Technical Field

The invention relates to the technical field of marine product processing, in particular to a production method and application of water-dispersible deodorized cuttlefish powder.

Background

Cuttlefish (cuttlefish), also known as variegated cuttlefish, cuttlefish or cuttlefish, belongs to the family of cuttlefish of the order Sepiales of the phylum mollusca, class Cephalopoda, and is closely related to octopus and squid (also known as squid). The cuttlefish resources in China are mainly distributed on the same coastal line from the north to the middle, and the resources are rich.

Cuttlefish ink is synthesized by secretory glands in ink sac, stored in ink sac, and ejected through rectum and anus when meeting enemy. The synthesis of sepia starts from tyrosine, and dopa is generated until the true melanin is synthesized. The ink gland has very fine white fiber, and is criss-cross, and contains various pigments such as black, blue, brown, and golden colors, and various sugars such as fucose, glucuronic acid, and galactose. The special components of the cuttlefish ink make the cuttlefish ink have very important medicinal value, and the black color of the cuttlefish ink can color food, is a natural melanin, is reasonably developed and utilized, and brings considerable economic benefit.

However, the current cuttlefish ink processing has some problems: such as

The processing technology is simple and extensive, and the period is long; the residual fishy smell is heavier in simple processing;

when the cuttlefish ink is processed, the cuttlefish ink is not refined and crushed, so that large particles in the ink sac are not refined, and meanwhile, a precipitate drying method is adopted during drying, so that the cuttlefish powder particles are large, the final dispersibility is poor, and the later-stage wide application is not facilitated.

Therefore, a production method for systematically processing the ink in the ink sac to prepare the deodorized cuttlefish powder easy to disperse in water is needed to expand the product development of the cuttlefish ink.

Disclosure of Invention

The invention provides a production method and application of water-dispersed deodorized cuttlefish powder aiming at the defects of the prior art.

The invention provides a production method of water-dispersible deflavored cuttlefish powder, which comprises the following steps:

(1) pretreatment of the ink bag: steaming the ink bag at normal pressure;

(2) smashing and refining cuttlefish juice: removing the capsule skin, and collecting cuttlefish juice; refining and uniformly treating the collected cuttlefish juice;

(3) deodorizing treatment: adding food grade methanol, No. 6 solvent oil, acetone, ethanol or ethyl acetate, and one or more of acetic acid or hydrochloric acid or citric acid or malic acid or lactic acid into cuttlefish juice, stirring, soaking, and deodorizing;

(4) standardized blackness of cuttlefish powder and easy dispersion treatment: calculating and adding auxiliary materials according to the solid content of the deodorized and distilled cuttlefish juice, and standardizing the blackness of the cuttlefish powder to keep the blackness of the cuttlefish powder products consistent; the adding proportion is 1 to 99 percent; homogenizing the prepared cuttlefish juice to obtain homogenized cuttlefish juice;

(5) and (3) drying: and (3) spraying and drying the homogenized cuttlefish juice under the conditions of stirring and cooling to obtain the cuttlefish powder. Because the phenomenon of precipitation appears after cuttlefish juice is placed for a long time, the drying process needs to stir the material, and simultaneously cooling prevents to corrupt.

Preferably, in the step (1), the ink bag is steamed at normal pressure for 10-60 min; the ink sac skin is good in toughness and not easy to scratch, and meanwhile, the tough sac skin is easy to block a filter screen after being broken, and the filter screen is not easy to clean, so that ink is difficult to obtain and recover. Therefore, the ink bag is pretreated: the ink sac is steamed at normal pressure for 10-60min, and the steamed ink sac skin is brittle and easy to cut and is not easy to block a filter screen.

In the step (2), a shearing machine, a crushing machine, a colloid mill, a beating machine, a pulping machine, an emulsifying machine, a grinding machine and a homogenizer can be adopted for refining and homogenizing treatment; in the step (3), adding one or more of compound solutions of food-grade methanol, No. 6 solvent oil, acetone, ethanol, ethyl acetate and acetic acid, hydrochloric acid, citric acid, malic acid or lactic acid into the ink, stirring, soaking, and deodorizing; in the step (4), the additive auxiliary materials are selected from one or more of pregelatinized starch, peach gum, gum ghatti, corn syrup, acacia, modified starch, maltodextrin, cyclodextrin, lactitol, white sugar and trehalose; homogenizing the blended cuttlefish juice by a homogenizer.

Preferably, in the step (2), the collected cuttlefish juice is refined and uniformly treated, so that large particles in the ink are powerfully crushed and refined, the particle size of the ink is reduced, the dispersibility of the cuttlefish juice is increased, the cuttlefish juice is crushed for 1-6 times, and the crushing temperature is controlled to be 5-50 ℃.

Preferably, in the step (3), the deodorizing treatment is performed by stirring for 10 to 120 minutes and soaking for 10 to 240 minutes.

Preferably, in the step (3), after the deodorization treatment, the solvent is distilled and recovered for recycling.

Preferably, in the step (4), the cuttlefish juice is homogenized by a homogenizer at a homogenizing pressure of 40-60Mpa for 2 times to obtain the homogenized ink.

And (4) adding one or more of tween, glycerol, or polyglycerol fatty acid ester, or sugar alcohol, sorbitol, maltitol, erythritol and lactitol to inhibit the powder floating phenomenon in the drying process.

The cuttlefish powder prepared by the preparation method can be applied to foods, health-care products and medicines.
