Technical Field

The invention relates to the technical field of flavoring agents, and particularly relates to a sweetening agent containing L-arabinose and a preparation method thereof.

Background

With the improvement of living standard, people have higher and higher requirements on diet, and in the aspect of beverages, manufacturers develop products with various tastes to meet the increasing demand of people for reference.

The sugar used in the market of the domestic beverage industry is generally rock sugar or fructose. Rock sugar and fructose can meet the requirement of sweet taste in tea drink products, but have certain negative effects on bodies due to the physical characteristics of the rock sugar and the fructose, such as obesity or diabetes initiation and the like.

Sugar-containing drinks increase the risk of diabetes and are often used to cause obesity, and in particular, sugar present in sweet drinks is both monosaccharide and disaccharide in a dissolved state, and is very easily absorbed, which causes rapid rise of blood sugar, and the effect on blood sugar is more serious than that of directly eating sugar of the same weight. In addition, the sugar-containing beverage reduces the intake of calcium and potassium, increases the intake of sucrose, may be an important factor causing the risk of kidney stone to increase, and excessive intake of sugar may cause fat accumulation, damage pancreas islet, influence the function of pancreas islet, and cause the fatty peroxidation of liver, resulting in the pathological changes of liver fibrosis, etc.

Therefore, the sugar which can keep the taste of the beverage and reduce the absorption of the body to the sugar is provided, and has good prospect in the market.

Disclosure of Invention

The invention aims to provide a sweetening agent containing L-arabinose and a preparation method thereof, wherein the sweetening agent does not affect the sweet taste of the drink and can reduce the sugar absorption of the body.

In order to achieve the purpose, the invention adopts the following technical scheme:

a sweetener containing L-arabinose comprises the following raw materials in parts by weight: 1 part of L-arabinose, 4-60 parts of rock candy and 4-60 parts of fructose.

Preferably, the L-arabinose-containing sweetener comprises the following raw materials in parts by weight: 1 part of L-arabinose, 9-50 parts of rock candy and 9-50 parts of fructose.

Preferably, the L-arabinose-containing sweetener comprises the following raw materials in parts by weight: 1 part of L-arabinose, 9-35 parts of rock candy and 9-35 parts of fructose.

L-arabinose is also called arabinose, pectin sugar, is an aldopentose, and is a levorotatory monosaccharide which is separated and extracted from a colloid secreted by Arabic trees.

L-arabinose rarely occurs in nature in the form of monosaccharides, usually in combination with other monosaccharides, and in the form of heteropolysaccharides in gums, hemicelluloses, pectic acids, bacterial polysaccharides and certain glycosides.

The L-arabinose which is a low-calorie sweetening agent is widely present in the shells of fruits and coarse grains, and has the effect of inhibiting the absorption of sucrose due to the inhibition of the activity of sucrase in human intestinal tracts; in addition, L-arabinose can also inhibit body fat accumulation, so that it can be used for preventing and treating obesity, hypertension, hyperlipidemia and other diseases.

The sugar-blocking effect of L-arabinose is to selectively inhibit the activity of disaccharide degrading enzymes such as sucrase and maltose in the small intestine, thereby inhibiting the uptake and absorption of sugar.

The L-arabinose has the effect of moistening the intestines and can increase the beneficial flora in the intestinal tract, namely bifidobacterium. The intestinal function is enhanced, the initial feeling is strong, the body can recover to a steady state after a short time, and the intestine moistening effect of the subsequently ingested L-arabinose is not influenced.

Fructose is a monosaccharide, an isomer of glucose, which is present in large amounts in the juice of fruits and honey in a free state, and is one of the most sweet sugars among all natural sugars.

The crystal sugar is an ice-block crystal prepared by decocting white granulated sugar, and is large-particle crystal sugar prepared by adding sucrose and protein raw materials into a formula, re-dissolving, cleaning and then recrystallizing.

Preferably, the preparation method of the L-arabinose-containing sweetener comprises the following steps: mixing L-arabinose, crystal sugar and fructose at high temperature, and stirring.

Preferably, the L-arabinose, the rock candy and the fructose are mixed and stirred uniformly at the temperature of 100-103 ℃.

Preferably, the L-arabinose, the rock candy and the fructose are mixed and stirred into viscous liquid at the temperature of 100-103 ℃.

Preferably, the L-arabinose, the rock candy and the fructose are mixed and stirred uniformly at the temperature of 100 ℃.

In another aspect of the present application, there is provided the use of the L-arabinose-containing sweetener in beverages.

Preferably, when the L-arabinose-containing sweetener is applied to a beverage, the weight ratio of the sweetener to water is 1: 5-12.

Preferably, when the L-arabinose-containing sweetener is applied to a beverage, the weight ratio of the sweetener to water is 1: 8.

the invention has the beneficial effects that:

the L-arabinose-containing sweetening agent integrates L-arabinose, rock candy and fructotriose, so that the sweetening agent has the sweetness of sugar, can block the human body from absorbing the sugar in the beverage, meets the taste of people, meets the requirement of sweetness in the beverage industry, and ensures the health of drinking the beverage. In addition, the sweetening agent containing the L-arabinose also has the effect of moistening intestines, can increase beneficial flora in intestinal tracts, namely bifidobacterium, and can enhance the function of the intestinal tracts.
