1. The nutritional brown sugar is characterized by being prepared from the following raw materials in parts by weight: 100-150 parts of rock candy, 20-30 parts of liquorice, 50-100 parts of sugarcane, 20-30 parts of rhizoma curculiginis and 15-20 parts of stevia rebaudiana.

2. The nutritional brown sugar according to claim 1, which is prepared from the following raw materials by weight: 125 parts of rock candy, 25 parts of liquorice, 70 parts of sugarcane, 24 parts of curculigo orchioides and 17 parts of stevia rebaudiana.

3. A method for preparing the nutritional brown sugar as claimed in claim 1 or 2, which comprises the following steps:

s1, cleaning liquorice, curculigo orchioides and stevia rebaudiana, drying, chopping, uniformly mixing, adding pure water, extracting for 1-2h by boiling water, filtering, and keeping filtrate;

s2, peeling sugarcane, cutting into sections, squeezing, and filtering juice to obtain primary sugarcane juice; adding sucrase and maltase into the primary sugarcane juice, adjusting conditions for enzymolysis, inactivating enzymes, and filtering to obtain sugarcane juice;

s3, combining the filtrate obtained in the step S1 and the sugarcane juice obtained in the step S2, and concentrating until the relative density is 1.5-2 to obtain a concentrated solution;

s4, heating the crystal sugar in a sugar dissolving pot with slow fire until the crystal sugar is melted, adding the concentrated solution, uniformly stirring, decocting with slow fire until the relative density is 4-4.5, and turning off the fire;

s5, spreading the boiled liquid on a cooling bed, neatly marking the liquid by using a marking tool, and packaging and selling the liquid after completely cooling and forming.

Background

Brown sugar is red to reddish brown crystals, also called brown sugar, made by squeezing stems of grass plant sugarcane to obtain juice and refining. s1, cleaning liquorice, curculigo orchioides and stevia rebaudiana, drying, chopping, uniformly mixing, and mixing according to a solid-to-liquid ratio of 1: adding 5g/mL of the extract into pure water, extracting with boiling water for 1h, filtering, and keeping the filtrate;

s2, peeling sugarcane, cutting into sections, squeezing, and filtering juice to obtain primary sugarcane juice; adding sucrase (with enzyme activity of 300U/g) and maltase (with enzyme activity of 500U/g) into the primary sugarcane juice, wherein the addition amounts are 1000U/kg and 700U/kg respectively, adjusting the pH to 5 by using 1mol/LHCl solution, adjusting the temperature to 70 ℃, performing enzymolysis for 1h, and performing enzyme deactivation, wherein the enzyme deactivation method comprises heating at 105 ℃ for 10min and filtering to obtain the sugarcane juice;

the concentration method adopts ceramic membrane ultrafiltration, the aperture of the ceramic membrane is 0.10 mu m, and the operating conditions of the ceramic membrane ultrafiltration are as follows: the transmembrane pressure difference is 0.27MPa, the filtration temperature is 60 ℃, and the membrane surface flow rate is 10 m/s.

S4, heating the crystal sugar in a sugar dissolving pot with slow fire until the crystal sugar is melted, adding the concentrated solution, uniformly stirring, decocting with slow fire until the relative density is 4.5, and turning off the fire;

s5, spreading the boiled liquid on a cooling bed, neatly marking the liquid by using a marking tool, and packaging and selling the liquid after completely cooling and forming.

s2, peeling sugarcane, cutting into sections, squeezing, and filtering juice to obtain primary sugarcane juice; adding sucrase (enzyme activity 300U/g) and maltase (enzyme activity 500U/g) into the primary sugarcane juice, wherein the addition amounts are 1000U/kg and 700U/kg respectively, adjusting the pH to 5 by using 1mol/LHCl solution, adjusting the temperature to 70-80 ℃, performing enzymolysis for 1.5h, performing enzyme deactivation, heating at 105 ℃ for 10min, and filtering to obtain the sugarcane juice;

s3, combining the filtrate obtained in the step S1 and the sugarcane juice obtained in the step S2, and concentrating until the relative density is 1.7 to obtain a concentrated solution;

the concentration method adopts ceramic membrane ultrafiltration, the aperture of the ceramic membrane is 0.07 mu m, and the operating conditions of the ceramic membrane ultrafiltration are as follows: the transmembrane pressure difference is 0.2MPa, the filtration temperature is 55 ℃, and the membrane surface flow rate is 8 m/s.

S4, heating the crystal sugar in a sugar dissolving pot with slow fire until the crystal sugar is melted, adding the concentrated solution, uniformly stirring, decocting with slow fire until the relative density is 4.2, and turning off the fire;

s5, spreading the boiled liquid on a cooling bed, neatly marking the liquid by using a marking tool, and packaging and selling the liquid after completely cooling and forming.

Test example 1

The nutritional brown sugar prepared in examples 1-3 of the present invention was tested with common brown sugar (purchased from Chao' an district quality Kanghong sugar factory, Guangdong Chaozhou) and the results are shown in tables 1 and 2.
