1. A method of preparing a collagen fiber chewing gum, comprising: the method comprises the following steps:

(1) mixing the collagen fibers with auxiliary materials;

(2) combing the mixed collagen clusters with a filter to obtain fibers, and then storing the fibers in a refrigeration house;

Technical Field

Background

In the production of collagen casings, large amounts of collagen dough are used. The collagen clusters can produce some unqualified products in the production process, and the collagen clusters which are not beneficial to producing the collagen casing can be used for producing other byproducts. The collagen cluster contains collagen fibers, which have strong water absorption and toughness and are soft.

At present, most of chewing gum is made of natural gum or glycerin resin as gum base, syrup, mint, sweetener and the like are added for blending and pressing, and the chewing gum is chewed in the mouth. CN105580968A discloses a chewing gum containing collagen peptides, but the gum base is still a natural gum or a synthetic resin, and said collagen peptides are not said collagen fibers.

Disclosure of Invention

The technical problem to be solved by the invention is as follows: the preparation method of the collagen fiber chewing gum overcomes the defects of the prior art, has scientific and reasonable design and simple and easy operation, fully expands the application of the collagen fiber, and the prepared collagen fiber chewing gum has strong chewing feeling, can be swallowed and is easy to clean.

The preparation method of the collagen fiber chewing gum comprises the following steps:

(1) mixing the collagen fibers with auxiliary materials;

(2) combing the mixed collagen clusters with a filter to obtain fibers, and then storing the fibers in a refrigeration house;

(3) pressing the refrigerated collagen clusters obtained in the step (2) into a collagen sheet;

(4) placing the collagen sheet in a neutralizing solution for neutralization, and then drying to form a film on the surface without drying the edge, thereby preparing the collagen fiber chewing gum;

the auxiliary materials comprise polysaccharide colloid and TG enzyme.

The preparation method of the collagen fiber (similar to the previous process steps for preparing the collagen casing) comprises the following steps:

Preferably, in step (4), neutralization is carried out in a neutralization solution for 2 to 4 seconds.

Preferably, in the step (4), the neutralization solution contains 1-3 wt% of baking soda and 12-18 wt% of glycerol solution.

Preferably, in step (4), drying is carried out at 35-45 ℃ for 5-15 minutes.

The auxiliary materials also comprise a sweetening agent, peppermint oil, an emulsifying agent, potassium sorbate and the like.

The collagen fiber chewing gum prepared by the invention has the water content of 88-89% by mass and the pH value of 5-6.

Pure collagen fibers are difficult to be mixed and kneaded into a uniform state, the polysaccharide colloid is added, so that collagen clusters can be better fused together, and the polysaccharide colloid also has good film forming property and is convenient for later-stage molding and fixing; the TG enzyme added in the invention can enable collagen molecules to be cross-linked with each other and intra-molecule to increase the strength and stability of the collagen.

In the preparation process, the temperature is high, and the collagen is easy to deform and sticky, so that the collagen clusters after the fibers are combed are stored in a refrigeration house; since the collagen has a pH of 2 to 3, the collagen sheet is neutralized by being placed in a neutralizing solution, specifically, sodium bicarbonate, and glycerin is soaked for the purpose of moisturizing and reducing the stickiness of the collagen dough surface.

Compared with the prior art, the invention has the following beneficial effects:

(1) the preparation method of the collagen fiber chewing gum has scientific and reasonable design and simple and easy operation, and fully expands the application of the collagen fiber;

(2) the collagen-based chewing gum prepared by the invention has elasticity in fresh mouth, particularly strong chewing feeling and no tooth sticking; with the prolonging of chewing time, the temperature in the oral cavity can lead the collagen fiber to have certain decomposability and have a slightly soft feeling;

(3) the collagen-based chewing gum prepared by the invention can be swallowed and also can be spitted, the collagen can be decomposed and absorbed in vivo as a nutrient substance after being swallowed, and the collagen can be easily cleaned even if being spitted out, and has poor adhesion with the ground.

Detailed Description

The present invention is further illustrated by the following examples.

Example 1

A method of preparing a collagen fiber chewing gum comprising the steps of:

cutting the cattle second-layer leather into small blocks of 15 cm, adding lime water accounting for 20% of the weight of the leather into the small blocks, wrapping ash in the lime water to pickle the leather for 20 days (primary alkali expansion of collagen fibers), washing the ash, and then adding hydrochloric acid to acidify the leather (continuous acid expansion of the collagen fibers), wherein the pH value of the acid liquid is 1.0 until the acidification is complete. Then washing to remove the fibrous interstitium. And rolling into sheets by a defibrator to obtain the collagen fibers. The collagen fiber water content is 81%.

