Use of a disinfectant according to claim 1 for disinfecting cutting boards, comprising the steps of: firstly, cleaning a chopping board for 2-3 times by using a cleaning brush, and then flushing the chopping board by running water; secondly, diluting the disinfectant by 1 to 1.5 times by adding water, and uniformly stirring to obtain the disinfectant; and thirdly, covering the water-absorbing cloth with disinfectant, covering the water-absorbing cloth on the surface of the chopping board for 10-15 minutes for disinfection, and finally flushing the surface of the chopping board with running water for 30-60 seconds to finish the disinfection of the surface of the chopping board.

Technical Field

The invention relates to the technical field of preparation of food-grade disinfectants, in particular to a special disinfectant for chopping boards and a preparation method and application thereof.

Background

Most of the household chopping boards are made of wood materials, and gaps and pits are difficult to avoid. After the chopping board is used, some food residues and juice are inevitably left on the chopping board, and the environment of a kitchen is high in temperature and humidity, so that the chopping board naturally becomes a 'hotbed' for bacterial growth.

step 1, weighing the components in parts by weight;

step 2, mixing and grinding ginger and dried orange peel, adding water which is 3 times of the total weight of the mixture after grinding, distilling and concentrating until the water content is 20%, and filtering to obtain filtrate; repeatedly distilling and concentrating for 2 times, and mixing filtrates to obtain extractive solution A;

step 3, adding 1 time of water by weight into the honeysuckle, distilling and concentrating until the water content is 15%, and filtering to obtain an extracting solution of the honeysuckle;

Before the chopping board is disinfected, the surface of the chopping board is subjected to microbial colony culture, and escherichia coli and staphylococcus aureus are mainly cultured.

After the disinfection and sterilization treatment, the culture is carried out under the same parameters, the number of escherichia coli and staphylococcus aureus is reduced sharply, and the sterilization rate is as high as more than 99.6%.

And (3) detecting the washed water, wherein the silver content in the water is extremely low and can be ignored.

Example 2

A special disinfectant for chopping boards comprises the following components in parts by weight: 10 parts of ginger, 15 parts of dried orange peel, 26 parts of honeysuckle, 2 parts of citric acid, 4 parts of allicin, 14 parts of glycerol, 6 parts of sodium chloride, 0.5 part of nano silver with the particle size of 25 mu m, 0.3 part of citral volatile oil, 2 parts of sodium carbonate and 0.01 part of food-grade chitosan.

step 1, weighing the components in parts by weight;

step 2, mixing and grinding ginger and dried orange peel, adding water which is 3-5 times of the total weight of the mixture after grinding, distilling and concentrating until the water content is 25%, and filtering to obtain filtrate; repeatedly distilling and concentrating for 2 times, and mixing filtrates to obtain extractive solution A;

The application of the disinfectant in the disinfection of the chopping board comprises the following steps:

firstly, cleaning a chopping board for 2-3 times by using a cleaning brush, and then flushing the chopping board by running water;

secondly, diluting the disinfectant by 1 to 1.5 times by adding water, and uniformly stirring to obtain the disinfectant;

and thirdly, covering the water-absorbing cloth with disinfectant, covering the water-absorbing cloth on the surface of the chopping board for 15 minutes for disinfection, and finally flushing the surface of the chopping board with running water for 45 seconds to finish the disinfection of the surface of the chopping board.

Before the chopping board is disinfected, the surface of the chopping board is subjected to microbial colony culture, and escherichia coli and staphylococcus aureus are mainly cultured.

After the disinfection and sterilization treatment, the culture is carried out under the same parameters, the number of escherichia coli and staphylococcus aureus is reduced sharply, and the sterilization rate is as high as more than 99.8%.

and 4, mixing the honeysuckle extract and the extract A in equal volume, adding citric acid, allicin, glycerol, sodium chloride, nano-silver, citral volatile oil, sodium carbonate and food-grade chitosan, stirring for 10 minutes, and spray-drying to obtain the disinfectant.

The application of the disinfectant in the disinfection of the chopping board comprises the following steps:

firstly, cleaning a chopping board for 3 times by using a cleaning brush, and then washing the chopping board clean by running water;

secondly, diluting the disinfectant by 1.5 times by adding water, and uniformly stirring to obtain the disinfectant;

and thirdly, covering the water-absorbing cloth with disinfectant, covering the water-absorbing cloth on the surface of the chopping board for 15 minutes for disinfection, and finally flushing the surface of the chopping board with running water for 60 seconds to finish the disinfection of the surface of the chopping board.

Comparative example 1

The same method as in example 2 was followed except that ginger, dried orange peel, honeysuckle and allicin were not included, and the bactericidal rate against escherichia coli was 78.8% and the bactericidal rate against staphylococcus aureus was 71.2%.

Comparative example 2

Except that the nano-silver and the food-grade chitosan are not contained, the sterilization rate of the escherichia coli is 72.8%, and the sterilization rate of the staphylococcus aureus is 64.1% by the same method as the detection of the example 2.
