1. A method for preparing an emulsion containing carotenoid is characterized by comprising the following steps:

mixing the syrup, the stabilizer and water to prepare a water phase; mixing an emulsifier and a polyol to prepare an emulsified phase; mixing carotenoid, weighting agent and oily solvent to prepare an oil phase;

heating and mixing part of the aqueous phase and the emulsified phase to prepare a mixed solution;

adding the oil phase into the mixed solution for shearing to prepare shearing liquid; and

cooling the residual water phase, and then adding the water phase into the shearing liquid for mixing to prepare the emulsion containing the carotenoid.

2. The method for producing a carotenoid-containing emulsion according to claim 1, wherein in the step of mixing a part of the aqueous phase with the emulsified phase, the mass of the part of the aqueous phase is 1/3 to 1/5 of the total mass of the aqueous phase; and/or in the step of cooling the residual water phase, the temperature is-10 ℃ to 15 ℃.

The method for producing a carotenoid-containing emulsion according to claim 1, wherein the shearing time is 10 to 30 min; and/or in the step of adding the oil phase into the mixed solution for shearing, the rotating speed is 6000 r/min-15000 r/min; and/or in the step of adding the oil phase into the mixed solution for shearing, adding the oil phase into the mixed solution at a speed of 2-5 mL/min; and/or adding the residual water phase into the shearing liquid for mixing, wherein the rotating speed is 200-400 rpm.

4. The method for preparing an emulsion containing carotenoid according to claim 1, characterized in that the stabilizer is at least one selected from gum arabic, guar gum, gellan gum, konjac gum, xanthan gum, pectin, sodium starch octenylsuccinate and sodium carboxymethylcellulose, preferably the stabilizer is gum arabic, guar gum or gellan gum; and/or in the water phase, the mass percent of the stabilizer is 0.5-2.0%.

The method for producing a carotenoid-containing emulsion according to any one of claims 1 to 4, wherein the temperature in the step of mixing a syrup, a stabilizer and water, the step of mixing an emulsifier and a polyol and the step of heating and mixing a part of the aqueous phase and the emulsified phase are the same and are each 45 ℃ to 75 ℃; and/or the presence of a catalyst in the reaction mixture,

in the emulsion containing carotenoid, the mass percent of the water phase is 10-35%, the mass percent of the emulsifier is 3-6%, the mass percent of the polyalcohol is 34-86%, and the mass percent of the oil phase is 1-25%.

6. The method for producing a carotenoid-containing emulsion according to any one of claims 1 to 4, wherein the Brix of the syrup is 20 to 75 Brix; and/or the presence of a catalyst in the reaction mixture,

the syrup is at least one of high fructose corn syrup, high fructose corn syrup and white granulated sugar; and/or the presence of a catalyst in the reaction mixture,

the emulsifier is at least one selected from polyglycerol fatty acid ester, sucrose fatty acid ester, cortex Gleditsiae Abnormalis extract, lecithin, span and Tween; and/or the presence of a catalyst in the reaction mixture,

the polyhydric alcohol is at least one selected from propylene glycol, glycerol and sorbitol; and/or the presence of a catalyst in the reaction mixture,

the carotenoid is at least one of lutein, beta-carotene or lycopene; and/or the presence of a catalyst in the reaction mixture,

the oily solvent is at least one selected from safflower seed oil, palm oil, caprylic/capric glyceride, salad oil and corn oil; and/or the presence of a catalyst in the reaction mixture,

the weighting agent is selected from at least one of rosin glycerin ester, sucrose acetate isobutyrate and hydrogenated rosin glycerin ester.

7. A carotenoid-containing emulsion prepared by the method for producing a carotenoid-containing emulsion according to any one of claims 1 to 6, preferably, the particle size of the emulsion is 200nm to 800 nm.

8. Use of the carotenoid-containing emulsion according to claim 7 for the preparation of beverages, health products or cosmetics.

