Technical Field

The present invention relates to a method and a device for packaging fresh produce according to the preamble of claims 1 and 11.

Background

In the production of fresh products such as ground meat, hamburgers, patties, fresh sausages, etc., a hygroscopic absorbent substrate, for example a so-called non-woven material, is placed in the packaging, so that excess moisture is sorbed. This prevents, firstly, that liquid becomes visible in the package and, secondly, that the inside of the package is fogged and thus that the packaged food is no longer clearly visible.

After the packaging tray (tray) is produced in a separate step, such an absorbent substrate is loosely inserted or glued or welded into the packaging tray (tray) (e.g. by means of ultrasonic welding). The trays are then stacked and delivered to future customers (e.g., meat grinder production companies, etc.). The trays are then unstacked, filled and closed again.

Heretofore, absorbent substrates have always been introduced into trays or packages in a separate manufacturing step (rather than simultaneously with the product). The introduction of absorbent substrate cuts into the tray, and subsequent stacking, storage, transport and non-stacking again, can lead to hygiene problems as the surfaces in contact with the food can become contaminated. The existing solutions are inflexible in that the absorbent substrate, i.e. for example a nonwoven material, is pre-introduced into the tray. If a manufacturer packs different products in the form of a tray and wants to use absorbent substrates (different sizes, thicknesses, absorption capacity/absorption characteristics) suitable for the respective products, he will have to stock the same tray with different inserts. This requires higher expenditure for storage space, risk of mixing and higher unit costs, because of the lower respective amounts required for each. In practice, therefore, nonwoven inserts are frequently used today which are in fact not ideally suited for the respective product. Inserts with too low or too high an absorption capacity may be used (and therefore, more expensive absorbent substrates than actually needed are often used).

Disclosure of Invention

Based on this, it is an object of the present invention to provide a method and a device for packaging fresh products, which method and device bring about improved hygiene and which, in addition, are less expensive to manufacture and store.

According to the invention, this object is met by the features of claims 1 and 11.

Thus, according to the present invention, a method for packaging fresh products, in particular meat and sausage products, is provided, wherein the fresh products are introduced into the container simultaneously with the absorbent substrate. It is to be understood here at the same time that the fresh produce has been placed on top of the absorbent substrate in one step, i.e. when the fresh produce is placed into the container. In the prior art, there are usually at least two separate process steps for this purpose.

An advantage of the present invention is that containers such as bowls, trays and the like no longer have to be stored with the absorbent base. This also brings the further advantage that it is generally possible to select a suitable absorbent substrate which is ideal for a particular product. A large number of containers can then be purchased and stored independently of the respective absorbent substrate, which brings economic advantages. Furthermore, there are hygienic advantages in that the absorbent substrate does not have to be stored with the container, especially surfaces that come into contact with food are not contaminated. This also means that the container and the absorbent substrate can be purchased separately from each other.

In the present application, an absorbent substrate is understood to be a substrate which absorbs moisture and has an absorption body, for example a nonwoven material made of cellulose. The absorbent substrate can be formed by or comprise an absorbent body. In the present application, containers are understood to be trays, deep-draw packs, flow wrap (tubular bags), cartons, etc.

Another advantage of the present invention is that production steps can be saved compared to the prior art, since the absorbent substrate can be introduced together with the product.

According to a preferred embodiment, an intermediate layer can be arranged between the absorbent substrate and the fresh produce, in particular paper, for example waxed paper with a smooth surface or a film material; in particular a plastic film, for example a PE film. For example, a fresh product, such as a string of ground meat, can then be produced on the middle layer. If an intermediate layer is further arranged between the absorbent substrate and the fresh produce, the product can be prevented from drying out due to direct contact with the absorbent substrate, e.g. the absorbent nonwoven material. This is particularly advantageous: if the absorbent substrate comprises an absorption body, in particular in the form of a nonwoven material, the surface of the absorption body facing the fresh produce absorbs moisture. The intermediate layer also has the further advantage that the absorbent substrate situated thereunder, which may have absorbed liquid, such as blood, is not visible, which results in an improved appearance. Furthermore, if the absorbent substrate has a rough surface, fresh produce can be more easily removed from the intermediate layer, which can have a smooth surface and is not sticky. The intermediate layer is advantageously made of a material that does not absorb liquid.

Alternatively, the absorbent substrate can also be configured such that the plastic material is applied, in particular laminated, onto the absorption body at least on one side.

