Technical Field

The invention relates to the technical field of food, in particular to a sheep liver cereal recombinant food.

Background

The Renbel is a famous natural pasture in the world and is a green clean soil without any pollution, more than 120 kinds of nutritious pastures such as soda grass, stipa, alfalfa, wheatgrass and the like and Chinese herbal medicines grow in the natural pasture, so that high-quality cattle and sheep resources are bred, the Renbel cattle and sheep products are favored by consumers at home and abroad with unique excellent quality, and the milk and the sheep liver of the Renbel are excellent products in the same class.

The sheep liver extract has the nutrient elements required by human body, and also has the effects of nourishing liver, improving eyesight, replenishing blood, and clearing deficiency heat. The formula is written in the treatise of the drug property treatise of the eyesight of the liver of the green sheep, the formula is written in the treatise of the liver tonifying and the eyesight improving in the treatment of the thousand gold and the food therapy, and the formula is written in the formula of the Tang materia medica to treat the liver wind deficiency heat. Seven patients eat the liver without seeing the eyes. "Shi practical TCM" also says that it is applicable to vitamin A deficiency of eye diseases (infantile malnutrition, night blindness, etc.) in sheep liver. However, the goat liver has great goat odor, and the taste of the food and the popularity of consumers are influenced by the goat liver-containing food due to the strong goat odor. How to remove the mutton smell of the food containing the sheep liver and improve the taste is a technical problem to be solved urgently by technical personnel in the field.

The grains mainly comprise rice, wheat, soybean and other coarse cereals. The grains are processed into staple food, and 50-80% of heat energy, 40-70% of protein and more than 60% of vitamin B1 are provided for human beings. Cereals, as the traditional diet of Chinese people, have been one of the indispensable foods on dining tables of common people for thousands of years, and have an important position in diet of China.

In the prior art, no report of preparing the reconstituted milk beverage by taking sheep liver, grains and milk as main raw materials is found.

Disclosure of Invention

The invention aims to provide a goat liver grain recombined food which is prepared by taking goat liver, grains and milk as main raw materials, contains functional polypeptide, soybean isoflavone and mutton smell, has unique taste and is easy to be brewed and drunk.

The invention provides a sheep liver grain recombinant food, which is prepared by uniformly mixing 10-15 parts of milk powder, 5-8 parts of sheep liver grain tablets and 2-4 parts of cane sugar in parts by mass under an aseptic condition and packaging;

the sheep liver cereal tablet comprises the following raw materials in parts by weight: 10-15 parts of rice flour, 40-50 parts of whole wheat flour, 8-12 parts of whole oat flour, 10-15 parts of whole corn flour, 15-20 parts of millet nutrient solution, 25-30 parts of soybean active substance, and 0.1-1 part of sheep liver homogenate and cell lysate.

Further, the rice flour is obtained by crushing rice and sieving the crushed rice with a 60-80-mesh sieve; the whole wheat flour is obtained by crushing wheat and screening the crushed wheat by 40-60 meshes; the whole oat flour is obtained by crushing oats and screening the crushed oats by a sieve of 40-60 meshes; the obtained whole corn flour is obtained by crushing corn and sieving the crushed corn with 60-80 meshes; the milk powder is obtained by filtering organic particles and impurities larger than 150 microns from milk and then performing spray drying.

The beneficial active substances in the rice, the wheat, the oat and the corn are released after being crushed, so that the subsequent enzymolysis and conversion and the digestion and absorption of nutrient substances are facilitated.

Further, the preparation method of the millet nutrient solution comprises the following steps: the washed millet is soaked and then crushed at low temperature, and water and neutral protease are added for enzymolysis at constant temperature to obtain the millet complete nutrient solution.

Further, the water content of the millet after soaking is 60-70%, the low-temperature crushing is specifically to add a crushed ice homogenizer at 22000r/min to homogenize into paste, and the constant-temperature enzymolysis temperature is 25-35 ℃.

The content of the protein in the millet is as high as 4.88-15.88%, the millet protein is a rich source of methionine, isoleucine, leucine, phenylalanine and other essential amino acids, and the content of the essential amino acids accounts for 44.70% of the total amino acids; after the millet is soaked in water, the millet is reacted with neutral protease to promote the full enzymolysis of protein in the millet, so that the nutrient substances are fully released, the nutritional efficacy of the product is improved, and the millet full nutrient solution containing the polypeptide is obtained.

Further, the preparation method of the soybean active substance comprises the following steps: soaking soybean in water for germination, crushing at low temperature, adding water and cellulase, and performing enzymolysis at constant temperature to obtain soybean active substance.

Further, the water soaking and germinating process of the soybeans comprises the steps of water-culturing the soybeans for 60-72 hours at 10-12 ℃ at the room temperature of 25-40 ℃ to germinate the soybeans; crushing at low temperature, specifically adding crushed ice into cold water at normal temperature, and homogenizing at 20000r/min to obtain paste (avoiding damage of active ingredients of soybean sprout caused by local high temperature of high-speed homogenization); the constant temperature enzymolysis temperature is 25-35 ℃.

During the water absorption and germination of the soybeans, the activity of the protease is increased, so that the storage protein in the soybeans is hydrolyzed, and free amino acid and amide are generated along with the degradation of the storage protein, so that the nutritive value of the soybeans is improved. Then enzymolysis is carried out on cell walls at constant temperature by cellulase, so that flavonoid active substances in the cell walls are fully dissolved out.

Further, the preparation method of the sheep liver homogenate and the cell lysate comprises the following steps: freezing sheep liver, slicing, thawing with water, and homogenizing at low temperature to obtain sheep liver homogenate and cell lysate.

Further, the refrigeration temperature is-25 ℃ to-35 ℃, and the slice thickness is 3-5 mm; adding 4-8 deg.C water, thawing until ice blocks disappear, and homogenizing at 4-8 deg.C at 220000 r/min.

Further, the preparation method of the sheep liver cereal tablet comprises the following steps:

(1) modulation: mixing rice flour, whole wheat flour, whole oat flour, whole millet nutrient solution, soybean active substance, sheep liver homogenate and cell lysate thereof with water, stirring, and mixing to obtain sheep liver cereal product;

(2) and (3) proofing: fermenting the sheep liver cereal product obtained in the step (1) to obtain sheep liver cereal paste;

(3) extrusion forming and baking: and (3) putting the goat liver grain batter obtained in the step (2) into a die with the thickness of 1-10mm, baking at 40-60 ℃ until the batter is in a dough shape, tabletting to the thickness of 2-3mm, heating with a primer until the tablet is golden yellow, taking out, cooling, and crushing to obtain the goat liver grain tablets.

Further, the enzymolysis temperature in the step (1) is 25-40 ℃; the proofing temperature in the step (2) is 30-35 ℃, and the proofing time is 10-12 h; in the step (3), the heating temperature of the primer is 100-.