9. A carotenoid-containing beverage comprising the carotenoid-containing emulsion according to claim 7 and water.

10. The carotenoid-containing beverage according to claim 9, characterized in that the beverage further comprises white granulated sugar, citric acid, potassium sorbate and orange flavor, preferably the beverage comprises, in mass percent: 5-15% of white granulated sugar, 0.1-0.5% of citric acid, 0.01-0.05% of potassium sorbate, 0.1-0.3% of orange spice, 0.05-0.3% of the emulsion and water.

Technical Field

The invention relates to the field of food, in particular to an emulsion containing carotenoid, a preparation method, application and a beverage thereof.

Background

Carotenoids can be used as coloring agents, are the most common and stable natural pigments in the nature, can cover all color systems from red to yellow due to concentration difference, and endow products with gorgeous appearances due to bright and striking colors, so that the carotenoids are widely applied to food.

In international long-distance transportation, the transportation time is long, the time is usually more than 1 month, and the temperature of a container is as high as more than 50 ℃, so that the emulsion containing the carotenoid is easy to generate a layering phenomenon, and cannot be applied to terminal products such as beverages, foods and the like.

Disclosure of Invention

Accordingly, there is a need for a method for preparing carotenoid-containing emulsions, which can prepare emulsions having good stability and being less prone to delamination during long-distance transportation.

In addition, an emulsion containing carotenoid, application and beverage are provided.

A method for preparing emulsion containing carotenoid comprises the following steps:

mixing the syrup, the stabilizer and water to prepare a water phase; mixing an emulsifier and a polyol to prepare an emulsified phase; mixing carotenoid, weighting agent and oily solvent to prepare an oil phase;

heating and mixing part of the aqueous phase and the emulsified phase to prepare a mixed solution;

adding the oil phase into the mixed solution for shearing to prepare shearing liquid; and

cooling the residual water phase, and then adding the water phase into the shearing liquid for mixing to prepare the emulsion containing the carotenoid.

In one embodiment, in the step of mixing part of the water phase with the emulsified phase, the mass of the part of the water phase is 1/3-1/5 of the total mass of the water phase.

In one embodiment, the shearing time is 10min to 30 min; and/or in the step of adding the oil phase into the mixed solution for shearing, the rotating speed is 6000 r/min-15000 r/min; and/or in the step of adding the oil phase into the mixed solution for shearing, adding the oil phase into the mixed solution at a rate of 2-5 mL/min.

In one embodiment, in the step of cooling the rest of the aqueous phase, the temperature is-10 ℃ to 15 ℃; and/or adding the residual water phase into the shearing liquid for mixing, wherein the rotating speed is 200-400 rpm.

In one embodiment, the temperature of the step of mixing the syrup, the stabilizer and the water, the step of mixing the emulsifier and the polyol and the step of heating and mixing a part of the aqueous phase and the emulsified phase are the same and are all 45 ℃ to 75 ℃.

In one embodiment, the stabilizer is at least one selected from the group consisting of gum arabic, guar gum, gellan gum, konjac gum, xanthan gum, pectin, sodium starch octenyl succinate, and sodium carboxymethylcellulose, preferably, the stabilizer is gum arabic, guar gum, or gellan gum; and/or in the water phase, the mass percent of the stabilizer is 0.5-2.0%.

In one embodiment, in the emulsion containing carotenoid, the mass percentage of the water phase is 10-35%, the mass percentage of the emulsifier is 3-6%, the mass percentage of the polyalcohol is 34-86%, and the mass percentage of the oil phase is 1-25%.

In one embodiment, the syrup has a Brix of 20Brix to 75 Brix; and/or the syrup is selected from at least one of high fructose corn syrup, high fructose corn syrup and white granulated sugar.

In one embodiment, the emulsifier is selected from at least one of polyglycerin fatty acid ester, sucrose fatty acid ester, quillaia saponaria extract, lecithin, span and tween; and/or, the polyalcohol is selected from at least one of propylene glycol, glycerol and sorbitol; and/or the carotenoid is at least one selected from lutein, beta-carotene or lycopene; and/or the oily solvent is at least one selected from safflower seed oil, palm oil, caprylic/capric glyceride, salad oil and corn oil; and/or the weighting agent is selected from at least one of rosin glycerin ester, sucrose acetate isobutyrate and hydrogenated rosin glycerin ester.