The absorbent substrate is preferably configured such that the contact surface facing the fresh produce cannot absorb any moisture via the absorbent body. This means that the plastic material will not be perforated on the contact surface side if a plastic film is applied to the absorption body. If both sides of the absorption body are provided with a plastic material, the underside facing away from the fresh produce is preferably perforated in such a way that liquid can be absorbed via the absorption body.

The corresponding configuration, in which the contact surface facing the fresh produce does not absorb moisture, has the advantage that the fresh produce does not dry out and therefore an intermediate layer may not be required.

Advantageously, the absorbent substrate is pulled from a roll, for example in the form of a belt (web), and transported in a transport direction by a transport device, for example a conveyor belt. Fresh products that have been applied to the absorbent substrate are also conveyed together with the absorbent substrate in the transport direction T. The absorbent substrate and the intermediate layer, if present, may also be pulled from a common roll or from two different rolls. If the absorbent substrate and the intermediate layer are pulled from different rolls, they do not have to be of the same length (when viewed from the transport direction) if they are cut at different locations. The intermediate layer and the pulled-out absorbent substrate are conveyed in the conveying direction, and then fresh produce is applied to the intermediate layer.

The fresh produce can advantageously first be applied onto the intermediate layer and then the absorbent substrate can be introduced below the intermediate layer, or the intermediate layer and the absorbent substrate are already placed on top of each other and moved in the conveying direction when the fresh produce is placed thereon.

The absorbent substrate and/or the intermediate layer can be cut into individual cut pieces (chopping) before being introduced into the container, optionally together with a product, such as a string of ground meat. Thus, the absorbent substrate and/or the intermediate layer, i.e. the tape (web), may be cut before or after the fresh produce has been applied.

According to a preferred embodiment, the method according to the invention makes the area of the absorbent substrate cut smaller than the area of the intermediate layer cut, in particular shorter lengths, so that the amount of expensive absorbent substrate can be reduced. In addition, the absorbent substrate under the intermediate layer is not visible from above, which can result in an improved appearance. The intermediate layer is particularly advantageous in that fresh products, such as ground meat, can be more easily removed from the smooth intermediate layer by the end consumer than from an absorbent substrate having a rough surface.

The absorbent substrate and the intermediate layer may also be connected to each other, i.e. attached to each other, e.g. glued, welded, etc., before the application of the fresh produce. The absorbent substrate and the intermediate layer can be previously joined to each other and then wound on a common roll, or the absorbent substrate and the intermediate layer are joined and joined to each other after being pulled out.

The apparatus according to the invention comprises at least one feeding device for the absorbent substrate, in particular comprising a roller, and a feeding device for fresh products, such as an ejection device for ground meat, a conveyor belt for a string of fresh products or portioned (ported) fresh products or the like.

The device is configured such that fresh product, i.e. a portion of fresh product, can be introduced into the container together with the absorbent substrate.

Furthermore, the apparatus comprises at least one separating device for separating the absorbent substrate and intermediate layer strips into respective cut pieces. The device is configured for introducing fresh products simultaneously with the absorbent base and for this purpose advantageously comprises a conveying device for conveying the containers which is arranged lower than the conveying device on which the fresh products are conveyed together with the absorbent base or with the absorbent base and the intermediate layer, so that the fresh products can be dropped or introduced into the containers (for example tubular bags) together with the absorbent base or with the absorbent base and the intermediate layer. The fresh produce can simply be slid off the belt at the end of the conveyor (particularly a conveyor belt) and dropped or slid into the container or can be pushed down using a pusher. Detailed Description

Fig. 1A, 1B, 2 and 3 illustrate an embodiment of the present invention in the context of ground meat production. Fresh products 2, here in the form of ground meat 2, are discharged from a schematically shown meat grinder 7 in a conveying direction T as a string of ground meat and are conveyed onwards in the conveying direction on a first conveying means, here a conveyor belt 6 a. The meat grinder 7 here serves as a device 7 for supplying fresh products 2, here a string of ground meat.

