As shown in fig. 1, 3 to 6 and 11, the present embodiment provides a meat roasting method, which includes roasting meat, and microwave heating the meat before roasting the meat (see fig. 3, 6 and 11). the right-angle vertical mechanism 1-5-3 of the barbecue area comprises a positioning frame 1-5-3-1.

The change speed of the electromagnetic field in the oven cavity of the microwave oven is up to 24.5 hundred million times per second (microwave frequency is 2450MHz), and the electromagnetic field acts on polar molecules such as water molecules in food to enable the polar molecules to swing back and forth for 24.5 hundred million times per second, and high heat is generated due to high-speed wheel pendulum friction motion among the water molecules, so that the aim of quickly heating is fulfilled.

2. Biological effect. Since the microwave absorbing capacity of the microbial cell sap is better than that of other surrounding media, cells in a microwave electromagnetic field are rapidly broken to cause bacterial cell death.

The microwave has three characteristics

1. Is reflective. The microwave is reflected back when it touches metal, so that the inner wall is made of specially treated steel plate, and the microwave can penetrate through food to raise heat efficiency. However, metal containers cannot be used in the furnace, which may affect the heating time and even cause the discharge in the furnace to ignite.

2. Penetration. The microwave has a penetrating function to general ceramics, glass, heat-resistant plastics, woodware, bamboo ware and the like, so the microwave cooking utensil is an optimal utensil for microwave cooking.

3. And (4) absorbability. Various foods can absorb microwaves, so that molecules in the foods generate heat energy through oscillation and friction. But the degree of penetration into various foods varies depending on the size, thickness and the like of the foods.

Concept of microwave carcinogenesis

Since microwave is a radiation, there is a wrong view that it is carcinogenic. In fact, microwaves are electromagnetic waves, essentially the same thing as radio and telegraph waves, infrared, and visible light. They differ only in frequency. The frequency of microwaves is higher than that of electric waves, lower than that of infrared and visible light. Electromagnetic waves in this frequency band are not carcinogenic.

Although also referred to as "radiation," microwaves are not the same as radiation generated by X-rays, radioisotopes, and the like. The latter two belong to the more dangerous ionizing radiations, while the microwaves belong to the non-ionizing radiations, which are not dangerous the same. Although X-rays are also electromagnetic waves, their frequency is much higher than microwaves, and thus their energy is also high; radioactive isotopes emit particles during decay, so that they can cause carcinogenesis in living organisms.

Injury of microwave heating effect to human body

The risk of the microwave oven is manifested in its heating capacity, which also causes injuries when it is applied to the human body. Qualified microwave ovens have internal shielding to reduce leakage of microwave energy.

Scientific research finds out the minimum microwave power which can cause harm to human body, thereby establishing the standard of the leakage power of the microwave oven. For example, U.S. regulations specify that power per square centimeter does not exceed 5 milliwatts at a distance of about 5 centimeters from the microwave oven; the standard of China is more strict and is 1 milliwatt. And the energy of the microwave is attenuated according to the square of the distance. Calculated as 1 milliwatt at 5 cm, the 50 cm drop to one hundredth of a milliwatt. Therefore, as long as the qualified microwave oven product is used without damage, the microwave which can harm human bodies cannot be leaked out.

Concept of microwave oven to make food produce carcinogen

Regardless of the heating method, if the food is heated to too high a temperature, carcinogens may be generated. For example, above 120 degrees, the amino acid and carbohydrate reactions may produce acrylamide-based suspected carcinogens, such as in fried baked wheaten food, cracker snacks, chips, coffee beans, and the like; above 200 deg.C, the protein may produce heterocyclic amine carcinogenic substances, such as fish meat when frying; .

Microwave ovens, such as those used for heating, generally do not need to reach above 100 degrees; in the case of high-moisture foods such as porridge, soup, milk, rice, noodles, etc., the temperature of the food is always maintained at 100 degrees as long as the moisture is not evaporated, and carcinogens are not generated. Therefore, the microwave oven normally used does not make the food produce carcinogenic substances. Even according to related researches, compared with the traditional heating mode, especially the mode of burning, roasting, frying and the like, the microwave oven can effectively reduce the generation of the carcinogen.
