4. A method as claimed in claim 1, characterized in that the fish meat (9) is sterilized in an ozone-filled environment at an atmospheric pressure of 90-150KPa for a period of 5-120 s.

A fish sterilization and refrigeration device is characterized by comprising a hollow conveying mechanism (1), wherein an ozone gas disinfection bin (2), an ozone water disinfection tank (4) and a quick freezing device (6) are sequentially arranged along the conveying path of the conveying mechanism (1); the output end of the ozone gas disinfection bin (2) is positioned below the liquid level of the ozone water disinfection tank (4); an ozone nozzle is arranged in the ozone gas disinfection bin (2).

The fish meat sterilizing and freezing device as claimed in claim 5, 6 or 7, wherein the ozone gas sterilizing chamber (2) is connected with an ozone gas circulating device (3); the ozone gas circulating device (3) comprises an air outlet pipe (31) positioned in the ozone gas disinfection bin (2) and an air outlet pipe (32) communicated with the ozone gas disinfection bin (2), the output end of the air outlet pipe (32) is sequentially connected with a gas storage bin (33), an air pump (35) and an air return pipe (34), and the air return pipe (34) is communicated with the air outlet pipe (31); the ozone gas nozzle is arranged on the gas outlet pipe (31); an ozone inlet pipe (37) is connected beside the gas storage bin (33) through a valve (38), an ozone gas concentration detector (36) is arranged in the gas storage bin (33), and the ozone gas concentration detector (36) and the valve (38) are both electrically connected with a controller.

10. The fish flesh sterilizing and freezing device according to claim 9, wherein a floating-up preventing baffle (8) is arranged below the liquid level in the ozone water sterilizing tank (4), and the floating-up preventing baffle (8) is arranged above the second conveying section (12).

Technical Field

The invention relates to the field of fish sterilization and packaging, in particular to a fish sterilization and freezing method and a fish sterilization and freezing device.

Background

The fish meat has fresh and tender mouthfeel and rich nutrition, so the fish meat has great market demand. In order to facilitate direct cooking by consumers, a great amount of sliced fish is sold at present. During production, live fish is slaughtered, exsanguinated, eviscerated, scaled and sliced, sliced fish is peeled, trimmed, cut into middle bone, sterilized with ozone water, cleaned, frozen and packaged. Although the above process has been able to obtain a long shelf life of fish meat, there is still the problem of incomplete sterilization: after the fish is sliced, peeled and trimmed, the flesh seams between adjacent muscles are short of fish skin and fascia for blocking, the flesh seams are easy to unfold and expose in an external environment, the flesh conveying process is a humid environment, the number of bacteria is large, and the bacteria can enter the flesh seams along with liquid in the subsequent processing process of the fish. However, when the flesh seams are in a closed state, ozone water is difficult to infiltrate into the flesh seams to kill bacteria, so that even if the flesh of fish is soaked in the ozone water, the bacteria in the flesh seams cannot be treated, the bacteria residue in the flesh seams is frozen and packaged along with the flesh of fish, and the quality guarantee period cannot be further prolonged. In addition, the fish meat sterilized by the ozone water cannot be quickly frozen, more bacteria still adhere to the fish meat in the process, although the fish meat can inhibit the growth of the bacteria after quick freezing, the growth speed of the bacteria still can be rapidly increased once the fish meat is thawed, and therefore the meat quality of the fish meat is reduced.

Disclosure of Invention

The invention aims to provide a fish sterilization and freezing method and a device thereof, which can sterilize more thoroughly and greatly prolong the shelf life of fish.

In order to achieve the purpose, the invention provides a fish sterilization and freezing method, firstly, ozone gas is utilized to blow the surface of fish and sterilize the surface of the fish at the same time, and then the fish is immediately transferred into ozone water from an environment filled with the ozone gas for further sterilization; after the fish meat is removed from the ozone water, the fish meat is quickly frozen in a state that the ozone water is hung on the surface.

As a further improvement of the invention, after quick freezing, the fish meat is plated with ice coating on the surface.

As a further improvement of the invention, the concentration of the ozone water is 0.3-1.0PPM, and the time for soaking the fish meat in the ozone water is 20-180 s.

As a further improvement of the invention, when the fish meat is in an environment filled with ozone gas, the atmospheric pressure is 90-150KPa, and the disinfection time is 5-120 s.

As a further improvement of the invention, the conveying mechanism comprises a first conveying section, the first conveying section passes through the ozone gas disinfection bin; the ozone gas nozzles are at least two and are respectively arranged at the upper side and the lower side of the first conveying section and face the first conveying section.

