Technical Field

Background

Water is an important component of all living organisms, for example, water accounts for 70% of the human body, participates in biochemical reactions, transportation of nutrients and oxygen in the human body, and contributes greatly to maintaining the temperature of the living organisms.

Drinks are currently the main routes for people to ingest water, including but not limited to coffee, tea, soda, milk, fruit juice, and the like. With the improvement of living standard, the requirements of people on beverages are more rigorous, and convenience is no longer the only requirement on the beverages. What people need is not only a cup of beverage capable of quenching thirst, but also a cup of good beverage, and the beverage is required to have good taste and flavor, and also required to have a certain degree of health care function.

Conventionally, the taste of beverages such as tea or coffee depends on beverage raw materials such as tea leaves, coffee beans or powder thereof, or factors such as the brewing temperature, sequence or method of the beverages, and in order to improve the taste and flavor of the beverages such as tea or coffee, a series of researches on beverage raw materials and beverage brewing processes have been conducted, for example, patent US20120244254a1 discloses a method for treating coffee beans, patent US20190231738a1 discloses a method for maximizing the content of epigallocatechin and gallate of tea, and patent publication US20170143155a1 discloses a method for preparing tea drinks, however, there are few technical researches on the improvement of the quality of beverages by using water for brewing beverages.

Disclosure of Invention

One of the objects of the present invention is to provide a water concentrate and a water preparation, which are intended to improve the taste and flavor of a drink by using an improved water for brewing the drink.

One of the objects of the present invention is to provide a method for brewing beverages.

In the practical application process, the water concentrate can be diluted by purified water to be used as brewing water for brewing coffee or tea, is convenient to use, is beneficial to storage and transportation, is suitable for enterprises or users needing a large amount of drinks such as coffee houses, tea drinking shops or restaurants, and the like, and the coffee or tea obtained by brewing has good flavor and taste and has wide market prospect.

The water preparation provided by the invention is prepared by diluting the water concentrated solution according to the dilution times of 500-1500, and when the water preparation is used as brewing water for preparing beverages, the extraction efficiency of active ingredients in beverage raw materials such as coffee or tea can be improved, and the flavor, taste and health-care effect of the beverages can be improved. Tests show that compared with coffee brewed by pure water, the coffee brewed by the water preparation of the invention is rich in active ingredients such as malic acid, lactic acid, acetic acid, total organic acid, eugenol, quinic acid and the like, and the content of functional substances such as citric acid and the like is increased by up to 229%; compared with the tea brewed by pure water, the content of epigallocatechin gallate (EGCG) in the tea brewed by the water preparation is improved by 85 percent.

The method for preparing the beverage is obtained by brewing the beverage raw materials by the water preparation, is simple and easy to operate, and the obtained beverage is rich in active ingredients such as amino acids, flavonoids, polyphenols, terpenoids, alkaloids and organic acids, has good flavor and mouthfeel, and can improve the health-care function of the beverage to a certain extent.

In the description of the embodiments of the present invention, the term "ppm" is used as an ion concentration unit, and means a concentration expressed by parts per million of solute mass in the total solution mass, which is also called a ppm concentration. Meanwhile, the concentration of each ionic component may refer not only to the specific content of each component in the water concentrate or the water preparation, but also to the proportional relationship of the mass between each component, and therefore, it is within the scope of the disclosure of the embodiment of the present invention to scale up or down the concentration of each component of the composition according to the embodiment of the present invention. The eastern Taiwan sea area has unique geographic condition, has three hundred kilometers of coastline, has a depth of one thousand meters below ten kilometers of sea water, has a depth of seven or eight hundred meters below thirty kilometers of sea water, is beneficial to mining, and is beneficial to obtaining ideal deep seawater to further improve the flavor and taste of the beverage.

The method for preparing the beverage provided by the embodiment of the invention is obtained by brewing the beverage raw materials by using the water preparation, is simple and easy to operate, and the obtained beverage is rich in active ingredients such as amino acids, flavonoids, polyphenols, terpenoids, alkaloids and organic acids, has good flavor and mouthfeel, and can improve the health-care function of the beverage to a certain extent.
