Background

Freshwater crayfish is also named as Procambrus clarkii, has fresh meat, rich nutrition, high protein content, low fat and low cholesterol, is popular with more and more people in recent years, so that the demand of the freshwater crayfish in the catering industry market is increased day by day, and the culture and processing scale of the freshwater crayfish is enlarged continuously.

In order to better store the crayfish, a plurality of factories can cook the crayfish, remove the head of the crayfish and plate the crayfish tail with the ice coating, so that the ice coating can well wrap the crayfish tail to isolate air and most bacteria, the oxidation and the putrefaction of the crayfish tail are greatly slowed down, the crayfish tail can keep bright color and fresh meat for a long time, and the shelf life of the crayfish is effectively prolonged.

However, in the existing ice coating process, it is often found that most of shrimp tails are stored and transported, and even in the process of ice coating, the ice coating suddenly becomes opaque and whitish and becomes less transparent and bright. The essence of the situation is that the peeling phenomenon is generated between the shell of the tail of the crayfish and the ice coat, the peeled place becomes white and is not transparent, and the situation not only greatly influences the overall beauty of the ice coat of the tail of the crayfish. The ice coating is easy to crack and even fall off in the storage and transportation process due to the lack of adhesive force with the crayfish tails in the places with the peeling phenomenon, thereby affecting the quality of the crayfish tails. Market demand for crayfish tails is increasing day by day, and crayfish tail processing manufacturers have been searching for solutions to such situations occurring in ice coating, and are worried that the problem of white and impermeable ice coating cannot be solved. Therefore, it is important and urgent to find a method for solving the problem of the white and white of the coating on the tail of the crayfish.

Detailed Description

The present application will be described in further detail with reference to the following drawings and examples. It is to be understood that the specific embodiments described herein are merely illustrative of the relevant invention and not restrictive of the invention. It should be noted that, for convenience of description, only the portions related to the present invention are shown in the drawings.

It should be noted that the embodiments and features of the embodiments in the present application may be combined with each other without conflict. The present application will be described in detail below with reference to the embodiments with reference to the attached drawings.

One embodiment of the invention is an application method of an adhesive for coating ice coats on the tail of crayfish, which comprises the following steps:

cleaning fresh crayfish;

cooking the cleaned crayfish;

taking out the cooked crayfish, and putting the cooked crayfish into ice water for cooling;

removing the head of the cooled crayfish, and reserving the tail of the crayfish;

rinsing the tail of the crayfish to remove dirt and oil stains;

fully dissolving an adhesion agent in water at 2 ℃ according to the mass fraction of 1.5% to prepare an adhesion agent solution, wherein the adhesion agent comprises the following components in parts by mass: 8 parts of pullulan polysaccharide, 5 parts of xanthan gum, 15 parts of guar gum and 50 parts of soft sugar;

pouring the rinsed crayfish tails into the adhesion agent solution for soaking, fishing out the crayfish tails after soaking for 2 minutes, draining for 3 minutes, wherein the mass ratio of the crayfish tails to the adhesion agent solution is 1: 2;

putting the drained crayfish tails into a quick-freezing machine for quick freezing for the first time, wherein the time for quick freezing for the first time is 30 minutes, and the temperature for quick freezing for the first time is-40 ℃;

putting the crayfish tails subjected to primary quick freezing into an ice coating plating solution pool for primary ice coating plating, wherein the primary ice coating plating time is 40 seconds, and the temperature of the ice coating plating solution is-1 ℃;

putting the crayfish tails plated with the ice coatings for the first time into a quick-freezing machine for secondary quick-freezing, wherein the secondary quick-freezing time is 20 minutes;

putting the crayfish tails subjected to secondary quick freezing into an ice coating plating solution pool for secondary ice coating plating, wherein the time for secondary ice coating plating is 35 seconds, and the temperature of the ice coating plating solution is-1 ℃;

taking out the crayfish tail after the secondary ice coating plating.