As a further improvement of the invention, the ozone gas disinfection bin is connected with an ozone gas circulating device; the ozone gas circulating device comprises an air outlet pipe positioned in the ozone gas disinfection bin and an air outlet pipe communicated with the ozone gas disinfection bin, wherein the output end of the air outlet pipe is sequentially connected with an air storage bin, an air pump and an air return pipe, and the air return pipe is communicated with the air outlet pipe; the ozone gas nozzle is arranged on the gas outlet pipe; the gas storage bin is connected with an ozone inlet pipe through a valve, an ozone gas concentration detector is arranged in the gas storage bin, and the ozone gas concentration detector and the valve are both electrically connected with the controller.

As a further improvement of the invention, the conveying mechanism comprises a second conveying section, and the second conveying section is immersed below the liquid level of the ozone water disinfection tank; an ozone water nozzle which is positioned below the second conveying section and has an upward opening is arranged in the ozone water disinfection tank.

As a further improvement of the invention, an anti-floating baffle is arranged below the liquid level in the ozone water disinfection tank and is positioned above the second conveying section.

Advantageous effects

Compared with the prior art, the fish sterilizing and freezing method and the device thereof have the advantages that:

1. firstly, spraying ozone gas to the fish meat through an ozone gas nozzle in an ozone gas disinfection cabin, drying the surface of the fish meat and water drops remained in meat seams, and simultaneously sterilizing and disinfecting the surface and the meat seams of the fish meat by using the ozone gas. The fish meat sterilized by the ozone gas directly enters the ozone water sterilizing tank from the ozone gas sterilizing bin, and the middle part of the fish meat is not exposed outside, so that the fish meat is prevented from being polluted by the outside. The surface of the fish meat is further disinfected after entering the ozone water disinfection tank, and the disinfection is more thorough. And then, after the fish is removed from the ozone water disinfection tank, the fish enters a quick-freezing device in a state that ozone water is hung on the surface of the fish for quick freezing, frozen ozone water wraps the fish, the growth of residual bacteria is more favorably inhibited through the low temperature and the disinfection effect of the ozone water, and the quality guarantee period of the fish is greatly prolonged. In addition, when the quick-frozen fish is ready for eating, a small amount of residual ozone water on the surface can also prevent the fish from deteriorating due to external bacteria when the fish is just thawed, and the taste of the fish food is favorably improved.

2. After quick freezing, the fish meat is plated with the ice coating on the surface, the ice coating serves as a buffer layer, and the fluctuation of the external temperature is partially offset by the ice coating, so that the stability of the fish meat freezing effect is ensured.

3. When the fish is in the ozone gas disinfection cabin, the ambient air pressure is 90-150KPa, the disinfection time is 5-120s, the air pressure is favorable for ozone gas to permeate into the flesh seams of the fish, and the sterilization in the flesh seams is more thorough.

4. The soft baffle at the inlet of the ozone gas disinfection bin can reduce the leakage of ozone gas as much as possible, ensure the sterilization and disinfection effects of the ozone gas and allow fish meat to pass through.

5. Ozone gas nozzle is at least two and sets up respectively in the upper and lower both sides of first transport section and all towards first transport section, can weather the moisture on fish surface better, does benefit to the disinfection to the flesh of fish.

6. The ozone gas disinfection cabin is connected with an ozone gas circulating device, undecomposed ozone is recycled, ozone gas waste is reduced, meanwhile, the ozone concentration inside the ozone gas disinfection cabin is detected according to an ozone gas concentration detector, new ozone gas is supplemented in time through an ozone gas inlet pipe, and the disinfection efficiency of the ozone gas disinfection cabin is guaranteed.

7. Be equipped with in the ozone water disinfection pond and be located second transport section below and opening ozone water nozzle up, can strike the flesh of fish through ozone water nozzle, make its local and second transport section separation, do benefit to ozone water and each part full contact in flesh of fish bottom, the sterilization is more thorough. The anti-floating baffle can prevent fish from floating to the water surface.

Embodiments of the present invention will now be described with reference to the accompanying drawings.

Examples

As shown in fig. 1 to 3, the fish meat sterilizing and freezing device comprises a hollow conveying mechanism 1, and an ozone gas sterilizing bin 2, an ozone water sterilizing tank 4 and a quick freezing device 6 are sequentially arranged along a conveying path of the conveying mechanism 1. The output end of the ozone gas disinfection cabin 2 is positioned below the liquid level of the ozone water disinfection tank 4. An ozone nozzle is arranged in the ozone gas disinfection bin 2. In this embodiment, the conveying mechanism 1 includes a mesh-shaped conveying belt. The quick-freezing device 6 is a double-helix quick-freezing device.

The inlet of the ozone gas disinfection cabin 2 is provided with a soft baffle 21, and the soft baffle 21 is contacted with the conveying mechanism 1. The soft baffles 21 can minimize the leakage of ozone gas, ensure the sterilizing effect of ozone gas, and allow the fish meat 9 to pass through. The output end of the ozone gas disinfection cabin 2 is obliquely inserted below the liquid level of the ozone water disinfection tank 4.