Mixing the obtained collagen fiber with adjuvants, kneading to obtain collagen cluster, mixing CMC, sweetener, TG enzyme, glyceryl stearate and potassium sorbate in water, and mixing with collagen fiber. The collagen fiber is firstly added into the mixing and kneading machine, and the auxiliary materials are sprayed into the collagen fiber in the mixing and kneading process in a spraying mode.

Every 2500kg of collagen cluster contains 2000kg of collagen fiber, 200kg of water and 300kg of mixed auxiliary materials. The adjuvant comprises CMC 1.5kg, sweetener 30kg, TG enzyme 7.5kg, glyceryl stearate 0.9kg, and potassium sorbate 2.5 g.

Carding the mixed collagen clusters through a filter to obtain fibers, wherein the filtering pressure is 8MPa, and storing the fibers in a refrigerator at 6 ℃; the refrigerated collagen pellet was compressed into a collagen sheet having a thickness of 1 mm.

And (3) placing the collagen sheet in a neutralizing solution for neutralizing for 2 seconds, wherein the neutralizing solution contains 1 wt% of baking soda and 12 wt% of glycerol solution, and then drying at 35-45 ℃ for 15 minutes to form a film on the surface without drying the edges, so that the collagen fiber chewing gum is prepared.

The prepared collagen fiber chewing gum has smooth appearance surface, uniform color, 88 mass percent of water and 5 pH.

Example 2

A method of preparing a collagen fiber chewing gum comprising the steps of:

cutting the cattle second-layer leather into small blocks of 15 cm, adding lime water accounting for 20% of the weight of the leather into the small blocks, wrapping ash in the lime water to pickle the leather for 20 days (primary alkali expansion of collagen fibers), washing the ash, and then adding hydrochloric acid to acidify the leather (continuous acid expansion of the collagen fibers), wherein the pH value of the acid liquid is 1.0 until the acidification is complete. Carding the mixed collagen clusters through a filter to obtain fibers, wherein the filtering pressure is 10MPa, and storing the fibers in a refrigerator at the temperature of 8 ℃; the refrigerated collagen pellet was compressed into a collagen sheet having a thickness of 2 mm.

And (3) placing the collagen sheet in a neutralizing solution for neutralization for 3 seconds, wherein the neutralizing solution contains 2 wt% of baking soda and 15 wt% of glycerol solution, and then drying at 45 ℃ for 5 minutes to form a film on the surface without drying the edges, so that the collagen fiber chewing gum is prepared.

The prepared collagen fiber chewing gum has smooth appearance surface, uniform color, 89% of water mass content and 6 of pH.

Example 3

A method of preparing a collagen fiber chewing gum comprising the steps of:

cutting the cattle second-layer leather into small blocks of 15 cm, adding lime water accounting for 20% of the weight of the leather into the small blocks, wrapping ash in the lime water to pickle the leather for 20 days (primary alkali expansion of collagen fibers), washing the ash, and then adding hydrochloric acid to acidify the leather (continuous acid expansion of the collagen fibers), wherein the pH value of the acid liquid is 1.0 until the acidification is complete. Then washing to remove the fibrous interstitium. And rolling into sheets by a defibrator to obtain the collagen fibers. The collagen fiber has 85% of water.

Every 2500kg of collagen cluster contains about 2000kg of collagen fiber, 200kg of water and 300kg of mixed auxiliary materials. The auxiliary materials comprise 2.0kg of CMC, 25kg of peppermint oil, 8.0kg of TG enzyme, 0.9kg of glyceryl stearate and 2.5g of potassium sorbate.

Carding the mixed collagen clusters into fibers by a filter under the filtering pressure of 12MPa, and storing in a cold storage at 10 ℃; the refrigerated collagen pellet was compressed into a collagen sheet having a thickness of 2 mm.

And (3) placing the collagen sheet in a neutralizing solution for neutralization for 4 seconds, wherein the neutralizing solution contains 3 wt% of baking soda and 18 wt% of glycerol solution, and then drying at 40 ℃ for 10 minutes to form a film on the surface without drying the edges, so that the collagen fiber chewing gum is prepared.

The prepared collagen fiber chewing gum has smooth appearance surface, uniform color, 88 mass percent of water and 5 pH.

Comparative example 1

The other process parameters and steps are the same as in example 1, except that:

no polysaccharide colloid was added in this comparative example.

The final chewing gum is loose in structure and not easy to form.

Comparative example 2

The other process parameters and steps are the same as in example 1, except that:

no TG enzyme was added to this comparative example.

The final prepared chewing gum had a slightly less chewy feel.

Comparative example 3

The other process parameters and steps are the same as in example 1, except that:

during neutralization, no glycerol was added.

The final chewing gum is sticky and adheres to the packaging paper.

The chewing gum made by the example has smooth appearance and uniform color.
