1. A method for manufacturing a spread type processed food for using duck liver and chicken breast, comprising:

(a) washing a duck liver with flowing water to remove secretions;

(b) dicing the duck liver into uniform size;

(c) seasoning the diced duck liver with a marinade salt prepared by mixing 5g of garlic with 20ml of korean liquor "shochu" for 50 to 80 minutes to primarily remove liver odor;

(d) vacuum packaging the raw chicken breast and cooking it in a vacuum low temperature mode at 50 ℃ to 80 ℃ for 20 minutes to 50 minutes;

(e) washing the pickled duck liver with clear water, pouring 50ml of distilled liquor into the pickled duck liver, and then cooking the duck liver at the temperature of 78-110 ℃ for 5-10 minutes by using a Flambee method to remove liver odor for the second time; and

(f) introducing into a blender 9 to 14 wt.% of said Flambee process cooked duck liver, 38 to 50 wt.% of said sous vided chicken breast, 10 to 14 wt.% butter, 17 to 23 wt.% whipped cream, 1.3 to 1.6 wt.% brandy, 5 to 7 wt.% tapioca, and additives and purified water, and then finely grinding the mixture to make a spread-type processed food,

wherein, further include: injecting a liver odor removing solution into the duck liver by a syringe between the steps (a) and (b), the liver odor removing solution being prepared by mixing 20ml of distilled liquor, 5g of minced garlic and 10ml of citron solution, steaming the duck liver with medium fire in a steamer for 1 to 2 minutes, boiling only the surface of the duck liver while preventing the liver odor removing solution from overflowing from the duck liver, and then rotating the duck liver at a rotation speed of 100 to 300RPM for 1 to 2 minutes to allow the liver odor removing solution injected into the duck liver to uniformly penetrate into the inside of the duck liver.

2. A processed food produced by the method for producing a spread-type processed food for use of fatty liver and chicken breast according to claim 1.

The invention relates to a smearing type processed food using fat liver (duck liver, goose liver) and chicken breast, its components and its preparation method; more particularly, it relates to a spread type processed food using fatty liver and chicken breast, which is manufactured in a spread form such as butter or jam using fatty liver and chicken breast, can be simply spread on a preferred food such as bread and is easily eaten, in which the fishy smell and peculiar smell (odor) of fatty liver are effectively removed to allow people of all ages and sexes to easily eat without rejection, is rich in protein, and contains multivitamins to promote brain development of growing children and prevent various diseases, thereby intending to promote public health, and its ingredients and a manufacturing method thereof.

Background

Typically, fat liver (foie gras) is french language, refers to the liver of ducks or geese, and is known as one of three delicacies in the world. Various dishes and processed foods containing fat liver as a main raw material have been introduced into europe including france due to their buttery soft mouthfeel and excellent flavor.

Duck liver is generally used as a fat liver in terms of price, contains amino acids and abundant proteins as catalytic materials for various chemical reactions in cells, thus being intended to promote health, and contains vitamins A, E and the like to enhance resistance to diseases and reduce harmful L D L cholesterol level, while increasing beneficial HD L cholesterol level, thus preventing cardiovascular diseases, further, it contains a large amount of iron and manganese, so that nutritional anemia can be prevented, while reducing resistance to diseases, fatigue, headache, and the like, and also provides calcium and manganese necessary for growing children to strengthen bones, thus enabling the formation of stable bone structures.

Therefore, various advanced catena recipes including fat liver have been developed due to their efficacy and flavor, and fat liver itself has been known as one of the three world gourmets together with caviar and truffle. However, despite various developed recipes, since it is difficult to effectively remove the fishy smell and the offensive odor of duck liver, the fatty liver has a limitation in being applied to various processed foods as favorite foods for children and general dishes.

Therefore, methods for removing the bad smell or odor of the liver by adding perfume to the liver have been proposed, for example, in korean patent laid-open publication No. 10-2009-0114804, korean patent laid-open publication No. 10-2002-0053210, korean patent registration No. 10-1334087, and the like. In particular, korean patent registration No. 10-1334087 discloses a method for removing fishy smell or odor of duck liver by introducing herbs, such as Angelica gigas NAKAI, hawthorn, schizandra chinensis (maxiwicziacensis), etc., into duck liver, instead of these spices.