Furthermore, the device 10 comprises a feeding device, which here comprises a roller 5a, via which roller 5a the absorbent substrate 1, here in the form of an absorbent substrate tape, can be pulled out. The conveyor belt 6b then conveys the fresh produce 2 forward over the absorbent substrate in a conveying direction. The conveying device 9 is arranged in the region below the conveying device 6b, here likewise configured as an endless conveyor belt, for example. The conveyor 9 for conveying the containers 3 is configured such that the conveyor 9 overlaps in the conveying direction T, so that the fresh produce 2 can fall or slide with the absorbent substrate 1 into the container 3 at the end of the conveyor 6 b. As shown in fig. 1A, the container can have inclined walls or be provided with a slide (not shown) configured to enable fresh produce 2 to be slid into the container 3 together with the absorbent substrate 1. The conveyor belt 6b downstream of the separating device 8 can run faster than the conveying device 6a so that gaps are formed between the various parts. Fig. 1B shows a further embodiment according to the invention, which essentially corresponds to the embodiment shown in fig. 1A, wherein only an intermediate layer 4 can be further arranged between the fresh produce and the absorbent substrate 1. For this purpose, for example, a second roller 5b is provided, which second roller 5b can be guided by guiding means, for example, a deflecting roller 11b and a pair of rollers 12b, to guide the intermediate layer belt 4 to the beginning of the conveyor 6a in the region above the absorbent substrate 1. The feeding of the intermediate layer can also have a drive in which, for example, at least one of the rollers of the pair of rollers 12b is driven. Fresh produce 2 is then applied to the intermediate layer 4. The intermediate layer 4 is for example paper, wax paper or a film material such as a PE film or a PS film (polystyrene). The intermediate layer is preferably constructed such that it does not absorb any moisture. The rest of the device corresponds to the device illustrated in fig. 1A, wherein fresh produce 2 can also subsequently be introduced into the container 3 together with the absorbent substrate 1, but wherein an intermediate layer 4, which is likewise cut, is arranged between the absorbent substrate 1 and the finished product 2.

In the embodiment shown in fig. 1A and 1B, the absorbent base belt 1 and the intermediate layer belt 4 together with the ground meat are jointly divided into the desired dimensions, i.e. the length when viewed in the conveying direction T. Thus, the three components always have the same length. However, the widths of the three components may be different; that is, the middle layer 4 can be wider than the meat grinder portion 2, for example, and the absorbent substrate 1 can be narrower than the middle layer 4, so that the absorbent substrate is no longer visible to the end consumer in the finished package. In this way, if the area of the absorbent material is smaller than the area of the intermediate layer 4, absorbent substrate material can be saved.

In the embodiment shown in fig. 1B, the absorbent chassis may be formed of only the absorbent body, or may be formed so as not to absorb liquid on at least the contact side, as described with reference to fig. 1A. This is particularly advantageous when the intermediate layer is formed from an uncoated paper that can absorb liquids.

In order to prevent relative movement of the intermediate layer and the absorbent substrate during the entry into the package, i.e. the container 3, the two layers can be connected to each other after they are pulled from the rollers 5a and 5b and before they are placed under the fresh produce. The connection can be established by applying an adhesive, in particular one or more dots of adhesive, on the respective sides of the intermediate layer and/or the absorbent substrate 1 facing each other, or by adhesion using self-adhesive tape on the intermediate layer or the absorbent substrate. The connection can also be established by ultrasonic welding in a fixed manner or in a continuous flow or by an embossed (emboss) connection in a fixed manner or in a continuous flow.

Fig. 4 shows another embodiment in which already separated parts of the fresh produce 2 are supplied, such as hamburgers, patties, fresh sausage groups, etc. It is also conceivable that the minced meat portion has been separated by an upstream process. This provides the following advantages: the lengths of the intermediate layer 4 and the absorbent substrate 1 can be set completely independently of one another and can be supplied to the fresh produce 2 in different lengths. The position of the intermediate layer 4 relative to the fresh produce 2, and the position of the absorbent substrate 1 relative to the fresh produce 2 or relative to the intermediate layer 4 can then be adjusted. Here again, the dimensions of the absorbent substrate 1 and thus the absorption of moisture can be adapted well to the product. In order to prevent the substrates from slipping relative to each other, self-adhesive tape can be provided on one or both substrates, for example. However, as described above, in the region where the intermediate layer 4 and the absorbent substrate 1 are joined, it is also possible to apply an adhesive therebetween, or to connect the absorbent substrate 1 and the intermediate layer 4 to each other by an ultrasonic welding device (not shown) or an embossing device (not shown). In the method according to the invention, a string of fresh produce 2 or fresh produce that has been divided is supplied and at least one absorbent substrate 1 is placed thereunder, or an intermediate layer and an absorbent substrate are placed thereunder. If the product is present in the form of a string of products, the latter can be separated together with the absorbent substrate and/or optionally with the intermediate layer 4. The fresh produce can then be introduced into the container 3 together with the absorbent substrate or with the absorbent substrate and the intermediate layer 4 and transported onwards and then finally closed, for example by closing with a lid or film material or welding. In the case of a tubular bag or flow wrap package, the bag is sealed without additional film material.
