1. A milk fat comprising, based on total fatty acid weight

a.8.9-29.0% by weight of linoleic acid (C18:2 cis 9,12),

0.9-2.4% by weight of alpha-linolenic acid (C18:3 cis 9,12,15), and

c.3-5 wt% butyric acid (C4: 0).

2. The bovine milk fat of claim 1, wherein the weight ratio of linoleic acid to alpha-linolenic acid is in the range of 4:1 to 15:1, preferably in the range of 5:1 to 10: 1.

3. Milk fat according to claim 1 or 2, comprising 10-25 wt% linoleic acid, preferably 11-20 wt% linoleic acid, and most preferably 12-18 wt% linoleic acid, based on total fatty acids.

4. The milk fat according to any preceding claim, comprising 15-40 wt% palmitic acid (C16: 0).

5. The milk fat according to any preceding claim, comprising 8-18 wt% stearic acid (C18: 0).

6. The bovine milk fat of claim 4, wherein at least 30% of palmitic acid is bound to glycerides in the sn-2 position.

7. The milk fat according to any preceding claim, having an oleic acid content (C18:1 cis) in the range 15-35 wt%.

8. The bovine milk fat according to any of the preceding claims, wherein the fat comprises at most 3.0 wt%, preferably 0.5-3.0 wt%, and most preferably 0.5-2.5 wt% of fatty acids having one or more non-conjugated carbon-carbon double bonds in trans position.

9. The milk fat according to any preceding claim, having a soap forming potential, defined as the molar percentage of the sum of C12:0, C14:0, C16:0 and C18:0 at the sn-1 or sn-3 position, based on total fatty acids, which is 55 mol% or less, preferably in the range of 30-52 mol%, in particular in the range of 40-50 mol%.

10. Milk wherein the fat phase consists of the milk fat according to any one of claims 1-9.

11. The milk according to claim 10, wherein at least 50 wt.%, preferably 90-100 wt.% of the milk phase is globular milk fat.

12. A process for producing the milk according to claim 10 or 11, comprising the steps of: feeding a mammal of a lactating cow a source of ruminal protective linoleic acid and a source of ruminal protective alpha-linolenic acid, which sources may be the same or different, followed by milking the lactating cow, wherein the mammal preferably receives (i) at least 100g, more preferably 200g, per day of linoleic acid and (ii) at least 10g, more preferably 20-200g, per day of alpha-linolenic acid, at least 50% of the linoleic acid and at least 50% of the alpha-linolenic acid being ruminal protective.

13. A method according to claim 12, wherein the mammal is fed a supplement comprising a rumen protective triglyceride oil that provides linoleic acid and alpha-linolenic acid, preferably a vegetable oil, more preferably a vegetable oil selected from the group consisting of: soybean oil, linseed oil, rapeseed oil, sunflower oil, soybean oil fractions, linseed oil fractions, rapeseed oil fractions, sunflower oil fractions, including mixtures comprising one or more of said vegetable oils and/or said fractions, and wherein the linoleic acid content of the supplement is preferably at least 35g per 100g of fatty acids, more preferably 45-90g per 100g of fatty acids, and the alpha-linolenic acid content of the supplement is preferably at least 3g per 100g of fatty acids, more preferably 2.5-10g per 100g of fatty acids.

14. The method according to any one of claims 12-13, wherein the rumen protective triglyceride oil or acid source is triglyceride oil encapsulated in a rumen resistant substance, preferably a substance which consists at least substantially of protein, more preferably a substance which consists at least substantially of protein selected from the group consisting of whey protein and casein.

15. A formula, in particular an infant formula, follow-on formula or a growing-up formula, comprising a fat phase, wherein the fat phase constitutes at least 50 wt.%, preferably at least 60 wt.%, more preferably at least 70 wt.%, even more preferably at least 90 wt.% and most preferably 100 wt.% of the fat phase consisting of the milk fat of the cow according to any one of claims 1-9.