However, the methods proposed in Korean patent laid-open publication No. 10-2009-0114804, Korean patent laid-open publication No. 10-2002-0053210, and Korean patent registration No. 10-1334087 are all simple methods of mixing a piece of duck liver with herbs or spices to remove fishy smell and offensive odor, which involves a problem in that the unique aroma of the spices and/or herbs may not deeply permeate into the duck liver but exists only on the outer surface of the duck liver after cooking.

Therefore, the processed food produced by the conventional manufacturing method has the following problems: wherein, the fishy smell and the stink hidden in the duck liver can appear when the duck liver is chewed to cause discomfort and rejection, thereby reducing the texture or the mouthfeel of the food; in particular, children and women who are very sensitive to smell may be repelled by the fishy smell and smell of this liver, thereby limiting the application of fatty liver in spread forms such as butter or jam, which is spread on bread and eaten together with bread, to any processed food.

Therefore, in view of the above-mentioned problems of the prior art, it is an object of the present invention to provide a spread-type processed food using fat liver and chicken breast, which is capable of: help the brain development, growth and development of the growing child; prevention of various diseases by immune enhancement to plan promotion of public health; effectively removing fishy smell and peculiar smell (stink) of the fatty liver; processed food in the form of spread such as butter or jam, which can be simply applied to preferred bread (sandwich) for children and is easy to eat so that people of all ages and sexes can eat without rejection, and its ingredients and a method for manufacturing the same are provided.

Means for solving the problems

In order to achieve the above object, the present invention provides an ingredient for spread type processed food using fat liver and chicken breast, comprising: 9 to 14 weight percent ("wt.%") of duck liver, 38 to 50 wt.% of chicken breast, 10 to 14 wt.% of butter, 17 to 23 wt.% of whipped cream, 1.3 to 1.6 wt.% of brandy, and 5 to 7 wt.% of tapioca, the remainder comprising additives and purified water.

In addition, 1.4 wt.% to 1.6 wt.% of cut or ground ginseng or 7 wt.% to 9 wt.% of honey may be further included.

Further, the additive may comprise, for example, 0.8 to 1.0 wt.% sugar, 0.8 to 1.0 wt.% salt, 0.2 to 0.4 wt.% pepper, 0.17 to 0.18 wt.% phosphate, and 0.01 to 0.03 wt.% antioxidant.

Further, the present invention provides a method for manufacturing a spread-type processed food for use with fat liver and chicken breast, comprising: (a) washing a duck liver with flowing water to remove secretions; (b) dicing the duck liver to form uniform size; (c) seasoning the diced duck liver with a marinade salt prepared by mixing 5g of garlic with 20ml of korean liquor "shochu (soju)" for 50 to 80 minutes to primarily remove liver odor; (d) vacuum packaging the raw chicken breast and cooking it in a low temperature vacuum mode (sous vide mode) at 50 ℃ to 80 ℃ for 20 minutes to 50 minutes; (e) washing the pickled duck liver with clear water, pouring 50ml distilled liquor into the pickled duck liver, and cooking the duck liver at 78-110 deg.C or higher for 5-10 min by using Flambee method to remove liver odor for the second time; and (f) introducing into the mixer 9 to 14 wt.% of cambe-cooked duck liver, 38 to 50 wt.% of sous vided chicken breast, 10 to 14 wt.% of butter, 17 to 23 wt.% of whipped cream, 1.3 to 1.6 wt.% of brandy, 5 to 7 wt.% of tapioca, and additives and purified water, and then finely grinding the mixture to produce a spread-type processed food.

