Background

In the production process of jam and fruit juice products, the essential production process is to kill active enzymes and microorganisms in the products. The method of heating is used for killing microorganisms and active enzymes in the product and ensuring that the product is not rotten after being stored for a long time, and is defined as product sterilization or pasteurization.

In the conventional sterilization process, a dividing wall type heating and cooling method is generally adopted. The sterilization machine generally uses a sleeve type heater, a holding pipe and a cooler. The traditional sterilization process and the sterilization machine are adopted, the time from heating to final cooling needs 12-15 minutes, the color and the flavor of the product can be greatly changed due to long-time cooling, the heating time of the product cannot be controlled, the heating time is too long, the taste, the color and the flavor of the product can be influenced, even scorching can be caused, the heating time is too short, and the product cannot be sterilized thoroughly.