A carotenoid-containing emulsion is prepared by the preparation method of the carotenoid-containing emulsion.

In one embodiment, the emulsion has a particle size of 200nm to 800 nm.

The carotenoid-containing emulsion can be used for preparing beverage, health product or cosmetic.

A carotenoid-containing beverage comprises the above carotenoid-containing emulsion and water.

In one embodiment, the beverage further comprises white granulated sugar, citric acid, potassium sorbate and orange flavor.

In one embodiment, the beverage comprises, in mass percent: 5-15% of white granulated sugar, 0.1-0.5% of citric acid, 0.01-0.05% of potassium sorbate, 0.1-0.3% of orange spice, 0.05-0.3% of the emulsion and water.

The preparation method of the emulsion containing the carotenoid introduces syrup and the stabilizer into the water phase for compounding, can assist to reduce the grain diameter of the emulsion, increase the consistency of a system and reduce the collision among emulsion particles; and the polyol is introduced into the emulsified phase, on one hand, the polyol can adjust the HLB value of the emulsifier and has a positive effect on the stability of the emulsion; on the other hand, the polyol can also increase the cloud point of the emulsifier, improve the compatibility of the emulsifier and water and enable the emulsifier to be more easily adsorbed on an oil-water interface. In addition, a part of aqueous phase is mixed with the emulsified phase, then the oil phase is added into the emulsified phase, the particle size of the emulsion can be reduced, and finally the residual aqueous phase with low temperature is added into the emulsified phase, and the temperature induction system generates phase transformation to form the stable nano emulsion. In conclusion, the preparation method of the carotenoid-containing emulsion can obviously improve the stability of the emulsion by matching the raw materials and combining a certain mixing sequence, can still keep the stability at 55 ℃, does not delaminate and can realize long-distance transportation.

Detailed Description

In order that the invention may be more fully understood, reference will now be made to the following description taken in conjunction with the accompanying drawings. The detailed description sets forth the preferred embodiments of the invention. This invention may, however, be embodied in many different forms and should not be construed as limited to the embodiments set forth herein. Rather, these embodiments are provided so that this disclosure will be thorough and complete.

Unless defined otherwise, all technical and scientific terms used herein have the same meaning as commonly understood by one of ordinary skill in the art to which this invention belongs. The terminology used in the description of the invention herein is for the purpose of describing particular embodiments only and is not intended to be limiting of the invention.

In order to overcome the problems of poor stability and easy layering of the traditional emulsion containing carotenoid, one embodiment of the invention provides a preparation method of the emulsion containing carotenoid.

Specifically, referring to fig. 1, the method for preparing the carotenoid-containing emulsion according to the present embodiment includes the following steps:

step S110: mixing the syrup, the stabilizer and water to prepare a water phase; mixing an emulsifier and a polyol to prepare an emulsified phase; mixing carotenoid, weighting agent and oily solvent to prepare oil phase.

Specifically, in the emulsion containing carotenoid, the mass percent of the water phase is 10-35%, the mass percent of the emulsifier is 3-6%, the mass percent of the polyalcohol is 34-86%, and the mass percent of the oil phase is 1-25%.

Wherein the syrup is selected from at least one of high fructose corn syrup, high fructose corn syrup and white sugar. The Brix of the syrup is 20Brix to 75 Brix. In one embodiment, the Brix of the syrup is 35Brix, 55Brix, or 70 Brix.

The stabilizer is at least one selected from acacia gum, guar gum, gellan gum, konjac gum, xanthan gum, pectin, sodium starch octenyl succinate and sodium carboxymethylcellulose. Further, the stabilizer is gum arabic, guar gum or gellan gum. Specifically, in the water phase, the mass percent of the stabilizer is 0.5-2.0%. The mass percentage of the syrup is 5-15 percent, and the balance is water. The syrup solution is introduced into the emulsion containing the carotenoid to be compounded with the stabilizer, so that the particle size of the emulsion can be reduced in an auxiliary manner, the consistency of a system is increased, the collision among emulsion particles is reduced, and the emulsion is more stable.

