The invention relates to a method for frying a spicy sauce, which comprises the following steps:

s1: preparing raw materials: preparing 5% of peanuts, 0.1% of pepper powder, 0.5% of garlic powder, 0.5% of clove powder, 1% of ginger, 1% of cassia, 1% of aniseed, 2% of bay leaves, 0.5% of cooking wine, 1% of salt, 2% of garlic, 0.5% of white sugar, 0.5% of chicken essence, 0.5% of monosodium glutamate, 30% of peanut oil, 5% of pleurotus eryngii, 20% of dried peppers, 30% of beef and 20% of soybean paste;

s2: frying raw materials: when a worker enters the protection cabin, the peanut, the paprika powder, the garlic powder, the clove powder, the ginger, the cinnamon, the aniseed, the myrcia, the cooking wine, the salt, the garlic, the white sugar, the chicken essence, the monosodium glutamate, the peanut oil, the pleurotus eryngii and the dried chili are poured into the frying equipment 1, then the worker leaves the protection cabin 21 and closes the cabin door 22, and then the frying equipment 1 is controlled by the controller to fry;

s3: time-sharing feeding: placing beef and soybean paste into different interlayers in the material placing box 43, placing the beef into the frying equipment 1 by controlling the feeding mechanism 4 through the controller when the temperature of the frying equipment 1 reaches 150 ℃, placing the soybean paste into the frying equipment 1 by controlling the feeding mechanism 4 through the controller when the temperature of the frying equipment 1 reaches 180 ℃, and continuously frying for 20min to obtain the spicy sauce material.

The specific working process is as follows:

when in frying, a worker enters the protection cabin 21 through the frying cabin door 22, the frying raw materials are put into the frying equipment 1, after the worker leaves the protection cabin 21, the cabin door 22 is closed, the frying equipment 1 is controlled by the controller to operate, the raw materials are fried, the exhaust pipe 23 is communicated with the ventilation pipeline, the exhaust fan is arranged in the ventilation pipeline, oil fume and pungent smell generated in the frying process are exhausted outdoors, thereby preventing peculiar smell from stimulating the worker in the frying process, preventing the oil from splashing on the body of the worker in the frying process, the feeding mechanism 4 is used for arranging a plurality of interlayers in the material placing box 43, different raw materials are sequentially put in different interlayers according to the sequence of material placing required, the raw materials needing to be put in advance are placed in the interlayer closer to the material inlet pipe 3, the corresponding material placing temperature in each interlayer is preset by the controller, when the temperature of the stir-frying device 1 reaches a preset temperature, the temperature sensor feeds a signal back to the controller, so that the controller controls the electric push rod 42 on the base 41 to be started, the electric push rod 42 drives the material discharging box 43 to move towards the material feeding pipe 3, the material feeding pipe 3 and the bottom plate 44 are mutually extruded in the moving process, the bottom plate 44 slides towards the electric push rod 42 at the bottom of the material discharging box 43 and extrudes the second spring 45, the material discharging box 43 moves towards the upper part of the material feeding pipe 3, the bottom of the material discharging box 43 is gradually opened in the process, meanwhile, the pipe cover 31 and the material discharging box 43 are mutually extruded in the moving process of the material discharging box 43, the pipe cover 31 slides towards the protective cabin 21 at the material feeding pipe 3 and extrudes the third spring 46, the pipe cover 31 of the material feeding pipe 3 is gradually opened, so that the raw materials in the interlayer enter the material feeding pipe 3, when the next preset temperature is reached, then next interlayer of controller control to inlet pipe 3 top for the raw materials in this interlayer enters into from inlet pipe 3 and fries system equipment 1 in, thereby need not the opportunity of manual control blowing, make blowing opportunity control more accurate, improve the quality that the system was fried to spicy sauce material, can automatic blowing, make a staff can many equipment of concurrent operation, practice thrift the manpower, reduction in production cost.
