1. Food fermentation apparatus, characterized in that it comprises:

Technical Field

The invention relates to the field of fermentation equipment. More particularly, the present invention relates to a food fermentation apparatus and method.

Background

Fermentation refers to a process of preparing a microbial cell itself, or a direct metabolite or a secondary metabolite by the life activity of a microorganism under aerobic or anaerobic conditions, and is sometimes referred to as fermentation, and the definition of fermentation is different according to different occasions.

In traditional food fermentation process, all utilize the fermentation cylinder to put into the material, it waits for the fermentation completion to seal the storage again, in fermentation process, because the temperature in the fermentation chamber is inhomogeneous, peripheral temperature often is less than central temperature (jar wall heat conduction effect), upper portion temperature often is higher than lower part temperature (heat accumulation), consequently some fermentation cylinders still have stirring function, if utilize the internal paddle of jar external motor drive jar to stir the material, but this kind of stirring often can only stir the material at jar body middle part, it is limited to the material influence that is close to jar wall, the effect of mixing of upper portion material and lower part material is limited simultaneously.

Disclosure of Invention

An object of the present invention is to solve at least the above problems and to provide at least the advantages described later.

Still another object of the present invention is to provide a food fermentation apparatus and method, which can stir the materials in the fermentation tank in all directions, so that the fermentation degree of the materials in the tank is more uniform.

To achieve these objects and other advantages in accordance with the present invention, there is provided a food fermentation apparatus, comprising:

the outer tank body is vertically arranged, a first through hole is formed in the center of the top of the outer tank body, a second through hole is formed in the center of the bottom of the outer tank body, and a plurality of supporting legs are further arranged at the bottom of the outer tank body;

the inner tank body is coaxially and vertically arranged in the outer tank body, a feed inlet is formed in the center of the top of the inner tank body, a feed pipe is connected outside the feed inlet, the feed pipe upwards penetrates through the first through hole, an upper port of the feed pipe is hinged with a sealing cover, a discharge port is formed in the center of the bottom of the inner tank body, a discharge pipe is connected outside the discharge port, the discharge pipe downwards penetrates through the second through hole, and a lower port of the discharge pipe is connected with a valve;

The invention also provides a method for fermenting food by using the food fermentation equipment.

The invention at least comprises the following beneficial effects: the inner tank body can be driven to rotate through the motor, so that materials in the tank body are driven to integrally rotate and stir, and compared with the traditional mode that blades extend into the tank body for stirring, the stirring device can better mix and exchange positions between the materials at the periphery of the fermentation tank and the materials at the middle part, so that the temperature in the tank body is uniform, and the fermentation effect is uniform. Simultaneously, because the rotation of the inner tank body can also drive the spherical counterweight to rotate, and then the rotating sleeve slowly rises around the screw rod, so that the upper material and the lower material in the fermentation tank can be stirred. In the use process of the embodiment, the pressure relief hole 20, the circular baffle 22 and other parts are arranged, so that when the air pressure in the tank body is too high, the high-pressure air in the tank can automatically open the circular baffle 22 to relieve the pressure, and the safety of the fermentation process is ensured.

In another embodiment, an annular bottom sealing plate 26 is coaxially connected in the shaft barrel 9, the bottom sealing plate 26 is coplanar with the bottom plate of the outer tank body 1, the inner diameter of the bottom sealing plate 26 is the same as the outer diameter of the discharge pipe 6, and the discharge pipe 6 penetrates through the central hole of the bottom sealing plate 26, so that the heat in the tank can be further prevented from dissipating from the wall plate of the inner tank body 3 in the shaft barrel 9, and the temperature difference in the inner tank body 3 is reduced.
