Example 1

A method for extracting anthocyanin from black peaches comprises the following steps:

(1) cutting the black peach fruits into blocks, drying the black peach fruits in a drying oven at 40 ℃, crushing the black peach fruits by using a crusher, and sieving the black peach fruits by using a 60-mesh sieve;

(2) weighing 5g of black peach fruit powder, and adding 100mL of eutectic solvent according to the ratio of 1:20, wherein the eutectic solvent comprises choline chloride: oxalic acid =1:1 (molar ratio), water volume fraction is 30%, oscillation extraction is carried out at 200rpm under 40 ℃ for 30min, and then centrifugation is carried out at 5000rpm for 15min, so as to obtain supernatant;

(3) loading the supernatant into a macroporous resin X-5 chromatographic column, washing with deionized water until the pH is neutral, eluting with 200mL 70% ethanol containing 0.1% hydrochloric acid, and collecting the eluate;

(4) and (4) carrying out rotary evaporation on the eluent at 50 ℃ to obtain dry powder, namely the nectarine anthocyanin extract.