In addition, between steps (a) and (b), the manufacturing method may further include: injecting a liver odor removing solution into duck liver by a syringe, the liver odor removing solution being prepared by mixing 20ml of distilled liquor, 5g of minced garlic and 10ml of citron solution, steaming the duck liver with medium fire in a steamer for 1 to 2 minutes, boiling only the surface of the duck liver while preventing the liver odor removing solution from overflowing from the duck liver, and then rotating the duck liver at a rotation speed of 100 to 300RPM for 1 to 2 minutes, so that the liver odor removing solution injected into the duck liver uniformly permeates into the inside of the duck liver.

Further, the present invention provides a processed food produced by a manufacturing method for a spread-type processed food using fatty liver and chicken breast.

Advantageous effects

As described above, the present invention relates to a manufacturing method for a processed food including fatty liver and chicken breast in the form of spread such as butter or jam, which can be spread on a preferred food, i.e., bread (sandwich), and is easy to eat, comprising dicing a fatty liver into a uniform size and then salt-seasoning and cooking it to effectively remove fishy smell and unpleasant taste (odor) of fatty liver so that people of all ages and sexes can easily eat without rejection, the processed food being rich in protein and containing multivitamins to promote brain development of growing children and prevent various diseases, thereby planning promotion of public health.

Detailed Description

The processed food according to the present invention may include fatty liver and chicken breast as main raw materials, and may further include butter, whipped cream, brandy, tapioca and additives other than the main raw materials. As used herein, fat liver is the liver of a duck and additives may include sugar, salt, pepper, phosphate and antioxidants.

In addition, the processed food of the present invention may further include raw ginseng in order to double the flavor.

In addition, the processed food of the present invention may include honey in place of sugar in the additive.

The duck liver may be present in an amount of 9 wt.% to 14 wt.%, preferably 11 wt.% to 13 wt.%. If the duck liver content is less than 9 wt.%, the food texture (spreadability) and overall preference are reduced due to the greater content of chicken breast relative to duck liver. Meanwhile, if the content thereof exceeds 14 wt.%, since the content of duck liver is large relative to chicken breast, the liver odor removing step for removing fishy smell and peculiar smell of duck liver becomes complicated and long during the manufacturing process of the processed food, thereby taking longer cooking time and reducing the overall preference.

The content of chicken breast may be 38 wt.% to 50 wt.%, preferably 41 wt.% to 46 wt.%. If the amount of chicken breast is less than 38 wt.%, the liver odor removal step for removing the fishy and offensive odors of duck liver becomes complicated and long due to the large amount of duck liver relative to chicken breast, thereby taking longer cooking time while reducing the overall preference. Meanwhile, if the content thereof exceeds 50 wt.%, the texture of the food is dry and brittle and the overall preference is reduced because the content of chicken breast is large relative to duck liver.

Butter and whipped cream were added to make it soft in texture. Furthermore, the butter may be present in an amount of 10 to 14 wt.%, preferably 11 to 13 wt.%, and the whipped cream may be present in an amount of 17 to 23 wt.%, and preferably 19 to 22 wt.%. If the content of butter is less than 10 wt.%, the texture and overall preference of the food is reduced. Meanwhile, if the content thereof exceeds 14 wt.%, the overall preference is reduced due to greasy taste. Further, if the content of whipped cream is less than 17 wt.%, the texture and general preference of the food are reduced. Meanwhile, if the content thereof exceeds 23 wt.%, there is a strong greasy taste similar to the case of butter, thereby reducing the overall preference.

The brandy is used for removing fishy smell and unpleasant smell of duck liver and imparting flavor, and can be contained in an amount of 1.3 wt.% to 1.6 wt.%. Further, the tapioca flour added herein contains a high amount of vitamin C to aid iron absorption and is rich in dietary fiber to aid digestion and soften the texture of the food, which may be present in an amount of 5 wt.% to 7 wt.%.

As an additive, the content of the added sugar and salt may be 0.8 wt.% to 1.0 wt.%, respectively. The content of black pepper powder may be 0.2 wt.% to 0.4 wt.%. Phosphates and antioxidants are additives used to inhibit microbial growth and prevent oxidation. The phosphate may be present in an amount of 0.17 wt.% to 0.18 wt.%, and the antioxidant may be present in an amount of 0.01 wt.% to 0.03 wt.%.

