Background

The durian contains rich nutrient substances, is a good base for breeding bacteria, and can deteriorate after being placed in the air for several hours at normal temperature. The ultrahigh pressure sterilization is used as a non-thermal sterilization method, is successfully applied in commercialization at present, and has the advantages of rapidness, uniformity and quality guarantee. But the independent sterilization effect of the ultrahigh pressure is limited, and researchers find that the sterilization effect can be improved under the synergistic effect of the low temperature and the ultrahigh pressure. However, the conventional low-ultrahigh pressure synergistic sterilization has the overall cooling effect on the ultrahigh pressure cavity in an external cooling liquid mode, the whole processing process is long in time consumption and low in processing efficiency, and meanwhile, ultrahigh pressure equipment is easily damaged by low temperature, so that the service life of the equipment is shortened.

Disclosure of Invention

The invention aims to provide a device and a method for sterilizing durian fruit paste at low temperature and ultrahigh pressure in a self-cooling mode under the action of ultrahigh pressure.

The invention also provides a self-cooling type ultrahigh pressure liquid-solid phase change sterilization method for the durian fruit paste by using the device, which comprises the following steps:

opening the sleeve cover, and pulling out the square charging basket from the opening of the waterproof heat-insulation sleeve;

putting the durian fruit paste to be sterilized into a polyethylene sealing bag, then putting the polyethylene sealing bag into a loading area of a square charging basket, and filling gaps in the inner cavity of the square charging basket with crushed ice;

putting the square charging basket back into the waterproof heat-insulation sleeve barrel, and closing the sleeve barrel cover;

opening the sealing cover of the liquid inlet, injecting cooling liquid (water, salt water and the like) into the inner cavity of the waterproof heat-insulation sleeve until the inner cavity is full of the cooling liquid, and then covering the sealing cover;

the whole device is placed in an ultrahigh pressure containing cavity, and is filled with ultrahigh pressure working fluid to carry out low-temperature and ultrahigh pressure cooperative treatment, so that sterilization is realized.

The ultrahigh pressure is the prior known technology, and in the invention, the maximum pressure of the ultrahigh pressure equipment can be set to be 260MPa, and the pressure maintaining time is 30 s.

In the invention, if the sliding groove is eliminated, friction is generated when the square charging basket enters and exits the waterproof heat-insulating sleeve, and the service life of the waterproof heat-insulating sleeve is reduced. The liquid inlet with the sealing cover is convenient for adding cooling liquid into the waterproof heat-insulation sleeve barrel, and the waterproof heat-insulation sleeve barrel is in a horizontal state as shown in figure 1 when in actual use, so that the cooling liquid cannot be filled into the waterproof heat-insulation sleeve barrel through the right opening of the waterproof heat-insulation sleeve barrel.

The sealing device can prevent the liquid in the waterproof heat-insulation sleeve from leaking.

In the invention:

the durian fruit paste to be treated is packaged by a polyethylene sealing bag, the appearance of the durian fruit paste is roughly square, and the durian fruit paste can be matched with a loading area of a square charging bucket;

the cooling liquid is selected from materials with larger specific heat capacity, such as water or saline water;

the sleeve cover is made of hard materials, so that large deformation can not occur under the extrusion of the self-tying belt 9;

the pressure-transmission self-cooling type durian fruit paste sterilization device and method provided by the invention have the following technical advantages:
