1. A method of treating a slaughtered animal carcass (3), comprising:

a) placing the carcass (3) in the chamber (2), and

b) sterilizing the carcass (3) in the chamber (2) by maintaining the oxygen concentration in the chamber (2) above 20% and the temperature of the carcass (3) above 10 ℃.

2. A method according to claim 1, wherein step a) is carried out less than 30 minutes after slaughter.

3. The method according to any one of the preceding claims, further comprising:

c) cooling the carcass (3).

4. The method according to any of the preceding claims, wherein the oxygen concentration in the chamber (2) is maintained above 25% during step b).

5. The method according to any of the preceding claims, wherein the temperature of the carcass (3) is maintained above 30 ℃ during step b).

6. The method according to any of the preceding claims, wherein in step b) the carcass (3) is heated.

7. The method according to any of the preceding claims, wherein step b) lasts at least 1 minute.

8. The method according to any one of the preceding claims, wherein the pressure inside the chamber (2) is maintained between 0.2 and 800 mbar during step b).

9. The method according to any one of claims 1 to 7, wherein the pressure inside the chamber (2) is maintained between 1.2 and 10 bar during step b).

10. The method according to any of the preceding claims, wherein in step b) the carcass (3) is subjected to a jet of oxygen-containing gas.

11. The method according to any of the preceding claims, wherein the animal is poultry.

12. The process according to any one of the preceding claims, wherein steps a) and b) are carried out as a continuous process.

13. The process according to any one of claims 1 to 11, wherein steps a) and b) are carried out as a batch process.

14. Use of oxygen for the treatment of a carcass (3) of an animal after slaughter, comprising:

A) placing the carcass (3) in the chamber (2), and

B) sterilizing the carcass (3) within the chamber (2) by introducing oxygen into the chamber (2) to maintain an oxygen concentration within the chamber (2) above 25% and by maintaining the carcass (3) at a temperature above 10 ℃.