The raw ginseng is used in a state of being cut and ground, and its content may be 1.4 wt.% to 1.6 wt.%.

When honey is used in place of sugar in the additive, the honey may be present in an amount of 7 to 9 wt.%.

Hereinafter, a manufacturing method for processing food according to an embodiment of the present invention will be described with reference to fig. 1.

Fig. 1 is a flowchart illustrating a procedure of a manufacturing method of a spread-type processed food using a fat liver and chicken breast according to an embodiment of the present invention. As shown in fig. 1, a manufacturing method for processing food according to an embodiment of the present invention may include: a cleaning step (ST1), a salt seasoning step (ST2), a pretreatment step (ST3), a cooking step (ST4), a mixing and grinding step (ST5), and a filtering and cooling step (ST 6).

Cleaning step (ST1)

In this case, it is preferable to perform the dicing process to make about 1cm × 1cm in size so that the marinade can uniformly penetrate into the duck liver in the subsequent preliminary liver odor removal step, thereby removing the fishy smell and odor of the duck liver.

Meanwhile, before the duck liver is diced to have a uniform size, a liver odor removing solution prepared by mixing Korean wine (i.e., "shochu"), garlic powder and citron liquid is injected into the duck liver through a syringe to maximize the liver odor removing effect. Then, the duck liver containing the liver odor removing solution was placed on a steamer, steamed with medium fire for 1 to 2 minutes, and then rotated by a rotating device (not shown) for 1 to 2 minutes, so that the injected liver odor removing solution uniformly penetrated into the inside of the duck liver.

In this case, the duck liver was steamed in a steamer, and only the surface of the duck liver was boiled while preventing the liver odor removing solution from overflowing from the duck liver. Further, the duck liver was rotated at a low speed to keep the duck liver in a semi-cooked state without rupture. For example, the rotation may be performed at 100RPM to 300 RPM. Further, the rotating means may be, for example, a mixer without blades.

Salt seasoning step (ST2)

Primarily removing liver odor by treating duck liver diced to form a predetermined size with a mixture of distilled liquor and minced garlic as a marinade to remove fishy and offensive odors of the duck liver. Herein, the preliminary liver odor removal step may include dicing the duck liver into a uniform size and removing the liver odor with the marinade. Therefore, compared with a whole duck liver, the marinade can uniformly permeate into the duck liver to effectively remove the fishy smell and peculiar smell of the duck liver.

Preprocessing step (ST3)

One of the main raw materials, i.e., chicken breast, is vacuum-packaged and cooked at a constant temperature for a predetermined time under vacuum at a low temperature. In this case, the sous-vide cooking is performed so that the chicken breast has a soft texture that can be smeared. The salted duck liver was then washed in running clear water.

Cooking steps (ST4)

The pickled duck liver is cooked to remove liver odor for a second time. In this case, the secondary liver odor removing step may include cooking the duck liver with a predetermined amount of 50ml distilled liquor in a Flambee method to prevent the diced duck liver from being cracked. The Flambee cooking method may be performed in a method of cooking duck liver by heating shochu to remove liver smell by volatilization together with alcohol.

Mixing and grinding step (ST5)

The chicken breast and duck liver cooked in vacuum and at low temperature are put into a mixer together with butter, whipped cream, brandy, tapioca and additives, and then finely ground. Herein, the additives may include sugar, salt, pepper, phosphate and antioxidant. Further, raw ginseng may be finely ground and added to the above-mentioned blender. In addition, honey may be used instead of sugar.

Butter and whipped cream were added to soften the texture. In addition, phosphates and antioxidants may be added to inhibit microbial growth while preventing oxidation. Further, brandy may be added to remove the fishy smell and odor of duck liver. In addition, tapioca flour contains high levels of vitamin C to aid iron absorption, and is rich in dietary fiber to aid digestion and soften the texture of the food.

Filtration and Cooling step (ST6)

The mixed food is filtered through a sieve and put into a container, and then refrigerated at a predetermined temperature.
