The content and index of wet gluten in flour are one of important indexes for identifying the quality of flour, people also have clear division on the purchasing of flour in daily life, such as high gluten flour, medium gluten flour and low gluten flour, namely the gluten content, namely the gluten strength of the flour, a simple distinguishing method can adopt color or physical characteristic identification, but the detection is rough, the accurate gluten content experimental detection in production and processing is not facilitated, and the misjudgment is easy to be generated by the interference of an additive.

Disclosure of Invention

the gluten tester is arranged at one side outside the dough kneading cylinder and is used for washing and drying dough.
