 cigars, cigar sensory quality grading (in percentage) is respectively carried out on the cigars alcoholized by the experimental group and the control group, and the grading items comprise color, aroma, miscellaneous gas, irritation, aftertaste and gray level. In addition, the test items include the average water content rate and the standard deviation of water content (the test is carried out by an oven method, and the test number is 10). The sensory quality evaluation was performed on two groups of cigars in months, and the scoring results are shown in table 1 below.

It can be seen from the above table that the standard deviation of the moisture content of the cigar sample alcoholized by the cigar fresh air circulation alcoholization method provided by the present invention gradually becomes smaller with the prolonging of alcoholization time, and is obviously lower than that of the control group which adopts the conventional alcoholization method at the same time. This shows that the alcoholization method provided by the present invention can provide a more stable and consistent alcoholization environment for cigars and can reduce the quality difference between different products in the same batch.

The evaluation results of fragrance, offensive odor, irritation and aftertaste showed that the evaluation results of the experimental group of the present invention were higher than those of the control group at each test period. The alcoholization method provided by the invention can obviously improve the alcoholization effect of the cigars and improve the product quality. Experimental data show that the cigars alcoholized for 3 months by the alcoholization method can reach the same quality as cigars alcoholized for 5-6 months by the conventional alcoholization method.
