The aim of the invention is achieved by the following measures: the dumpling wrapper former comprises a die cylinder for punching and cutting dumpling wrappers, wherein a pressing plate capable of contacting with the dumpling wrappers is arranged at the bottom in the die cylinder, and a compression device for enabling the pressing plate to rebound up and down in the die cylinder is arranged on the pressing plate.

Preferably, the compression device comprises an upright column arranged at the center of the pressing plate, a baffle plate is arranged at the top of the upright column, the upright column is sleeved with an elastic part, and a blocking column used for blocking the elastic part and the baffle plate is further arranged at the upper part of the die cylinder.
