At present, the preservation method of fresh eggs is mainly refrigeration, wherein the fresh eggs are stored in a refrigeration house with the temperature of 0-4 ℃, the growth and the reproduction of microorganisms are inhibited at low temperature, the physiological change, the chemical change and the enzyme activity of the eggs are reduced, the speed of water sampling of the thick protein is delayed, the dry consumption rate is reduced, and the eggs are kept fresh for a long time. After being refrigerated for 1 month, the egg quality of the fresh eggs is not greatly different from that before being refrigerated, after being refrigerated for 3 months, the egg quality is greatly reduced, the Ha's unit of the eggs is reduced to below 30, the eggs are easy to have the phenomenon of mildew and rot, and the acid value of yolk oil is increased. The refrigeration method for storing fresh eggs has higher requirements on the design of a refrigeration house, the energy consumption is large, and the phenomenon of mildew and rot is easy to generate in the refrigeration process.

Curcumin has wide antioxidant activity, can eliminate free radicals in vivo, has liver protecting and anticancer effects, can reduce the content of cholesterol and triglyceride, has protective effect on cardiovascular and cerebrovascular systems, and has strong anti-inflammatory and antibacterial effects. Selenium exists in various functional proteins, enzymes and muscle cells of an animal body, influences and maintains normal metabolism and immunity of the body, is a component of glutathione peroxidase (GSH-Px), and has a physiological function of playing an anti-oxidation role mainly through the GSH-Px, so that generated hydroperoxide or hydrogen peroxide can be rapidly decomposed or reduced into harmless alcohol or water, accumulation of the hydroperoxide or hydrogen peroxide in cells is prevented, and cell membranes are protected.