The emulsifier is at least one selected from polyglycerol fatty acid ester, sucrose fatty acid ester, cortex Gleditsiae Abnormalis extract, lecithin, span and Tween. Further, the emulsifier is polyglycerol fatty acid ester, or the emulsifier is a mixture of quillaia saponaria bark extract and lecithin, or the emulsifier is a mixture of polyglycerol fatty acid ester and sucrose fatty acid ester. In one embodiment, the polyglyceryl fatty acid ester is polyglyceryl decanoate or polyglyceryl laurate.

The polyhydric alcohol is at least one selected from propylene glycol, glycerol and sorbitol. In one embodiment, the polyol is a mixture of propylene glycol and sorbitol, or alternatively, the polyol is glycerol. The performance of the emulsifier can be improved by adding the polyol, and on one hand, the HLB value of the emulsifier can be adjusted by the polyol, so that the polyol has a positive effect on the stability of the emulsion; on the other hand, the polyol enables the cloud point of the emulsifier to rise, improves the compatibility of the emulsifier and water, and enables the emulsifier to be more easily adsorbed on an oil-water interface to form a stable emulsifying system.

The oily solvent is at least one selected from safflower seed oil, palm oil, caprylic/capric glyceride, salad oil and corn oil. Further, the oily solvent is palm oil or caprylic capric glyceride. The weighting agent is at least one selected from glycerol ester of rosin, sucrose acetate isobutyrate and hydrogenated glycerol ester of rosin. Further, the weighting agent is rosin glycerin ester or sucrose acetate isobutyrate or a mixture of the rosin glycerin ester and the sucrose acetate isobutyrate. The specific gravity of the oil phase of the emulsion is usually less than 1, while the specific gravity of the beverage is usually more than 1.02, because the specific gravity of the oil phase of the emulsion is greatly different from the specific gravity of the final beverage, if no weighting agent is added, the oil phase of the emulsion can quickly float, and after the weighting agent is added, the specific gravity of the oil phase can be obviously increased, so that the floating phenomenon of the oil phase can be prevented.

The carotenoid is at least one selected from lutein, beta-carotene or lycopene. Further, the carotenoid is β -carotene. Carotenoids include natural or synthetic carotenes or structurally related polyene compounds, which can cover all color systems from red to yellow due to concentration differences, and are endowed with gorgeous appearances due to bright and striking colors, so that the carotenoids are widely applied to food as functional health-care ingredients or colorants in food.

Specifically, in the oil phase, the mass percent of the carotenoid is 0.1-2.0%, the mass percent of the weighting agent is 45-70%, and the mass percent of the oily solvent is 28-54.9%.

Specifically, in the step of mixing the syrup, the stabilizer and the water, the temperature is 45-75 ℃. In one embodiment, the step of mixing the syrup, the stabilizer and the water comprises: dissolving the syrup in water, adding a stabilizer, and heating and stirring at 45-75 ℃ to uniformly mix the syrup and the stabilizer.

Specifically, in the step of mixing the emulsifier and the polyol, the temperature is 45 ℃ to 75 ℃.

In one embodiment, the step of mixing the carotenoid, the weighting agent and the oily solvent is specifically: heating and dissolving the oily solvent and the weighting agent, then adding the carotenoid, and continuing stirring until the carotenoid is completely dissolved to form a transparent solution.

Step S120: and heating and mixing part of the water phase and the emulsified phase to prepare a mixed solution.

Specifically, the mass of the partial water phase is 1/3-1/5 of the mass of the water phase in the step S110. If the proportion of the aqueous phase mixed with the emulsified phase is too high, the initial emulsion is unstable, resulting in poor stability of the finally prepared emulsion; too low, the consistency of the mixture after shearing is too great to form an initial emulsion. In the step of heating and mixing the part of the water phase and the emulsified phase, the temperature is 45-75 ℃. Specifically, the temperature in the step of mixing the syrup, the stabilizer and water, the step of mixing the emulsifier and the polyol, and the step of heating and mixing the partial water phase and the emulsified phase is the same, so that the temperature before and after mixing is constant.

Step S130: and adding the oil phase into the mixed solution for shearing to prepare shearing liquid.