In the embodiment of the invention, after the crayfish tail is soaked in the adhesion agent solution, the adhesion agent layer can be formed between the crayfish tail and the ice coat through subsequent treatment, and the pullulan polysaccharide in the adhesion agent layer is structurally rich in elasticity, has good film forming property and plasticity and has strong viscosity. The xanthan gum and the guar gum have viscosity, and the mixing of the xanthan gum and the guar gum with the pullulan according to the proportion can generate a synergistic effect, so that the viscosity of the pullulan can be greatly improved. The soft sugar mainly plays a role of an anti-freezing and dispersing agent, and can improve the anti-freezing effect of protein, namely the anti-freezing effect of crayfish meat; when the adhesion agent is prepared into an adhesion agent solution, the soft sugar enables xanthan gum, guar gum and pullulan, especially xanthan gum to be better dissolved in water, and agglomeration cannot be generated during dissolution, so that the adhesion agent solution is formed.

Referring to fig. 1 and 2, the adhesive layer 2 formed by mixing xanthan gum, guar gum and pullulan according to the proportion has good toughness and excellent bonding characteristics with the crayfish tail 1 and the ice coating 3, can improve the adhesive force between the ice coating and the crayfish tail, and can firmly keep the three tightly bonded together, so that the ice coating on the crayfish tail is not easy to peel off, namely the adhesive force between the ice coating and the crayfish tail is improved, the peeling between the crayfish tail and the ice coating is prevented, and the permeability of the ice coating is ensured. Meanwhile, the ice coating is not easy to crack and fall off, so that the ice coating can better protect the tail of the crayfish and ensure the quality of the tail of the crayfish. The crayfish tail is wrapped up by the hard and smooth shrimp shell of one deck, connects crayfish tail and ice clothing through having toughness and having sticky adhesion agent layer, can avoid appearing along with the fluctuation of storage and transportation in temperature, the external force of jolting, and the ice clothing peels off very easily with hard and smooth shrimp shell, and the ice clothing that causes turns white impenetrable phenomenon. FIGS. 3 and 4 are schematic views showing a conventional crawfish tail, FIGS. 5 and 6 are schematic views showing crawfish tails obtained by a method of coating the crawfish tails with ice coating according to an embodiment of the present invention, and the comparison shows that the crawfish tails in FIGS. 3 and 4 are whitish and opaque; the crayfish tails in fig. 5 and 6 are non-whitish and transparent.

In another embodiment of the invention, the application method of the adhesion agent for the crayfish tail ice coating on the crayfish ice coating comprises the following steps:

cleaning fresh crayfish;

cooking the cleaned crayfish;

taking out the cooked crayfish, and putting the cooked crayfish into ice water for cooling;

removing the head of the cooled crayfish, and reserving the tail of the crayfish;

rinsing the tail of the crayfish to remove dirt and oil stains;

fully dissolving an adhesion agent in water at 2 ℃ according to the mass fraction of 2% to prepare an adhesion agent solution, wherein the adhesion agent comprises the following components in parts by mass: 12 parts of pullulan polysaccharide, 10 parts of xanthan gum, 25 parts of guar gum and 70 parts of soft sugar;

pouring the rinsed crayfish tails into the adhesion agent solution for soaking, fishing out the crayfish tails after soaking for 3 minutes, and draining for 3 minutes, wherein the mass ratio of the crayfish tails to the adhesion agent solution is 1: 3;

putting the drained crayfish tails into a quick-freezing machine for quick freezing for 30 minutes at-30 ℃ for the first time;

putting the crayfish tails subjected to primary quick freezing into an ice coating plating solution pool for primary ice coating plating, wherein the primary ice coating plating time is 50 seconds, and the temperature of the ice coating plating solution is 2 ℃;

putting the crayfish tails plated with the ice coatings for the first time into a quick-freezing machine for secondary quick-freezing, wherein the secondary quick-freezing time is 20 minutes;

putting the crayfish tails subjected to secondary quick freezing into an ice coating plating solution pool for secondary ice coating plating, wherein the time for secondary ice coating plating is 45 seconds, and the temperature of the ice coating plating solution is 2 ℃;

taking out the crayfish tail after the secondary ice coating plating.
