Proteases are a generic term for a class of enzymes that hydrolyze peptide chains of proteins, and are classified into endopeptidases and telopeptidases according to the way in which they degrade polypeptides, the former being capable of cleaving large molecular weight polypeptide chains from the middle to form lower molecular weight prions and peptones; the latter can be further classified into carboxypeptidases and aminopeptidases, which hydrolyze peptide chains one by one from the free carboxyl terminus or the free amino terminus of a polypeptide to form amino acids, and according to the manner in which they hydrolyze polypeptides, they can be classified into endopeptidases, which cleave the interior of a protein molecule to form a smaller molecular weight peptide peptone, and exopeptidases, which hydrolyze peptide bonds one by one from the free amino or carboxyl terminus of a protein molecule to free amino acids, the former being aminopeptidases and the latter being carboxypeptidases.

However, the existing preparation method of the garlic protein zymolyte has low preparation efficiency, needs to wait for a long time, greatly increases the preparation difficulty of the garlic protease and reduces the preparation efficiency of the garlic protease.
