The invention belongs to the technical field of aquatic product processing equipment, and relates to a squid stewing device.
Background
The water content of Peru squid is higher, generally about 85%, the water content of other squids is about 75%, and the meat quality is loose. On an ocean fishing squid ship, the squids are generally subjected to primary processing such as cleaning, peeling, dirt removal, rinsing, cooking, cooling and the like so as to ensure the freshness of large-size raw materials and the quality of subsequent products and reduce the transportation cost.
The purpose of cooking is to make the protein in the fish meat heated and denatured, destroy the cell tissue of the fish meat, and make the water flow out, thereby reducing the water content and the transportation cost. In addition, cooking also allows the fat in the carcass to flow into the hot water, reducing the fat content of the product.
Peru squid is in the cooking in-process, in order to make the squid be heated evenly, need artifical continuous stirring, has increased working strength, in addition, cooks the completion back squid and need pour out the dehydration of cooling, wastes time and energy.