The conveying mechanism 1 comprises a first conveying section 11, and the first conveying section 11 passes through the ozone gas disinfection bin 2. The ozone gas nozzles are at least two and are respectively arranged at the upper side and the lower side of the first conveying section 11 and face the first conveying section 11.

The ozone gas disinfection bin 2 is connected with an ozone gas circulating device 3. The ozone gas circulating device 3 comprises an air outlet pipe 31 positioned in the ozone gas disinfection bin 2 and an air outlet pipe 32 communicated with the ozone gas disinfection bin 2, the output end of the air outlet pipe 32 is sequentially connected with an air storage bin 33, an air pump 35 and an air return pipe 34, and the air return pipe 34 is communicated with the air outlet pipe 31. An ozone gas nozzle is provided on the outlet pipe 31. An ozone inlet pipe 37 is connected to the gas storage chamber 33 through a valve 38, an ozone gas concentration detector 36 is arranged in the gas storage chamber 33, and the ozone gas concentration detector 36 and the valve 38 are both electrically connected with the controller.

The conveying mechanism 1 comprises a second conveying section 12, and the second conveying section 12 is immersed below the liquid level of the ozone water disinfection tank 4. An ozone water nozzle 5 which is positioned below the second conveying section 12 and has an upward opening is arranged in the ozone water disinfection tank 4. The ozone water disinfection tank 4 is connected with a first water inlet pipe 41 and a first drain pipe 42, wherein an output end of the first water inlet pipe 41 is communicated with the ozone water nozzle 5. When in use, ozone water is supplemented to the ozone water disinfection tank 4 through the first water inlet pipe 41, and the ozone water is sprayed upwards from the ozone water nozzle 5, so that the concentration of the ozone water is ensured to be 0.3-1.0 PPM. The ozone water sprayed by the ozone water nozzle 5 can adopt the water body of the ozone water disinfection tank 4, so that the water surface in the ozone water disinfection tank 4 is ensured to be stable in height.

An anti-floating baffle 8 is arranged below the liquid level in the ozone water disinfection tank 4, and the anti-floating baffle 8 is positioned above the second conveying section 12.

The fish sterilizing and freezing device further comprises an immersed ice covering machine 7, and the immersed ice covering machine 7 is connected with an ice water inlet pipe 71 and a second water outlet pipe 72. The conveying mechanism 1 comprises a third conveying section 13, and the first conveying section 11, the second conveying section 12 and the third conveying section 13 are sequentially arranged and are all mesh-shaped conveying belts. Third conveyor section 13 passes through submerged ice closer 7, submerged ice closer 7 being a container containing a pool of ice water. The first conveying section 11, the second conveying section 12 and the third conveying section 13 may be independent of each other or may be connected into a whole.

When the fish meat sterilizing and freezing device is used, ozone gas is firstly sprayed to the fish meat 9 in the ozone gas sterilizing bin 2 through the ozone gas nozzle, water drops remained on the surface of the fish meat 9 and in the gaps between the fish meat are dried, and the surface of the fish meat 9 and the gaps between the fish meat are sterilized and disinfected by the ozone gas. The air pressure in the ozone gas disinfection cabin 2 is 90-150KPa, the disinfection time is 5-120s, preferably 110-130KPa, the disinfection time is 90 s. The fish meat 9 sterilized by the ozone gas enters the ozone water sterilizing tank 4 from the ozone gas sterilizing bin 2 through the conveying mechanism 1, and the fish meat 9 is not exposed outside in the process, so that the fish meat is prevented from being polluted by the outside. After entering the ozone water disinfection tank 4, the surface of the fish meat 9 is further disinfected by the ozone water, in the process, the ozone water sprayed upwards by the ozone water nozzle 5 pushes the fish meat 9 partially and slightly away from the second conveying section 12, so that the bottom of the fish meat 9 can be in contact with the ozone water more fully, and the sterilization is more thorough. Wherein the concentration of ozone water is 0.3-1.0PPM, and the fish meat 9 is soaked in ozone water for 20-180 s. And then the fish meat 9 is moved out of the ozone water disinfection tank 4 through the conveying mechanism 1 and enters the quick-freezing device 6 for quick freezing in a state that ozone water is hung on the surface, frozen ozone water is wrapped outside the fish meat, the growth of residual bacteria is more favorably inhibited through the low temperature and the disinfection effect of the ozone water, and the quality guarantee period of the fish meat is greatly prolonged. After quick freezing, the conveying mechanism 1 conveys the fish to the immersed ice covering machine 7, and the fish 9 is plated with ice coating on the surface by using low-temperature water. The fish meat plated with the ice coating can enter a packaging process.