Wherein, in the shearing step, the rotating speed is 6000 r/min-15000 r/min. The shearing time is 10 min-30 min. The oil phase and the mixed solution are mixed and sheared under high-speed stirring to prepare emulsion, and the particle size can be reduced. It should be noted that, in this context, the shear time refers to the shear time after the oil phase is completely added to the mixture. Further, in step S130, the rotation speed is 10000r/min, 12000r/min or 13000 r/min.

Specifically, the oil phase is slowly added to the mixture. In one embodiment, the oil phase is added to the mixture at a rate of 2mL/min to 5 mL/min.

Step S140: cooling the remaining aqueous phase, and mixing with the shear liquid to obtain carotenoid-containing emulsion.

Specifically, in the step of cooling the residual water phase, the temperature is-10 ℃ to 15 ℃. Therefore, in step S140, the residual aqueous phase with a lower temperature is added into the shear liquid and mixed, so as to rapidly lower the temperature of the system, stabilize the emulsifier at the oil-water interface, and obtain a stable emulsion.

In one embodiment, the step of mixing and stirring the residual aqueous phase and the shear fluid is performed at a rotation speed of 200rpm to 400 rpm.

The carotenoid-containing emulsion which is good in stability, not easy to delaminate and suitable for long-distance transportation can be prepared through the steps S110 to S140. Specifically, the particle size of the carotenoid-containing emulsion is 200nm to 800 nm.

The preparation method of the emulsion containing carotenoid at least has the following advantages:

(1) the preparation method of the emulsion containing the carotenoid introduces syrup and the stabilizer into the water phase for compounding, can assist to reduce the grain diameter of the emulsion, increase the consistency of a system and reduce the collision among emulsion particles; and the polyol is introduced into the emulsified phase, on one hand, the polyol can adjust the HLB value of the emulsifier and has a positive effect on the stability of the emulsion; on the other hand, the polyol can also increase the cloud point of the emulsifier, improve the compatibility of the emulsifier and water and enable the emulsifier to be more easily adsorbed on an oil-water interface. In addition, a part of aqueous phase is mixed with the emulsified phase, then the oil phase is added into the emulsified phase, the particle size of the emulsion can be reduced, and finally the residual aqueous phase with low temperature is added into the emulsified phase, and the temperature induction system generates phase transformation to form the stable nano emulsion. In conclusion, the preparation method of the carotenoid-containing emulsion can obviously improve the stability of the emulsion by matching the raw materials and combining a certain mixing sequence, can still keep the stability at 55 ℃, does not delaminate and can realize long-distance transportation.

(2) The emulsion containing carotenoid prepared by the preparation method has no foam after being added into beverage, and is convenient for filling.

(3) The preparation method of the emulsion containing carotenoid is simple in process, and the emulsion with good stability and small particle size can be obtained without high-pressure homogenization treatment.

The present invention also provides an embodiment of the carotenoid-containing emulsion. The carotenoid-containing emulsion is produced by the method for producing the carotenoid-containing emulsion according to the above embodiment. The emulsion containing carotenoid has good stability, and can be kept stable at 55 deg.C without delamination. The emulsion containing carotenoid is used in beverage without foam, and is convenient for filling.

The present invention also provides an application of the carotenoid-containing emulsion of an embodiment in the preparation of beverages, health products or cosmetics. The carotenoid-containing emulsion can be used as a coloring agent, a nutritional supplement or an antioxidant, etc. in the preparation of the product.

The present invention also provides a carotenoid-containing beverage of an embodiment. The beverage comprises the carotenoid-containing emulsion of the above embodiment and water.

Specifically, the carotenoid-containing beverage further comprises: white granulated sugar, citric acid, potassium sorbate and sweet orange spice.

In one embodiment, the carotenoid-containing beverage comprises, in mass percent: 5 to 15 percent of white granulated sugar, 0.1 to 0.5 percent of citric acid, 0.01 to 0.05 percent of potassium sorbate, 0.1 to 0.3 percent of sweet orange spice, 0.05 to 0.3 percent of emulsion containing carotenoid and water.
